Abstract

Purpose

Important socioeconomic changes have been undergone due to the international economic crisis. In Catalonia (Spain), political changes towards independentism also occurred within the same period. The purpose of this paper is to explore the consumers’ wine preferences in Catalonia in two different scenarios. In particular, the authors have focussed the interest in those preferences regarding the regional origin of the wine.

Design/methodology/approach

Data were elicited from two identical discrete choice experiments performed in two times: before (2008) and during the economic crisis (2010) in Catalonia, Spain.

Findings

The results imply that the external common circumstances may have had a homogenising influence in consumer choices by decreasing the level of randomness of consumers’ selection. Consumers’ preferences for a Catalan origin were enhanced during the crisis, while price became the most important attribute.

Research limitations/implications

Ideally, the participants involved in both experiments would have been the same. Unfortunately, this was not possible to maintain and it is one of the limitations of this study. The authors are also aware that other non-controlled variables may have also played a role and the conclusions that are driven should be taken carefully.

Originality/value

This paper contributes to the literature of the discrete choice modelling using the recently developed Generalized Multinomial Logit Model. To the knowledge this is the first application in the literature of wine preferences to measure the impact of the contextual changes (economic and political) in Catalonia (Spain).

Abstract

Purpose

The development of the short food supply chain (SFSC) is one of the issues of the current agri-food systems. Consumers are re-connecting the food they eat with the farming process and are increasingly asking for fresh, seasonal and traceable food products from known producer source. The purpose of this paper is to analyse consumers’ opinions towards the SFSC and willingness to pay (WTP) for local honeys in Mar del Plata, Argentina before and after a hedonic evaluation test.

Design/methodology/approach

In an incentive compatible approach, using real purchasing scenarios, two non-hypothetical discrete choice experiments were applied, accounting for the impact of the SFSC understanding and hedonic evaluation on consumers’ WTP.

Findings

Results showed that consumers’ WTP, a premium for local honey products, is conditioned to specific quality cues and the global sensory acceptance. Consumers with high level of agreement with the social and environmental roles of the SFSC were more quality demanding and exhibited higher WTP towards the locally produced honeys. The development of local market by re-connecting producers and consumers, allowing for in-site tasting, has a strong implication for the structure of the honey added-value chain due to the potential role that may play in satisfying consumers’ preference and needs.

Originality/value

The authors measured consumers’ opinions towards the SFSC and analyse their impact on consumer WTP for honey product by including real purchasing scenarios and hedonic evaluation test, to reduce the hypothetical bias of the traditional surveys. Questionnaires were completed in a controlled laboratory environment for with real product and real money.

Abstract

Purpose

The purpose of this paper is to analyse the appropriateness of the analytical hierarchy process (AHP) to measure consumers’ acceptance and preference for eggs enriched with omega-3 (n-3) fatty acids as a health claim and to compare its results with the traditional nine-point hedonic scale.

Design/methodology/approach

The AHP was used as a multi-criteria decision analysis. Data were obtained from a face-to-face questionnaire completed by 122 consumers in a controlled environment in Cataluña (Spain).

Findings

Results showed the capacity of the AHP to analyse consumers’ acceptance and preferences. An agreement between the AHP and the nine-point scale was found showing that n-3 enriched eggs had lower flavour acceptance, conventional eggs had higher yolk colour acceptance, and conventional and the free-range eggs had similar and higher odour acceptance than the other egg types. The most important attributes that determine preferences for egg purchase were the type and the egg price followed by the origin and the egg size.

Research limitations/implications

The AHP approach seems to be a reliable tool to evaluate consumers’ hedonic preferences. However, further testing on other food products with larger sample size is needed.

Originality/value

The AHP methodology has been widely used in many fields in the last decades, but to the knowledge, not in the sensory field. In the Spanish market, studies that analyse consumers’ preferences and acceptance of eggs are scarce, and new insights are needed particularly regarding n-3 enriched eggs.

Abstract

Purpose

The purpose of this study is to analyse the impact of behavioural determinants, such as consumer attitude, subjective norm, behavioural control and sustainable buying behaviour, on organic food purchase behaviour in different EU countries.

Design/methodology/approach

A structured survey of more than 5000 individuals from Germany, Netherlands, Spain, Italy and Czech Republic was conducted to elicit consumer responses regarding behavioural determinants of organic food selection. Both a structural equation modelling approach and a multinomial logit model were employed to analyse the data.

Findings

Consumer attitudes, subjective norms and behavioural control were shown to significantly influence the frequency of organic food purchasing behaviour for the whole sample and to varying degrees across each of the countries. The effect of a sustainable buying behaviour was found to be more pronounced for Germany, Netherlands and Italy than for Czech Republic and Spain.

Research limitations/implications

Analysis is based on self-reported data on frequency of organic food purchases, which might be subject to recall bias. Overestimation may arise as consumers tend to report increased purchasing due to the “desirable” qualities of organic food. We tried to ensure that the translations bore similar meanings cross country although some miscomprehension by survey respondents was a possibility.

Practical implications

To stimulate consumer demand for organic products, it is important to design policies and interventions that take into account the impact of both behavioural factors and demographic attributes on consumer decision-making across various locations. For example, market analysts and policymakers may find it useful to exploit the impact of consumer attitude towards the qualities of organics to induce sales of such food in their locations.

Originality/value

This paper combines unique survey data from five EU countries using a common model to explore and compare consumer behavioural preferences for multiple organic food products. In addition to a classic triad of behavioural factors believed to influence organic food purchases, sustainable buying behaviour as a determinant of organic purchasing behaviour was included in the analysis.

Abstract

Purpose

This paper seeks to analyze consumer preferences toward fresh rabbit meat and obstacles and interest in consuming the product.

Design/methodology/approach

The paper uses the dual response choice experiment (DRCE) design which allows for analyzing forced and unforced options in choice experiments using the same sample. The heteroscedastic extreme‐value (HEV) model is used due to its relaxation of the restrictive assumption made in the multinomial logit model regarding the identically distributed error term across alternatives. The empirical analysis uses consumer‐level questionnaires to elicit information regarding consumer attitudes toward rabbit meat in Catalonia (Spain).

Findings

The results demonstrate a higher preference for rabbit meat from “Catalan” origin followed by higher quality certification information. Convenience and “ready‐to‐eat” products made from rabbit meat may help bolster increased consumption. An effective communication campaign is needed to educate individuals regarding the health characteristics of rabbit compared to other types of meat. Furthermore, results demonstrate that the ordering of attributes is not significantly different from forced and non‐forced choices obtained from the DRCE design. However, significant differences on the magnitude of the preferences for some attributes' levels are found.

Research limitations/implications

From a methodological point‐of‐view, the study follows a similar design to the dual response choice experiments. However, the study is differentiated by asking consumers whether they are willing to buy the product. More emphasis is made on the purchasing context of the task leading consumers to focus more on their budget constraints by considering the price. The study uses the DRCE design as an alternative of the traditional single stage choice experiments. Owing to budgets constraint, the study could be improved by comparing results from both designs. At the empirical level, it would be interesting to extend the study to other geographical parts in Spain.

Social implications

The study can help policy makers in stimulating demand for rabbit meat. Rabbit meat farmers in Catalonia were forced to abandon their farms due to the lack of demand. Consumption has decreased dramatically. As recommended in the paper, high quality labelling of the meat, improving the carcass format and its presentation and the healthiest characteristic of the meat could be a good way to promote and stimulate demand.

Originality/value

From the empirical point‐of‐view, this study, to the authors' knowledge, is the first application of CE and CV to analyze consumers' preferences towards rabbit meat. Furthermore, it is the first paper that applies the HEV model in agro‐food economics and specifically towards rabbit meat.

Abstract

Purpose

This study aims to identify how Spanish consumers’ extrinsic preferences for food have evolved by examining the extant literature on food preferences in Spain, focusing on food-related attributes and food-related values.

Design/methodology/approach

This study is based on a synthetic review of the extant academic literature on Spanish consumer preferences for food-related attributes and food-related values from the mid-20th to the 21st century. This study uses key economic and social milestones that are most likely to influence food value chain actors to show how consumer preferences have evolved over the study period.

Findings

Spanish consumer food attribute preferences expanded as the food sector of the nation continued to grow, and value preferences showed a similar pattern from the mid-20th to the 21st century. The drivers of these preferences were trust, lifestyle, education (campaigns), sociodemographic factors and purchasing power.

Originality/value

Evaluating the extant literature’s contribution to consumer preferences for food-related attributes and values is important because it can aid in understanding the hierarchy and variety of consumers’ food preferences as well as the factors that drive these preferences. To the best of the authors’ knowledge, this study is the first to explore how Spanish consumer preferences evolved between the mid-20th and 21st centuries.
