Abstract

Purpose

The purpose of the paper is to study the effects of cooking on proximate composition, amino acids, fatty acids, minerals and total, heme and non‐heme iron content of camel meat.

Design/methodology/approach

A total of ten longissimus thoracis muscles (500 grams) were collected between the tenth and twelfth ribs of the left side. Samples were randomly collected from two to three year old camel carcasses chilled (1‐3°C) for 48 hours then stored at −20°C. The first portion was kept fresh while the second one was placed in plastic bags and cooked by immersion in a water bath at 70°C for 90 minutes. Both samples were freeze‐dried, and then ground to a homogeneous mass to be used for chemical analyses.

Findings

Cooked samples had significantly (p<0.05) higher dry matter by 27.7 per cent, protein by 31.1 per cent and fat by 22.2 per cent, but lower ash content by 8.3 per cent than the raw ones. Cooking had no significant effect on amino acid and fatty acid composition of the meat. The components of camel meat most significantly affected by cooking were macro‐ and micro‐minerals, which ranged between 13.1 and 52.5 per cent, respectively. Cooking resulted in a significant decrease in total, heme and non‐heme iron contents by 4.3, 8.7 and 4.0 per cent, respectively.

Research limitations/implications

The research is restricted to camel meat but it is an exploratory study. The issue of research outcome as only longissimus thoracic muscle is another limitation. Further investigation is needed to include different muscles, temperatures, durations and cooking methods.

Practical implications

Amino acids and fatty acids of camel meat are not affected by cooking, while heating accelerated total and heme iron oxidation suggest camel meat to be a rich source of heme iron.

Originality/value

The paper is original in its findings and useful for both researchers and academics in the field of meat science.

Purpose

The purpose of this paper is to elucidate the influences of the animal fat and fatty acid type on the formation of polycyclic aromatic hydrocarbons (PAHs) and to propose a formation mechanism of PAHs in fat during electric roasting, which is a method of non-direct-contact-flame heating.

Design/methodology/approach

The effects of animal fats and model fat on the formation of PAHs were valued on the basis of the ultra high-performance liquid chromatography data. The corresponding products of the FAME pyrolysis were detected by TG-FTIR. The proposal formation mechanism of PAHs was based on the summary of the literature.

Findings

Contrary to the International Agency for Research on Cancer, DF had higher risk with 280.53 ng/g of concentration after being roasted than the others animal fats of red meat in terms of PAHs formation. This research also ensured the importance of fat on PAHs formation, the concentration of PAHs in pure fats was higher after being electric roasted than that in meat patties and juice which made from corresponding animal fat. What is more, during pure animal fats and meat products being processed, less PAHs formed in the fat with lower extent of unsaturation and lower content of linolenate. In the same way, methyl linolenate demonstrated the significant increasement to PAHs formation compared to the other fatty acids. And, the number of carbon atom and the extent of unsaturation in fatty acid affects the formation of PAHs during roasting. The detection of alkene and alkane allows to propose a formation mechanism of PAHs during model fat being heated. Further study is required to elucidate the confirm moleculars during the formation of PAHs.

Originality/value

This work studied the effect of the carbon atom number and the unsaturation extent of fats and model fats on the formation of PAHs. This work also assure the important of alkene and alkane on the pyrolysis of model fats. This study also researched the formation and distribution of PAHs in pure fats and meat products after being heated.

Abstract

Purpose

The purpose of this paper is to develop and standardize nutrient dense, easily digestible and affordable ready-to-eat supplementary foods from locally available ingredients for malnourished children and to assess their nutritional composition.

Design/methodology/approach

To develop supplementary foods, wheat and green gram were germinated, dried and made into flour. Potatoes of “Kufri Pukhraj” variety procured from university were washed, peeled, sliced, boiled, dipped in potassium metabisulphite solution, dried and grounded into flour. Spinach leaves were washed, dried and made into powder. Five wholesome ready-to-eat supplementary foods, namely, panjiri, mathi, seviyan, biscuits and pinni, were developed from germinated cereal, pulse and potato flour and spinach leaves powder. The products were standardized with potato flour and spinach leaves powder. The developed products were analyzed for proximate composition by standardized methods.

Findings

One-way analysis of variance and Tukey’s test was used to obtain differences in organoleptic scores within different levels of treatments. All five supplementary foods were acceptable at 30 per cent level of potato flour and 2.5 per cent level of spinach leaves powder. Mean scores of panjiri, mathi, seviyan, biscuits and pinni were significantly different (p < 0.05). Significant (p < 0.05) difference was observed in terms of moisture, crude protein, crude fat, crude fibre and ash content among the developed products.

Practical implications

The developed ready-to-eat supplementary foods can be recommended for supplementary feeding programmes running in the country.

Originality/value

The paper aims at the development of high energy protein supplementary foods for malnourished children. The developed complementary food blend is made up of variety of food groups like cereal, pulse, root and tuber and green leafy vegetables to provide wholesome nutrition to children. This is different to originally provided supplementary foods to children made up of only cereal. The developed products also add a variety to supplementary foods given to malnourished children in supplementary feeding programmes.

Abstract

Purpose

Developing countries like India, accounts for about 40 percent of undernourished children in the World and it is largely due to the result of dietary inadequacy in relation to their needs. The purpose of this paper was to evaluate the changes in the nutritional status of the children, from their preschool days to the present primary school days.

Design/methodology/approach

The present investigation was conducted at 20 Integrated Child Development Service (ICDS) centers (Center-A) and 15 primary schools (Center-B) in Bali Gram Panchayat, Arambag, Hooghly District of West Bengal, India, at an interval of three to four years. A total of 1,012 children (boys=498; girls=514) aged two to six years old enrolled in these ICDS centers and a total of 603 children (boys=300, girls=303), aged five to ten years were studied from the 15 primary schools who were the beneficiaries of ICDS centers. Underweight (weight-for-age Z-score (WAZ)) and wasting (weight-for height Z-score (WHZ)) were used to assess the nutritional status.

Findings

The nutritional situation (both in case of underweight and wasting) was better in Center B as compared with Center A. In general, the nutritional condition of boys was better than girls. Center had a very significant effect on both WAZ as well as WHZ, irrespective of age and sex. Sex has a significant impact only on WAZ. Interestingly, there was no significant sex-center interaction for both WAZ as well as WHZ. The children of the area were getting Mid Day Meal supplied through the school authorities which was comparatively better than the ICDS centers’ food supplementation. Better monitoring of nutritional supplementation at primary schools may be an important factor.

Practical implications

In ICDS centers, only the Anganwari worker is responsible in running and implementing the programs offered by the Government. However, at primary schools, the active involvement of all the teachers to run the program may have effectively led to have better results. Furthermore, the Government's focus should not be only on the increase the area covered by the ICDS program, but focus should be to increase the quality of food supplied, proper monitoring of the implementation and increase the allocation of funds. Appropriate measures may be taken by the authorities regarding this.

Originality/value

The results of the study will help in policy making in reducing the prevalence of undernutrition.

Abstract

Purpose

Against a milieu of fragmented research that documents indigenous practices related to food security, and the heterogeneous settings from which the studies have been conducted, this study aims to synthesize the evidence of indigenous knowledge-food security nexus to strengthen the call for the revitalization of indigenous knowledge (IK) as part of the mechanisms to manage food security challenges being aggravated by climate change.

Design/methodology/approach

Drawing on insights from sub-Saharan Africa (SSA), this study reviews 122 articles accessed from the Web of Science and Scopus databases, which covered indigenous methods used for producing, gathering, processing, preserving and storing diverse food sources that indigenous people deploy in securing their food systems.

Findings

The surge in attention to focus on IK-food security nexus tends to be influenced by the growing acknowledgement of climate change impacts on food systems. Essentially, the IK-based practices adopted address all the four food security pillars that are specified by the Food and Agricultural Organization (FAO) as availability, accessibility, utilization and stability. The main motivation behind the continued use of IK-based ways relates largely to the interest to be food secure against climatic shocks and partly to the desire to maintain people’s food cultures and food sovereignty.

Originality/value

This study deploys the food security pillars provided by the FAO (2012) to demonstrate that IK-based ways of food management are capable of addressing all the four food security dimensions, a critical observation toward revitalizing IK in managing growing food security challenges that are intensified by climate change in SSA.

Abstract

Purpose

Data envelopment analysis (DEA) has wide applications in the agricultural sector to evaluate the efficiency with crisp input and output data. However, in agricultural production, impreciseness and uncertainty in data are common. As a result, the data obtained from farmers vary. This impreciseness in crisp data can be represented in fuzzy sets. This paper aims to employ a combination of fuzzy data envelopment analysis (FDEA) approach to yield crisp DEA efficiency values by converting the fuzzy DEA model into a linear programming problem and machine learning algorithms for better evaluation and prediction of the variables affecting the farm efficiency.

Design/methodology/approach

DEA applications are focused on the use of a common two-step approach to find crucial factors that affect efficiency. It is important to identify impactful variables for minimizing production adversities. In this study, first, FDEA was applied for efficiency estimation and ranking of the paddy growers. Second, the support vector machine (SVM) and random forest (RF) were used for identifying the key leading factors in efficiency prediction.

Findings

The proposed research was conducted with 450 paddy growers. In comparison to the general DEA approach, the FDEA model evaluates fuzzy DEA efficiency giving the user the flexibility to measure the performance at different possibility levels.

Originality/value

The use of machine learning applications introduces advanced strategies and important factors influencing agricultural production, which may help future research in farms' performance.

Abstract

This paper hypothesizes that contemporary Gulf cities are not an evolution of traditional settlements but rather forms of modern cities that emerged during the second half of the 20th century after the discovery of oil, the economic boom following the mid 1970s oil crisis and finally political, economic, technological and communication globalization that swept this region since the beginning of the 21st century. While focusing on the case of Kuwait city, the paper reflects on several examples from the Gulf region cities to discuss their development as hybrid forms of modern cities. The paper adopts the theoretical framework proposed by Appadurai in 1996 to understand the flow of modernity through the Gulf cities' scapes. This theoretical framework provides an adequate understanding of Gulf cities evolution and modifications required to make them more adequate to the Gulf region conditions.

Abstract

Purpose

The purpose of this paper is to present and discuss the external factors of the solar dryer design that influenced the thermal efficiency of the solar dryer that contribute to the better quality of dried food products.

Design/methodology/approach

From the reviewed works of literature, the external factors including the drying temperature, airflow rate and relative humidity have significant effects to increase the rate of moisture diffusivity of the freshly harvested products during the drying process. The proper controls of airflow rate (Q), velocity (V), relative humidity (RH%) and drying temperature (°C) can influence the dried product quality. The dehydration ratio is the procedure to measure the quality of the dried food product.

Findings

The indirect solar dryer including the mixed-mode, hybrid and integrated was found shorter in drying time and energy-intensive compared to sun drying and direct drying. The recommended drying temperature is from 35.5°C to 70°C with 1–2 m/s velocity and 20%–60% relative humidity. The optimum thermal efficiency can be reached by additional devices, including solar collectors and solar accumulators. It gives a simultaneous effect and elongated the drying temperature 8%–10% higher than ambient temperature with 34%–40% energy saving. The recommended airflow rate for drying is 0.1204 to 0.0894 kg/s. Meanwhile, an airflow rate at 0.035–0.04 kg/m2 is recommended for an optimum drying kinetic performance.

Research limitations/implications

This paper discusses the influence of the external factors of the solar dryer design on the thermal performance of the solar dryer and final dried food products quality. Therefore, the findings cannot serve as a statistical generalization but should instead be viewed as the quantitative validation subjected to fundamentals of the solar dryer design process and qualitative observation of the dried food product quality.

Practical implications

A well-designed of solar dryer with low operating and initial fabrication cost, which is simple to operate is useful for the farmers to preserve surplus harvested crops to an acceptable and marketable foods product. The optimization of the external and internal factors can contribute to solar dryer thermal performance that later provides an organoleptic drying condition that results in good quality of dried product and better drying process. The recommended drying temperature for a drying method is between 35°C up to 70°C. Drying at 65.56°C was effective to kill microorganisms. Meanwhile, drying at 50°C consider as average drying temperature. The recommended airflow rate for drying is 0.1204 to 0.0894 kg/s. Meanwhile, air flowrate at 0.035–0.04 kg/m2 is recommended for optimum drying kinetic performance. The recommended value of aspect ratio and mass flow rate is 200 to 300 for an optimum evaporation rate. The good quality of dried products and good performance of solar dryers can be developed by proper control of airflow rate (Q), velocity (V), relative humidity (RH%) and drying temperature (°C).

Social implications

The proper control of the drying temperature, relative humidity and airflow rate during the drying process will influence the final dried food products in terms of shape, color, aroma, texture, rupture and nutritious value. It is crucial to control the drying parameters because over-drying caused an increment of energy cost and reduces the dry matter. The quick-drying will disturb the chemical process during fermentation to be completed.

Originality/value

This study identifies the potential of the solar drying method for dehydrating agricultural produces for later use with the organoleptic drying process. The organoleptic drying process can reduce mold growth by promising an effective diffusion of moisture from freshly harvested products. The research paper gives useful understandings that well-designed solar drying technology gives a significant effect on dried product quality.

Abstract

Purpose

The purpose of this paper is to contribute to the current literature on consumer acceptance of cultured meat and to investigate the main factors that might affect it.

Design/methodology/approach

Data were collected from a sample of 490 consumers in Italy, using a web-based survey. The empirical analysis follows an exploratory approach based on the training and checking of a random forest model.

Findings

An important finding of this study concerns the overall positive perception of cultured meat on the part of the interviewees in a country that is the fifth-largest meat producer at the European level. Age, environmental and ethical issues, and scepticism about new food technologies are the most important factors that guide consumer acceptance of cultured meat. The results suggest that in order to increase cultured meat acceptance it would be important to inform and educate consumers towards new food and new food production methods.

Research limitations/implications

The sample analysed in this study is not representative of the whole national population, as it happens in most papers dealing with new food.

Originality/value

Although the conclusions of this exploratory study cannot be over-generalized, the results provide interesting insights on how to increase cultured meat acceptance in view of the possible development of a new market for cultured meat.

Abstract

This paper investigates factors influencing the shaping of future learning environments. It focuses on the impact of social and cultural requirements on the sustainability of future learning environment. It argues that while today's learning environments are shaped by yesterday's visions, future learning environments are shaped by toady's' visions that might not be acceptable nor valid for future generations. The case of New Kuwait University City in Shedadiyah is used to illustrate how current social and cultural requirements impact the design of a future university campus and inhibit the production of a sustainable environment. Among several socio-cultural factors, the paper focuses on two significant aspects that have dramatically affected the development of the master plan for the New University City; namely separation of students' sexes and car parking requirements. The first requirement was mandated by a parliament decree to build two separate campuses; one for male students and the other for female students. The implementation of this requirement resulted in the duplication of many educational facilities and immensely increased space and budget requirements. The second requirement reflected dependency on automobiles as primary means of transportation in Kuwait. It resulted in a necessity to allocate large areas of land for vehicular traffic and car parking. These two requirements, as well as other socio-cultural requirements, created a great challenge towards achieving the required level of sustainability. The paper concludes that while recognizing that accommodating clients' social and cultural requirements is necessary for the application of a comprehensive sustainability strategy, these requirements might work against achieving required levels of other aspects of sustainability.
