Abstract

Purpose

Heterocyclic aromatic amines are mutagenic and/or carcinogenic compounds formed during cooking of meat. Therefore, the formation levels of them should be reduced. For this aim, the purpose of the present study was to determine the effect of dry breadcrumb in meatball production on the formation of heterocyclic aromatic amines. In addition, the effect of dry breadcrumb on some quality parameters of the meatballs was also investigated.

Design/methodology/approach

Meatball dough with 15 percent fat was divided into four parts, where one group was selected as the control group (without dry breadcrumb). In the other three groups, dry breadcrumb was added in various ratios of 5 percent, 10 percent and 15 percent (w/w). Then, meatball dough was stored at 4 °C for 3 h and shaped into meatballs with a metal shaping device (7 × 1 cm). For some of the quality parameters, water, pH, cooking loss and TBARS analyses were done in the samples. Heterocyclic aromatic amine analysis was done in only cooked samples according to solid phase extraction.

Findings

The use of dry breadcrumb in meatball production decreased water content and cooking loss. As cooking temperature increased, water contents and cooking loss of meatball decreased. PhIP, AαC and MeAαC were not detected in any of the samples analyzed. As cooking temperature increased, total amount of HCAs increased and ranged between 0.05 and 0.51 ng/g. While the use of dry breadcrumb in the meatball production increased IQ content of the meatballs, the use of 5 percent dry breadcrumb caused a decrease in the total HAA content (28.57–66.67 percent) for all cooking temperatures.

Originality/value

Many research studies including our study in the literature were conducted on formation and reduction of HAAs in meat and meat products. However, although dry breadcrumb is frequently used both in domestic and commercial meatball formulations; to the best of our knowledge, effect of using dry breadcrumb in meatball production on HAAs formation has not been investigated in the literature. Therefore, in the present study, the effects of the use of dry breadcrumb in meatball production on some quality parameters and formation of HAAs in meatballs cooked at 150 °C, 200 °C and 250 °C were determined.

The issue of training and appointment of school administrators has consumed substantial attention from educational scholars for several decades. The literature has witnessed a growing amount of research effort in investigating and identifying the effective ways of training and appointing school principals. However, there are also political, social and cultural aspects to this endeavour, which potentially influences the practices pertaining to training and appointment of school principals. This chapter represents scholarly efforts to discuss issues on the training and appointment of school administrators in Turkey within its historical and political background. Thus, first, it focuses on the historical journey of the field of educational administration in Turkey. This journey has been categorised under three phases: The Ottoman Era, Early Years of Turkish Republic and the 1950s Onwards. Second, this chapter discusses school principalship in Turkey with a specific focus on political and legal dimensions. Finally, the chapter ends with an overall evaluation of the practices and policies pertaining to school administration curriculum in Turkey.

Abstract

Purpose

The individual machine learning methods used for fault detection and classification have accuracy performance at a certain level. A combined learning model composed of different base classifiers rather than an individual machine learning model is introduced to ensure diversity. In this way, this study aims to improve the generalization capability of fault detection and classification scheme.

Design/methodology/approach

This study presents a probabilistic weighted voting model (PWVM) with multiple learning models for fault detection and classification. The working principle of this study’s proposed model relies on weight selection and per-class possibilities corresponding to predictions of base classifiers. Moreover, it can improve the power of the prediction model and cope with imbalanced class distribution through validation metrics and F-score.

Findings

The performance of the proposed PWVM was better than the performance of the individual machine learning methods. Besides, the proposed voting model’s performance was compared with different voting mechanisms involving weighted and unweighted voting models. It can be seen from the results that the presented model is superior to voting mechanisms. The performance results revealed PWVM has a powerful predictive model even in noisy conditions. This study determines the optimal model from among voting models with the prioritization method on data sets partitioned different ratios. The obtained results with statistical analysis verified the validity of the proposed model. Besides, the comparative results from different benchmark data sets verified the effectiveness and robustness of this study’s proposed model.

Originality/value

The contribution of this study is that PWVM is an ensemble model with outstanding generalization capability. To the best of the authors’ knowledge, no study has been performed using a PWVM composed of multiple classifiers to detect no-faulted/faulted cases and classify faulted phases.

Abstract

Purpose

The purpose of this paper is to present the computational modeling of second-order two-dimensional nonlinear hyperbolic equations by using cosine expansion-based differential quadrature method (CDQM).

Design/methodology/approach

The CDQM reduced the equations into a system of second-order differential equations. The obtained system is solved by RK4 method by converting into a system of first ordinary differential equations.

Findings

The computed numerical results are compared with the results presented by other workers (Mohanty et al., 1996; Mohanty, 2004) and it is found that the present numerical technique gives better results than the others. Second, the proposed algorithm gives good accuracy by using very less grid point and less computation cost as comparison to other numerical methods such as finite difference methods, finite elements methods, etc.

Originality/value

The author extends CDQM proposed in (Korkmaz and Dağ, 2009b) for two-dimensional nonlinear hyperbolic partial differential equations. This work is new for two-dimensional nonlinear hyperbolic partial differential equations.

Abstract

Purpose

This study aims to examine the impact of some real variables such as real effective exchange rates, real mortgage rates, real money supply, real construction cost index and housing sales on the real housing prices.

Design/methodology/approach

This study uses a nonlinear autoregressive distributed lag (NARDL) model in the monthly period of 2010:1–2021:10.

Findings

The real effective exchange rate has a positive and symmetric effect. The decreasing effect of negative changes in real money supply on real housing prices is higher than the increasing effect of positive changes. Only positive changes in the real construction cost index have an increasing and statistically significant effect on real house prices, while only negative changes in housing sales have a small negative sign and a small increasing effect on housing prices. The fact that the positive and negative changes in real mortgage rates are negative and positive, respectively, indicates that both have a reducing effect on real housing prices.

Originality/value

This study suggests the first NARDL model that investigates the asymmetric effects on real housing prices instead of nominal housing prices for Turkey. In addition, the study is the first, to the best of the authors’ knowledge, to examine the effects of the five real variables on real housing prices.

Abstract

Purpose

This article aims to investigate the impact of the Lesson Study (LS) model on students' mathematics achievement and attitudes toward mathematics.

Design/methodology/approach

The study employs a concurrent embedded design, a type of mixed methods design. Within this framework, a quantitative pretest-posttest control group quasi-experimental design is applied for quantitative data, while qualitative data is gathered through interviews and observations. A 2×2 mixed ANOVA is used for the analysis of quantitative data, and content analysis is employed for qualitative data analysis.

Findings

The findings reveal that the LS model has a significant positive impact on the mathematics achievement and attitudes of students in the experimental group. Quantitative analysis shows a meaningful improvement in mathematics achievement for the experimental group, which is notably superior than the control group. Additionally, students in the experimental group found mathematics lessons more enjoyable and easier, and their attitudes toward mathematics improved positively. Students' feedback supports these results, with many expressing that LS-based lessons were more engaging and effective. Observations by the researcher, mathematics expert and teacher in the experimental group also corroborate these positive changes.

Originality/value

The results of the study suggest that the LS model should be more widely implemented in mathematics education. This recommendation highlights the potential of the LS model to enhance the teaching process and improve students' mathematics achievement. Furthermore, the study also indicates that LS has a positive impact on students' attitudes toward mathematics, as evidenced by their increased motivation and more positive outlook toward the subject. These findings underscore the LS model’s effectiveness in both improving academic performance and transforming students' attitudes toward mathematics.

Abstract

Purpose

The crude oil market plays a key role in addressing the issue of energy economics. This paper aims to detect the causality relationship between the crude oil market and economy based on the financial system.

Design/methodology/approach

This paper used the static and dynamic Hatemi-J Bootstrap Toda–Yamamoto and Diebold–Yilmaz connectedness index. The Hatemi-J Bootstrap Toda-Yamamoto approach allows researchers to use nonstationary data and that method is robust to nonnormal distribution and heteroscedasticity. The Diebold–Yilmaz connectedness index model provides researchers to detect the power of connectedness besides linkage direction. The analyzed period is the span from January 3, 2005 to October 3, 2022.

Findings

The results show bidirectional causality in the full sample but unidirectional causality before and after the 2008 financial crisis. During the 2008 financial crisis period and the COVID-19 period, there was a bidirectional and unidirectional causality, respectively. The connectedness approach indicates that the crude oil market affects financial stress through investors’ risk preferences.

Research limitations/implications

The Diebold–Yilmaz spillover index model is based on vector autoregression methods with a stationarity precondition. However, some of the five dimensions that constitute the financial stress index (FSI) are nonstationary in level. Therefore, the authors takes the first difference of the nonstationary data.

Practical implications

The linkage between the crude oil market and the FSI provides useful information for investors and policymakers. For instance, this paper indicates that an investor wanted to forecast future value of the crude oil (financial stress) should consider the current and past values of financial stress (crude oil). Moreover, policymaker should consider the crude oil market (FSI) to make a policy proposal for financial system (crude oil market).

Originality/value

Recently, indicators of economic activity levels (economic policy uncertainty, implied volatility index) have begun to be considered to analyze the relationship between energy and the economy but very little is known in the literature about the leading and lagging roles of data in subsample periods and the linkage channel. The other originality of this research is using the new econometric approaches.

Abstract

Purpose

Nowadays, companies have required new alternatives and strategies to handle environmental sustainability difficulties, primarily as ecological and social awareness has grown. In this context, the aim is to determine the green transportation indicators in companies with corporate identity and logistics activities at the international level in Giresun, Ordu, Gümüshane, Artvin, Rize, and Trabzon in the Eastern Black Sea Region in Turkey. At the same time, the study contributes to providing an effective and applicable solution to decision-making problems involving the assessment of green transportation indicators and smart network strategies in the logistics sector, which is a critical sector for countries. The purpose of this paper is to address these issues.

Design/methodology/approach

This study aims to propose a model for the selection of smart network strategy and to determine the criteria weights used in green transportation indicators, and establish an ideal smart network strategy. In achieving the outlined goals of the study, the authors believe that the model proposed in the study will draw the focus to green logistics which will aid the environmental, economic and social efforts of businesses and governments through the provision of efficient use of scarce resources, which will, in turn, ensure that we leave a sustainable environment for future generations and businesses enjoy a competitive advantage. At the same time, different smart network strategies and green transportation indicators in companies show the success rate of social, economic and environmental indicators in green logistics practices. In addition to providing innovative, reliable and sustainable transportation systems, smart network strategies are critical for businesses to create cost advantages. Through the green transportation indicators and smart network strategies selection model outlined in this study, it is clear that the contribution will not only be limited to businesses, as the society and governments will also benefit from the important indicators on sustainability, as well as the protection of the environment and nature.

Findings

According to the findings, “economic indicators” is the essential green transportation indicator in logistics companies with a corporate identity and worldwide transportation operations. Besides, the “mixed access model strategy” is the most appropriate smart network strategy in logistics firms with corporate identity and worldwide transportation activities. Currently, it is possible to assume that logistics organizations prefer to profit from all smart network strategies in terms of cost optimization and competitiveness rather than from just one. The study, on the other hand, which is a road map that will help sustainability practices in the logistics sector due to green transportation, also examines the similarities and differences of green transportation practices in companies in the relevant sector and to what extent they can be reflected. As a result, the study provides a practical road map for selecting green transport indicators and a smart network strategy process for the logistics industry.

Originality/value

This study examined logistics companies with a corporate identity and international transportation activities in provinces in the Eastern Black Sea Region such as Ordu, Giresun, Trabzon, Rize, Artvin and Gümüshane. Novel picture fuzzy level based weight assessment (PF-LBWA) and picture fuzzy combined compromise solution (PF-CoCoSo) methods are developed to solve the decision-making problem.
