Abstract

Historically trade unions were in the forefront of social reform, campaigning against child labour, against the 12‐hour day and for free public education and universal suffrage. But with their achievement of great power and influence in the modern societies they have been less sensitive to the present day exploited and oppressed — to women and guestworkers and all those foreign in colour and language, in customs, sex and tastes. To be sure these groups are often unfamiliar with unions, and reluctant to join them even if invited because of the fear of employer reprisal and their weak position in the labour market. Characterised as they have been by transiency, dependency and divided loyalties, the unions long wished them away or accepted them if they behaved like native men, that is to say in an understandable way and with acceptable rationality. Although the similarities between the problems of women and foreign workers or workers of colour in the labour markets of the industrialised countries is an intriguing study, we shall here look specifically at the case of women, recognising the while that their problems are not unique and their oppression not unprecedented.

Abstract

In the last four years, since Volume I of this Bibliography first appeared, there has been an explosion of literature in all the main functional areas of business. This wealth of material poses problems for the researcher in management studies — and, of course, for the librarian: uncovering what has been written in any one area is not an easy task. This volume aims to help the librarian and the researcher overcome some of the immediate problems of identification of material. It is an annotated bibliography of management, drawing on the wide variety of literature produced by MCB University Press. Over the last four years, MCB University Press has produced an extensive range of books and serial publications covering most of the established and many of the developing areas of management. This volume, in conjunction with Volume I, provides a guide to all the material published so far.

Abstract

The concept of equality in employment is an elusive one, since it is difficult to visualise the state that would be described with such a concept. Most often, its meaning is taken as self‐ evident and therefore left undefined. (See, for instance, the papers submitted to the Subcommittee on Economic Growth and Stabilisation of the Joint Committees of the Congress of the United States, 1977). Difficulties in attempting to define equality in employment arise from at least four distinct sources: One set of problems stems from the fact that it is hard to envision equality in employment in the overall context of a society that is based on inequality. Utopian thinkers have therefore, traditionally handled the problem of inequality in employment for any given group by equalising all work in its evaluation, and to some degree, in its allocation. (For a modern version that is extremely well thought through see LeGuin, 1974). I will assume that for the purposes of this paper a complete restructuring of society along the lines of overall equality is outside the realm of the possible given the current context and I will therefore not pursue this thought here further.

Alice Rangel de Paiva Abreu is Director of the Office of Science and Technology of the Organization of American States in Washington DC, and Professor of Sociology at the Federal University of Rio de Janeiro, Brazil. For three years she was Vice President of the National Council for Scientific and Technological Development (CNPq). She is also a member of the Executive Committee of the International Sociological Association and President of RC30 Sociology of Work. Her research interests include industrial restructuring and gender and work. alice.abreu@br.inter.net Graciela Bensusán is a professor/researcher at the Universidad Autónoma Metropolitana-Xochimilco, and is also affiliated with FLACSO in Mexico City. Abstract

Purpose

The objective of the study was to assess consumer exposure to warmed-over flavour, their eating habits with respect to pre-cooked stored meats, awareness of antioxidants and attitudes towards the use of natural antioxidants as preservatives in meat and meat products.

Design/methodology/approach

A total of 238 Check-All-That-Apply (CATA) design questionnaires were used to gather information from the University of Fort Hare community in the Eastern Cape province of South Africa.

Findings

The majority of the respondents had been exposed to warmed-over flavour before. More than half of the respondents did not know about antioxidants. Respondents were in support of the use of natural antioxidants in meat and meat products.

Research limitations/implications

The study mainly captured consumer habits based on living arrangements. Age influence could not be extrapolated due to the nature of the population, which was being studied. The population was limited to the University community, which is mainly made up of not so widely spread age groups and more or less similar levels of education. As a result, the findings and conclusions may not be a true reflection of the general public consumers in terms of age, level of education and employment status.

Originality/value

This research presents an original insight into consumer habits concerning the purchasing and storage of pre-cooked meat and meat products. The study revealed that most consumers nowadays prefer ready-to-eat or pre-cooked meat and meat products due to convenience. The warmed-over flavour is common in pre-cooked meats. The findings suggests that the meat industry has to improve the shelf-life of pre-cooked foods such that warmed-over flavour development is delayed to fit into the current consumer habits. In recent years there has been a growing interest in the use of natural antioxidants to improve shelf-life of muscle foods. However, there is a dearth of information on consumer attitudes towards the use of natural antioxidants as preservatives. This study reveals that consumers are willing to try products formulated using natural antioxidants.

I felt myself the recipient of a great honour when asked to read a paper on this subject before your Society. One difficulty, however, at once confronted me, and that was that what your society might regard as an act of sophistication of food, I might believe to be only a perfectly legitimate manufacturing improvement. I had no wish to masquerade before you as a wolf in sheep's clothing, and therefore stated my position to your secretary. As a result of some correspondence, I think that he, as your representative, and I, both felt that granted such differences of opinion, they themselves constituted one of the strongest arguments in favour of the formation of a Court of Reference. There are, no doubt, many processes which are considered by their inventors and users as of advantage in the manufacture of food, whereas others regard them with the greatest distrust and aversion. In most cases I believe the members of both these classes to be high‐minded and honourable men. That being so, it is submitted that the best method of arriving at the real facts is the establishment of an impartial, broad‐minded, and capable Court of Reference, to which such matters should be submitted for examination and decision.
