Abstract

Purpose

The purpose of the paper is to study the effects of cooking on proximate composition, amino acids, fatty acids, minerals and total, heme and non‐heme iron content of camel meat.

Design/methodology/approach

A total of ten longissimus thoracis muscles (500 grams) were collected between the tenth and twelfth ribs of the left side. Samples were randomly collected from two to three year old camel carcasses chilled (1‐3°C) for 48 hours then stored at −20°C. The first portion was kept fresh while the second one was placed in plastic bags and cooked by immersion in a water bath at 70°C for 90 minutes. Both samples were freeze‐dried, and then ground to a homogeneous mass to be used for chemical analyses.

Findings

Cooked samples had significantly (p<0.05) higher dry matter by 27.7 per cent, protein by 31.1 per cent and fat by 22.2 per cent, but lower ash content by 8.3 per cent than the raw ones. Cooking had no significant effect on amino acid and fatty acid composition of the meat. The components of camel meat most significantly affected by cooking were macro‐ and micro‐minerals, which ranged between 13.1 and 52.5 per cent, respectively. Cooking resulted in a significant decrease in total, heme and non‐heme iron contents by 4.3, 8.7 and 4.0 per cent, respectively.

Research limitations/implications

The research is restricted to camel meat but it is an exploratory study. The issue of research outcome as only longissimus thoracic muscle is another limitation. Further investigation is needed to include different muscles, temperatures, durations and cooking methods.

Practical implications

Amino acids and fatty acids of camel meat are not affected by cooking, while heating accelerated total and heme iron oxidation suggest camel meat to be a rich source of heme iron.

Originality/value

The paper is original in its findings and useful for both researchers and academics in the field of meat science.

Abstract

Purpose

The purpose of this paper is to contribute to the current literature on consumer acceptance of cultured meat and to investigate the main factors that might affect it.

Design/methodology/approach

Data were collected from a sample of 490 consumers in Italy, using a web-based survey. The empirical analysis follows an exploratory approach based on the training and checking of a random forest model.

Findings

An important finding of this study concerns the overall positive perception of cultured meat on the part of the interviewees in a country that is the fifth-largest meat producer at the European level. Age, environmental and ethical issues, and scepticism about new food technologies are the most important factors that guide consumer acceptance of cultured meat. The results suggest that in order to increase cultured meat acceptance it would be important to inform and educate consumers towards new food and new food production methods.

Research limitations/implications

The sample analysed in this study is not representative of the whole national population, as it happens in most papers dealing with new food.

Originality/value

Although the conclusions of this exploratory study cannot be over-generalized, the results provide interesting insights on how to increase cultured meat acceptance in view of the possible development of a new market for cultured meat.

Abstract

Purpose

The purpose of this paper is to explore the views of the primary and the secondary stakeholders on the current functioning of the fish quality and safety regulatory system in Oman.

Design/methodology/approach

The views on the fish quality and safety regulatory governance mechanism were elicited using a questionnaire survey.

Findings

Although specific benefits derived from the quality control (QC) regulations were recognized by both groups a number of key factors were highlighted for improvement such as funding, being more proactive, literacy, quality of fish received.

Originality/value

The paper has identified some weaknesses and constraints that hinder the effective and efficient functioning of the quality and safety regulatory systems and provided appropriate policy recommendations to make the governance of the QC regulatory system in the seafood sector efficient and effective and to mitigate public health risk.

The learning outcomes are as follows: to enable the learners to understand advantages and disadvantages of franchises in the company; to understand the strength and weakness points of Café2Go, its underlying strategy and what makes the company a unique outlet; to acquire a better understanding on the key challenges or dilemmas that Café2Go faces and to provide recommendations to address such dilemmas; to evaluate innovative marketing plans that would aid in expanding Café2Go internationally; and to understand cause-effect analysis of project management and the reason for the increase in the operationalization cost on Café2Go.

Case overview/synopsis

This case study presents the story of Jassim Al-Bastaki who was once rejected as a franchisee and later managed to be a pioneering franchiser in the UAE. The case aims to highlight the new coffee products and distribution methods Al-Bastaki used to compete in the over-saturated coffee market in Dubai. Al-Bastaki distinguished the first Café2Go by offering camel products in a mobile truck. It was the first “café-on-wheels” in the UAE, and it marketed the slogan of “wherever you are”. This case study discusses the challenges the project faced while marketing the unpopular, salty drink camel milk and issuing the necessary licenses for the coffee truck. The case study also elaborates on the innovative strategies Al-Bastaki used to convince customers of the health benefits of camel milk, to serve camel milk in appealing forms such as milkshakes and to replace the banned mobile truck with kiosks, cubicles, mobile trolleys and free phone call services. The case study also aims to highlight the obstacles associated with the franchise model and to reveal how Al-Bastaki overcame such challenges, using the franchise model, to expand Café2Go beyond the UAE. What started as a mobile coffee truck in 2009, in Dubai, has changed into an expanding business in Qatar, Libya, Bahrain, Saudi Arabia, South Africa and Spain (Masudi, 2013).

The case study is relevant for undergraduate and post-graduate management degrees, and specifically business administration, entrepreneurship, small business management courses.

Abstract

The relationship between stakeholders and organizations has been gaining more focus in strategic organizational management. The scenario of increased accountability required by society and by the competitive business environment itself demands ethical, fair, and sustainable practices from companies. In this sense, effective and fair stakeholder management becomes relevant. Thus, stakeholder theory proves to be a valid theoretical perspective for this challenge. In its conceptualization, stakeholder theory has pointed out different issues for strategic management practices, and how to treat the stakeholder fairly has been one of the concerns of the proponents of the theory (Bosse, Phillips, & Harrison, 2009). In this regard, principles of organizational justice have been incorporated into stakeholder management models. The authors argue that organizational justice, including its basic dimensions of distributive justice, procedural justice, and interactional justice, can positively impact the bottom line of organizations through synergy in value creation and by encouraging reciprocal behavior between the firm and stakeholders.

Abstract

Purpose

The main purpose of this paper is to study the changing consumer behavior toward broiler meat and apprise its consequences toward food insecurity.

Design/methodology/approach

This is a sequential exploratory mixed-method study in which qualitative data were collected through semi-structured interviews (n = 38) by snowball sampling. The quantitative data were collected through a questionnaire survey (n = 975) by convenience sampling. The qualitative data were analyzed through NVivo 10 software by using thematic analysis, i.e. the qualitative content analysis (QCA). The theory of consumer alienation provides the theoretical underpinning for a quantitative study. The established scales were adopted and adapted. The quantitative data was analyzed through AMOS 24 software by using structural equation modeling (SEM).

Findings

It was found that people have many reservations regarding broiler meat. Thus, consumer alienation negatively (ß = −0.10) and the subjective norm positively (ß = 0.82) affects the intention to buy broiler meat.

Research limitations/implications

The ongoing consumer alienation toward broiler will force them to avoid using this cheapest protein and ultimately will lead to food insecurity in developing countries. It is recommended that people must be adequately educated about the real broiler business and its operations to counter their ongoing misperceptions.

Abstract

Purpose

The presentation refers to simulations of magnetization processes of the spring-exchange magnetic composites containing magnetically soft and ultra-high coercive phases. In particular, the aim of this study is to investigate the possibility of reducing expensive rare earth (RE) in the so-called neodymium magnets and improving their efficiency.

Design/methodology/approach

In order to model hysteresis loops, a special disorder-based Monte Carlo procedure, suitable for irregular geometry of the composites, was applied. The chosen system parameters were defined in order to model Nd2Fe14B/Fe composites.

Findings

The results suggest potential for optimizing hard magnetic composites. Magnetization curve parameters are sensitive to grain coupling and easy magnetization axis ordering. Strong coupling for a single-phase hysteresis loop is unachievable for grains above a certain size, i.e. found to be a few hundred nanometers. Considering these factors and their interdependencies, it’s possible to enhance the |BH|max parameter or reduce the RE content.

Research limitations/implications

The research was carried out using computer simulations, which by their nature are only approximations of physical processes. The next stage of research is to produce the described composites and test their actual properties.

Practical implications

The research enhances permanent magnets, boosting efficiency in technologies like wind turbines and electric motors, indirectly benefiting the environment. It also reduces RE elements in magnets for environmental, economic and political gains.

Originality/value

The unique approach is to consider the random orientation of the magnetic anisotropy of the hard magnetic grains, which is close to real powder composites. The results provide valuable guidance for the production process of permanent magnets.

Abstract

Purpose

The purpose of this paper is to propose an analytical model for estimating propagation delay in coupled resistance-inductance-capacitance (RLC) interconnects.

Design/methodology/approach

With higher frequency of operation, longer length of interconnect and fast transition time of the signal, the resistor capacitor (RC) models are not sufficient to estimate the delay accurately. To mitigate this problem, accurate delay models for coupled interconnects are required. In this paper, an analytical model for estimation of interconnect delay is developed for simultaneously switching lines. Two distributed RLC lines coupled inductively and capacitively are considered. To validate the proposed model, SPICE results are compared with the proposed analytical results. Each line in the coupled structure is terminated by a capacitive load of 30fF. The driving signal is considered symmetrical with equal rise and fall time of 5 ps and OFF/ON time of 45 ps. The model is validated for both in-phase and out of phase switching of lines.

Findings

It is observed that the model works well for both the phases of inputs switching. The derived expressions of delay exhibit complete physical insight, and the results obtained are in excellent agreement with SPICE results. Comparison of analytical delay with SPICE delay shows an average error of < 2.7 per cent.

Originality/value

The analytical expressions for interconnect delay are derived for the first time under simultaneously switching scenario. This model is useful to estimate delay across the inductively and capacitively coupled interconnects.

Abstract

Purpose

Faraoyść is a translinguistic portmanteau neologism that describes the moment when oppressive systems are shaken and appear to be coming to an end, and joyful, liberated worlds feel within reach. The purpose of this research is to demonstrate that faraoyść helped participants helped participants to expand their situated imaginings, which increased their capacity to imagine decolonized worlds.

Design/methodology/approach

This research was guided by faraoyść as a conceptual framework that explores the empirical experience of joy through collaborative world-building activities. These praxis-based exercises were tested in a series of workshops both at the 2020 UNESCO Futures Literacy Summit and in collaboration with Negligence Refugees from Lebanon.

Findings

When activated by collaboratively designed speculative objects and stories generated through the lens of faraoyść, participants created spaces of rhizomatic world-building that allowed them to imagine beyond the boundaries of their situated imaginings. Once participants had mapped the ways their imaginations were limited by current colonial systems of power, they were able to reorient their roles and develop new means to act within decolonized systems.

Originality/value

Faraoyść is a novel conceptual framework that contributes to current movements to decolonize futuring and foresight. This paper also introduces the concepts of rhizomatic world-building – an emergent approach to co-imagination, and situated imaginings, which are the systemic frameworks within which one imagines the ways the world has, is, will and must work. In practice, faraoyść is grounded in abundance and the power of liberatory joy to strengthen and celebrate local traditions, storytelling, world-building and community power.

Abstract

Purpose

The purpose is to calculate the change in the total energy of a small fragment of an idealized lattice of iron (in its pure form and with impurity atoms) containing an edge dislocation during its elementary motion at one interatomic spacing, both under the influence of a constant magnetic field and without it. The introduction of a magnetic field into the system is aimed at checking the adequacy of the description of the phenomenon of magnetoplasticity by changing the total energy of the atomic system.

Design/methodology/approach

The design procedure is based on a quantum-mechanical description of the switching process of the covalent bond of atoms in the dislocation core. The authors used the method of density functional theory in the Kohn-Shem version, implemented in the GAUSSIAN 09 software package. Using the perturbation theory, the authors modeled the impact of an external constant magnetic field on the energy of a system of lattice atoms.

Findings

The simulation results confirmed the effect of an external constant magnetic field on the switching energy of the covalent bond of atoms in the dislocation core, and also a change in the magnetic susceptibility of a system of atoms with a dislocation. This complements the description of the magnetoplastic effect during the deformation of metals.

Originality/value

The authors created quantum-mechanical models of the dislocation motion in the Fe crystal lattice: without impurities, with a substitutional atom Cr and with an interstitial atom C. The models take into account the influence of an external constant magnetic field.
