Abstract
Purpose
Informed by Mihaly Csikszentmihalyi’s systems view of creativity and Chad Borkenhagen’s conceptualization of open source cooking, this study explored how a group of extraordinary pastry chef used Instagram to openly express creativity, disseminate knowledge and reveal culinary secrets. The subsequent impacts of such actions were also assessed.
Design/methodology/approach
A qualitatively driven mixed-method approach was conducted using a nested mixed-method design. A total of 2,456 Instagram posts were visually analyzed alongside a series of interviews with elite pastry chefs over a two-year period.
Findings
Analysis distilled three themes that delineated how elite pastry chefs express creativity and share knowledge mindfully, ethically and altruistically on Instagram. The findings also converged to form a new theoretical model, “systems view of culinary creative sharing,” which accounts for the multifaceted considerations of culinary knowledge sharing on social media.
Research limitations/implications
Findings converged to form a systems view of culinary knowledge sharing. This is peculiarly useful for scholars who are interested in developing a greater understanding about “where and how” creative ideas and knowledge originate, disseminate and receive corroborations in the contemporary digital era.
Originality/value
This study highlighted that a new praxis of open sharing looms large in the culinary profession. This praxis symbolizes a movement away from the traditional mindset of safeguarding culinary secrets and toward a more transparent and open philosophy toward knowledge sharing in the culinary community.

Abstract
Purpose
Although a laser profile sensor (LPS) can be used to measure dimensions, the “shadow region” generally degrades the accuracy and precision of width measurements. The accuracy and precision of such measurements should be improved.
Design/methodology/approach
In this paper, the authors propose herein a technique that combines high dynamic range (HDR) imaging with logistic fitting. First, a HDR image is composed of several images acquired with different exposure times, which augments the grayscale of the object profile and significantly reduces overexposure. Next, the profile is fit to a logistic function, which provides accurate and precise edge coordinates. Finally, given the edge coordinates, the object width is calculated.
Findings
To verify the stability of this logistic algorithm, the authors simulate different noise conditions and different degrees of incomplete edge data. In addition, the progressiveness of the algorithm is demonstrated by comparing the results with those of other algorithms and with the height measurement. Furthermore, the suitability of the system is verified experimentally.
Research limitations/implications
Because of the limitation of the condition of laboratory, in the experimental section, this paper cannot represent perfectly the industrial situation. It makes this section limited in demonstration.
Originality/value
In this paper, the results show that the measurement accuracy and precision of the width is improved and exceeds that of the height measurement. The proposed HDR imaging method with logistic fitting may be applied to LPS width measurements, which should significantly aid the development of LPSs.

Abstract
Purpose
The purpose of this paper is to propose cuckoo optimization algorithm (COA)-based back propagation neural network (BPNN) to reduce the effect of the nonlinearities presented in laser triangulation displacement sensors. The 3D positioning and posture sensor allows access to the third dimension through depth measurement; the performance of the sensor varies according to the level of nonlinearities presented in the system, which leads to inaccuracies in measurement.
Design/methodology/approach
While applying optimization approach, the mathematical model and the relationship between the key parameters in the laser triangulation ranging and the indexes of the measuring system were analyzed.
Findings
Based on the performance of the parametric optimization method, the measurement repeatability reached 0.5 µm with an STD value within 0.17 µm, an expanded uncertainty of measurement was within 5 µm, the angle error variation of the object’s rotational plane was within 0.031 degrees and nonlinearity was recorded within 0.006 per cent in a full scale. The proposed approach reduced the effect of the nonlinearity presented in the sensor. Thus, the accuracy and speed of the sensor were greatly increased. The specifications of the optimized sensor meet the requirements for high-accuracy devices and allow wide range of industrial application.
Originality/value
In this paper, COA-based BPNN is proposed for laser triangulation displacement sensor optimization, on the basis of the mathematical model, clarifying the working space and working angle on the measurement system.

Abstract
Purpose
This study aims to examine how customers’ perceptions of the quality and credibility of restaurants’ food safety information influence customers’ information adoption and, consequently, their trust in the restaurant and purchase intention. It also explores the moderating effects of customers’ food safety knowledge and health consciousness.
Design/methodology/approach
Participants were asked to read a food safety message from a chain restaurant’s website before taking a self-administered online survey. Using a cross-sectional design, a total of 526 valid responses were collected in the USA through Amazon Mechanical Turk. A two-step approach consisting of a measurement model and a structural equation model was applied to test the direct and indirect effects. Additionally, hierarchical regression models were developed to test the moderating effects.
Findings
Results show that perceived information quality significantly affects perceived information credibility and has a significant direct and indirect influence on information adoption. Furthermore, information adoption has a direct positive influence on customers’ trust in the restaurant and an indirect effect on purchase intention (full mediation effect of trust). Finally, the moderation effects of health consciousness and food safety knowledge were supported.
Practical implications
Restaurateurs can apply research findings to increase the likelihood that customers adopt their food safety information and to enhance customers’ trust and, consequently, purchase intention in restaurants.
Originality/value
Reflecting on framing theory and information processing theory, this study examines the ways that customers process restaurants’ food safety information by developing an original conceptual framework with strong empirical data support.

Purpose
Fatigue and creep are the key factors for the failure of polymethyl methacrylate (PMMA) in the engineering structure, so a great of quantity attention is focused on the life prediction under the creep and fatigue conditions. This paper aims to mainly summarize the traditional life assessment method (S–N curve), life assessment method based on crazing density and life assessment method based on transmittance. S–N curve and classical creep curve are introduced on the traditional life assessment method; the variation of the craze density with the logarithm of cyclic numbers is given in different fatigue load. A linear relationship is obtained, and a higher stress leads to a higher slope, suggesting a faster growth of craze. Furthermore, a craze density model is purposed to describe this relationship; the variation of craze density with the time at different creep load is given. The craze density has two obvious stages. At the first stage, craze density ranged from approximately 0.02 to 0.17, and a linear relationship is obtained. In the following stage, a nonlinear relationship appears till specimen rupture, a new creep life model is proposed to depict two stages. The relationship between transmission and time under creep load is shown. With increasing of time, the transmittance shows a nonlinear decrease. Through polynomial nonlinear fitting, a relationship between the transmittance and residual life can be obtained. To provide reference for the life assessment of transparent materials, the paper compares three life assessment methods of PMMA.

Abstract
Purpose
This paper seeks to examine an emerging synergetic model of organizational leadership that is founded on Chinese Taoism and complex adaptive system (CAS).
Design/methodology/approach
The paper is formed around a comparative analysis of two conceptual models – the CAS model that is founded on what is known as the new science and a more ancient model that is based on Chinese Taoism.
Findings
While the two models were developed more than 2,500 years apart, this paper shows a degree of alignment between Eastern wisdom and the latest Western scientific theory. The essence of what is characterized as Taoistic leadership emphasizes alignment with “The Way” and is based on the interplay of “Yin/Yang.” This is similar to the core elements of CAS that emphasizes the importance of “the Attractor” and the interplay of “Order/Disorder.”
Research limitations/implications
This paper points out the promise of a convergence of ancient wisdom from China, with the latest new science view on organizational behavior. The outcome is a complementary leadership model that is undergirded by both ethical values and scientific support.
Practical implications
This paper goes one step beyond traditional analyzes by dissecting the two key streams of Chinese philosophy, comparing and contrasting these with CAS.
Originality/value
Chinese leaders today tend to be influenced by a leadership style that can be broadly characterized as reflecting principles of Confucianism. These principles support a more hierarchical formulation of leadership and organizations that are more centralized and less adaptive to today's dynamic environment. This paper offers an alternative leadership model, grounded in the Tao philosophy that is said to be more accommodating of the complexities of organizational behavior today. It also offers value to Western leaders in appreciation of the ancient wisdom and values in Taoism relating to today's organizational behavior and leadership.

This case reviews the development of Dianping. After seeing Zagat's unique business model in the United States, founder Zhang Tao found that he could bring it to China and bring about local innovation. At the beginning of its establishment, the collection and promotion of comment content was the major challenge for Dianping. At the same time, Dianping faced legal issues. To solve these problems, the review mechanism of Dianping was designed to a certain extent to ensure the fairness of the review. With the advent of the mobile Internet era, Dianping began to develop a new business model. Relying on its high-quality “word-of-mouth” content and mass basis, Dianping launched group buying, online restaurant ordering, and other businesses. Dianping has always been open to strategic partners. Since 2015, Dianping has undergone historical changes, merging with Meituan. Since then, Dianping has continuously adjusted its business and organizational structure to maintain its competitiveness. Gradually, Dianping has changed from an independent business entity into a business unit of Meituan.

Abstract
The effect of the tube wall heat conduction on the natural convection in a tilted long cylindrical envelope with constant, but different temperature of the two ends and an adiabatic outer surface was numerically investigated. The envelope is supposed to be a simplified model for the pulse tube in a pulse tube refrigerator when the pulse tube is positioned at different orientations. It is found that the cylindrical envelope lateral wall heat conduction can enhance the heat transfer from the hot end to the cold end, not only because of the increase in pure heat conduction in the wall, but more importantly, also the intensification of the natural convection within the enclosure. This enhancement is resulted from the big temperature difference between the tube wall and the adjacent fluid near the hot and cold ends. Adoption of low thermal conductivity tube can effectively reduce such additional heat transfers from hot to cold end, thus reducing the loss of cooling capacity for the pulse tube refrigerator.
