Abstract
Purpose
The purpose of the paper is to study the effects of cooking on proximate composition, amino acids, fatty acids, minerals and total, heme and non‐heme iron content of camel meat.
Design/methodology/approach
A total of ten longissimus thoracis muscles (500 grams) were collected between the tenth and twelfth ribs of the left side. Samples were randomly collected from two to three year old camel carcasses chilled (1‐3°C) for 48 hours then stored at −20°C. The first portion was kept fresh while the second one was placed in plastic bags and cooked by immersion in a water bath at 70°C for 90 minutes. Both samples were freeze‐dried, and then ground to a homogeneous mass to be used for chemical analyses.
Findings
Cooked samples had significantly (p<0.05) higher dry matter by 27.7 per cent, protein by 31.1 per cent and fat by 22.2 per cent, but lower ash content by 8.3 per cent than the raw ones. Cooking had no significant effect on amino acid and fatty acid composition of the meat. The components of camel meat most significantly affected by cooking were macro‐ and micro‐minerals, which ranged between 13.1 and 52.5 per cent, respectively. Cooking resulted in a significant decrease in total, heme and non‐heme iron contents by 4.3, 8.7 and 4.0 per cent, respectively.
Research limitations/implications
The research is restricted to camel meat but it is an exploratory study. The issue of research outcome as only longissimus thoracic muscle is another limitation. Further investigation is needed to include different muscles, temperatures, durations and cooking methods.
Practical implications
Amino acids and fatty acids of camel meat are not affected by cooking, while heating accelerated total and heme iron oxidation suggest camel meat to be a rich source of heme iron.
Originality/value
The paper is original in its findings and useful for both researchers and academics in the field of meat science.

Abstract
Purpose
This study aims to examine the effects of various physical and chemical pre-treatments on antioxidant properties of tree bean (Parkia roxburghii G. Don) in combination with storage conditions.
Design/methodology/approach
The whole pods and seeds of tree bean were treated with gamma rays (γ-rays), sodium hypochlorite (NaOCl), chlorine dioxide (ClO2) and hydrogen peroxide (H2O2) and stored at room temperature (RT, 25°C) for 30 days. The physical and chemical pre-treated seeds and pods were compared with the same stored at RT and refrigerated storage at 4°C and −20°C. During storage, physical (moisture content) and antioxidants like total phenolics, ascorbate content, reduced glutathione, total flavonoids, along with free radical scavenging activities (FRSA) were measured.
Findings
Chemical pre-treatments with NaOCl, ClO2 and H2O2 significantly accelerated (p = 0.05) the total phenolics (1.9 mg/g FW in seeds and 2.4 mg/g FW in pods), flavonoids content (0.3 mg/g FW each in seeds and pods) and ABTS activities (73.3 per cent in seeds and 92.3 per cent in pods) at 30 days of storage. A significant decrease (p = 0.05) in ascorbate content (6.1 mg/g FW in seeds and 3.5 mg/g FW in pods), reduced glutathione (5.1 mg/g FW in seeds and 3.7 mg/g FW in pods), FRAP (0.3 mg equi Fe/g FW in seeds and 0.4 mg equi Fe/g FW in pods) and reducing power (1.8 mg/g FW in seeds and 3.7 mg/g FW in pods) was observed under all the treatments at 30 days of storage. However, DPPH increased under γ-irradiation and decreased under chemical pre-treatments, storage at RT and refrigerated storage. The overall result showed that pre-treatment of H2O2 at 10-20 mM maintains antioxidants and radical scavenging activities in tree bean during storage.
Originality/value
The application of H2O2 at 10-20 mM prior to storage of tree bean maintains the physical, antioxidant properties and FRSA in tree bean seeds and pods as compared to natural ambient conditions. Hence, this technique will help in improving the keeping quality of this legume and avoid spoilage after harvest for an extended period.

Abstract
This study examines the role of industry competition, market capitalization, and debt levels in the relationship between profitability and firm value (FV). The sample included companies listed on the Indonesia Stock Exchange (IDX) in the manufacturing sector in 2017–2019. This study provides empirical evidence that the high level of industrial competition (IC), low level of market capitalization (market value of equity, MVE), and high levels of debt (debt-to-assets ratio, DAR) weaken the effect of profitability as measured by return on assets (ROA) on FV as measured by Tobin’s Q. Profitability is not even related to FV for firms facing high industry competition. In addition, profitability only has a marginal positive relationship with FV for firms with relatively small market capitalizations. These findings suggest that the relationship between profitability and FV is not monotonous but is influenced by the level of industry competence, market capitalization, and debt.

Abstract
Purpose
The purpose of this study was to characterize fruit properties of pomegranate cultivars grown in South Africa in order to provide information to assist in selecting cultivars for food and industrial purposes, as well as to optimize postharvest handling and processing.
Design/methodology/approach
The physical, textural and chemical properties as well as volatile profile and free radical scavenging capacity of eight cultivars (cvs “Acco”, “Arakta”, “Bhagwa”, “Ganesh”, “Herskawitz,” “Molla de Elche”, “Ruby”, and “Wonderful”) were quantified to demonstrate the diversity among the characters of the commercially grown cultivars.
Findings
Statistically significant differences were found between cultivars for most of the evaluated characters, primarily highlighting the genetic diversity among the cultivars. The classification of fruit cultivars based on quality traits (such as size, texture, colour, soluble solids, acidity, juiciness and phenolics) showed the great potential of the cultivars for processing and fresh market. The relationship among these quality traits was analysed by principal component analysis (PCA) resulting in the separation of the investigated cultivars into two groups (cluster 1=Ruby, Arakta and Ganesh; Class 2=Bhagwa, Acco and Herskawitz) and two ungrouped cultivars (Molla de Elche and Wonderful). Specific understanding about quality traits of each cultivar was established using the correlation coefficients obtained.
Originality/value
This study provides valuable fundamental information that can be useful for commercial and industrial purposes, as well as the development of optimal postharvest handling and processing parameters for the investigated South African grown pomegranate cultivars.

Abstract
Purpose
This study aims to analyse the intellectual property rights (INPR), foreign direct investment (FDI) inflows and technological exports of 32 developing and developed countries for the period of 2006–2020.
Design/methodology/approach
Diagnostic tests were used to confirm the panel least squares, fixed effect, random effect, feasible general least squares, dynamic ordinary least squares and fully modified ordinary least squares estimator results as well as to increase the robustness.
Findings
According to the findings for the developing countries, trademark, patent and industrial design applications, each had a significant positive long-run effect on FDI inflows. In addition, there was a significant positive long-run relationship between patent applications and medium- and high-technology exports. Meanwhile, trademark and industrial design applications had a significant negative long-term effect on medium- and high-technology exports. In developed countries, patent and industrial design applications each have a significant negative long-term on medium- and high-technology exports. Furthermore, patent and trademark applications each had a significant negative long-run effect on FDI inflows.
Originality/value
This study contributes significantly to the focus that host countries evaluate the technology gaps between domestic and foreign investors at different industry levels to select the best INPR rules and innovation process by increasing international cooperation. Furthermore, the host countries should follow the structure–conduct–performance paradigm based on analysis of the market structure, strategic firms and industrial dynamics systems.

Abstract
Purpose
Pomegranate (Punica granatum L.) fruit is highly valued for its delicious edible arils and health benefits. In this study, a comparative study on elemental composition of seven pomegranate cultivars was determined in the fruit rind, mesocarp and arils.
Design/methodology/approach
The concentrations of major elements (N, P, K, Ca, Mg, S, Cl and Na) and trace elements (Mn, Fe, Cu, Zn, B, Ni, Co, Cr, Pb, Cd, Se, Al, As, Li, Sr, Ti and V) were determined using an inductively coupled plasma optical emission spectrometry (ICP‐OES) calibrated with different concentrations of standard solutions of the minerals.
Findings
The highest amounts of N, P, S and Cl were found in Bhagwa cultivar, while Arakta, Ruby and Wonderful had the highest amount of Mg, Ca, and Na, respectively. P, Fe, Zn, Ti, V were more in quantity in the edible portion, while the other mineral elements were in larger proportions or in some cases were only found (Co, Al, As) in the non‐edible fractions of fruit. Among the major mineral elements investigated, P had the highest covering of the RDA, ranging from 6.78 to 8.53 per cent contribution to the RDA, followed by K (4.530‐4.95 per cent RDA), S (1.25‐1.54 per cent RDA), Ca (1.04‐1.54 per cent RDA), Mg (4.33‐5.26 per cent RDA), and Na (0.15‐0.17 per cent RDA).
Practical implications
Knowledge of the relative contributions of mineral elements in the edible fruit part (arils) to RDA will assist in nutrition planning against mineral deficiency.
Originality/value
Pomegranate fruit contains edible and non‐edible portions, and this study provided the first detailed report on the distribution of a wide range of trace and major mineral elements in the three parts of the fruit. This study also showed that the edible portion (arils) of pomegranate fruit is a good dietary source of essential nutrients such as K, Ca, Mg, and Se, while the non‐edible parts may provide valuable sources of minerals for other food and bioprocess industries.

Abstract
Purpose
The purpose of this paper is to investigate what is the most important characteristic that leads to effective teaching in the general education schools in Oman, as perceived by the students.
Design/methodology/approach
Methodologically, this research is a survey in nature, using questionnaires for data collection. The sample size consists of 2,628 students from the General Education Schools in most of the regions in Oman. To ensure the reliability and construct validity, this research has applied the principal component analysis (PCA) to determine whether the relevant items have been accordingly loaded on their respective construct. For data analysis, the confirmatory factor analysis (CFA) or the measurement model was employed to determine the indictors and factors as well as the predictor that can positively lead to effective teaching and teachers.
Findings
In terms of the findings, this research discovered that, the “community relationships” factor is the most important factor that leads to effective teaching and that it predicts an effective teacher in Oman. This indicates that to have effective teaching in Oman from the students' perspectives, the school must involve the society to participate and support the educational process, while an effective teacher should align his/her teaching service with society needs. Teaching strategies were found to be the second factor and predictor for teaching effectiveness.
Originality/value
This research is timely, as the Omani Ministry of Education is striving to achieve quality education. The study described in the paper is aligned with the Ministry's aims and objectives and will be of benefit to the Omani Ministry of education, educational policy‐makers and planners in terms of setting a standard for effective teaching and has provided a model to follow in becoming an effective teacher, according to General Education students in Oman. This paper has bridged gaps in the existing literature on providing characteristics for effective teaching and teachers in Oman. No other paper or research, based on researchers' best knowledge, has dealt with the issue of teaching effectiveness in Oman and presented criteria to follow in determining an effective teacher. Therefore, this research is unique and has taken a bold step to design a model which the Omani government can use as a standard for effective teaching and teachers in Oman.

Abstract
Purpose
This study aims to provide a qualitative framework for satisfactory sustainable education for international accounting students using a meta-synthetic approach.
Design/methodology/approach
To determine the components and indicators of satisfactory sustainable education for international accounting students, a meta-synthesis allows for the attainment of the objectives of study. In the first phase of study, international related literature was reviewed (n = 2,176). After several screenings for measuring the quality of the related literature including Critical Appraisals Skills Program (CASP), the total number of selected papers was 48, and 2,128 were excluded.
Findings
The present research proposed a comprehensive conceptual model for sustainable education and international accounting students’ satisfaction, with seven components and 63 indicators. To assess the credibility of phases, the indicators were presented to five experts independently. The reliability of the proposed conceptual model was tested using Cohen’s Kappa coefficient and analyzed in SPSS. Kappa’s coefficient showed that the agreement level was high and the reliability was high too.
Originality/value
Sustainable education and student satisfaction are crucial for maintaining a competitive international education market. There are ongoing debates about accounting education, particularly accreditation challenges and the need for clear regulations on academic interaction with practice. Accounting education has also been criticized for being outdated, promoting surface-level learning and neglecting the development of broader skills in university graduates. Therefore, it is important to understand sustainable education for international accounting students. The present study aims to identify the aspects of accounting educational services that international accounting students perceive important for increasing satisfaction. This research provides empirical evidence and suggests potential avenues for future research in other countries.

Abstract
The main purpose of this study was to evaluate students’ perception of blended learning instructional design in a Higher Education Institution (HEI) in the Sultanate of Oman. A course in a bachelor degree was offered using blended learning instructional mode, and students’ feedback was obtained on the impact of blended learning. The study was conducted in Ibra College of Technology, one of the seven colleges under the Ministry of Manpower in the Sultanate of Oman. A course in Business Strategy and HR Management was offered during Summer 2016 using a combination of traditional and online instructional design. A structured questionnaire was administered at the end of the semester to solicit feedback from students. The results of the study highlighted a positive attitude among students towards blended learning courses. The research stressed the requirements for proper infrastructure, training and development initiatives for staff and students, shift to a more focused practical assessment methods to measure the graduate attributes. Student engagement, learner autonomy, connection of learning to real life environments and flexibility all appeared to benefit from the blended learning course.

Abstract
Purpose
This study aims to examine whether firms that appear to exhibit high sustainable outputs are more likely to pay higher audit fees than firms without such outputs.
Design/methodology/approach
The sustainability outputs are measured using a sustainable product portfolio consisting of four products: clean energy products, eco-design products (EDP), environmental products (EP) and sustainable building projects (SBP). The audit fee variable is measured by the natural logarithm of the total amount of audit fees. The study tests two models of the association between these outputs and audit fees; Model 1 tests this association in the absence of the moderating variable (sustainability committee), and Model 2 tests the association in the presence of the moderating variable.
Findings
An analysis of data on 261 European firms from the Refinitiv Eikon database from 2010 to 2019 shows that high sustainability outputs are significantly and positively associated with audit fees. More importantly, this association is moderated by the presence of a board-level sustainability committee, suggesting that this type of committee reflects a factor considered by auditors in their audit risk assessment practices. The findings indicate that in Model 1, one (EP) out of four variables has a significant and positive association with audit fees, while in Model 2 and in the presence of sustainability committee, two variables (EP and EDP) have a significant and negative association with audit fees. However, the robust analysis shows that three variables (EP, EDP and SBP) have significant and negative associations with audit fees.
Practical implications
The study findings have important implications for policymakers, auditors and firms’ managers. For policymakers, the findings provide support for the argument that sustainable attitudes incentivise firms to manage sustainable product profiles more effectively. As such, policymakers should incentivise firms to establish a sustainability committee and regulate its role and responsibilities. Auditors should coordinate with the sustainability committee to facilitate audit efforts and reduce audit fees.
Social implications
Understanding the relationship between sustainable products and audit fees will allow firms to improve their portfolio of sustainable products. In addition, other social implications of this study relate to improving relationships with society by establishing a sustainability committee that is responsible to communicate with that society.
Originality/value
The results support the argument that firms should manage sustainable product portfolios more effectively. In addition, the results of the study highlight the importance of a new variable as a moderator, the sustainability committee, which has not been examined before.
