Abstract

Purpose

To develop and validate the Expanded Mindful Eating Scale (EMES), an expanded mindful eating model created for the promotion of health and sustainability.

Design/methodology/approach

A cross-sectional study using self-administered questionnaire surveys on Ochanomizu Health Study (OHS) was conducted. The survey was provided to 1,388 female university students in Tokyo, Japan. Exploratory factor analysis (EFA), confirmatory factor analysis (CFA) and a partial correlation analysis were used to confirm construct and criterion validity. Internal consistency of the EMES was confirmed to calculate Cronbach's alpha.

Findings

The response rate was 38.7 % (n = 537). Mean BMI was 20.21 ± 2.12, and 18.8% of them were classified as “lean” (BMI < 18.5). The authors listed 25 items and obtained a final factor structure of five factors and 20 items, as a result of EFA. Through CFA, the authors obtained the following fit indices for a final model: GFI = 0.914, AGFI = 0.890, CFI = 0.870 and RMSEA = 0.061. The total EMES score was significantly correlated with BMI, mindfulness, body dissatisfaction, drive for thinness and life satisfaction (r = −0.138, −0.315, −0.339, −0.281 and 0.149, p < 0.01, respectively). Cronbach's alpha for all items in this scale was 0.687.

Practical implications

The authors suggest the possibility that practitioners and researchers of mindful eating that includes this new concept can use authors’ novel scale as an effective measurement tool.

Originality/value

The EMES, which can multidimensionally measure the concept of the expanded model of mindful eating was first developed in this study.

Abstract

Purpose

Visual estimation, an easy-to-perform technique, is commonly used in hospitals to assess dietary intake in patients. The authors performed a qualitative study where the authors interviewed nurses and dietitians about their perceptions of barriers to accurately measuring patients’ dietary intake in hospitals using the visual estimation method. The paper aims to discuss these issues.

Design/methodology/approach

Ten dietitians and ten clinical nurses responded to 30-minute individual interviews in Tokyo, Japan, in September 2014. Each interview was conducted using a common protocol of open-ended questions focusing on the challenges of the visual estimation method and barriers to accurately measuring patients’ dietary intake as part of their routine work. The tape-recorded interviews were transcribed and analyzed based on grounded theory.

Findings

Five main categories emerged: hospitals, meals, colleagues, raters, and patients. Various individual barriers such as skill, attitude, knowledge, and others that had not been considered in previous studies also emerged. External barriers that were out of the raters’ control, such as shortage of time, human resources, financial ability, and others, emerged from the “hospitals” category.

Research limitations/implications

Research participants were all females and many of them had less than ten years of experience.

Practical implications

In addition to standardizing the visual estimation process, medical staff need to overcome various other internal and external barriers to accurate measurements.

Originality/value

This is the first study to articulate some important barriers that influence reliability and validity when measuring patients’ dietary intake by visual estimation methods in typical clinical settings.

Abstract

Purpose

The purpose of this study is to analyze the preferences of potential Japanese cruise ship tourists and identify the factors influencing their participation in cruise ship tourism. In the analysis, preference for cruise ports in East Asia is also examined.

Design/methodology/approach

The behavioral model of potential cruiser is developed through a mixed ordered logit approach. The data are collected by means of the stated preference method with the application of a Web-based questionnaire. Multiple answers are collected from each respondent. Hence, panel effects between answers are considered so as to obtain a robust model.

Findings

The results show that Nagasaki and Hong Kong ports are preferred, and other domestic ports, namely, Kobe, Kagoshima, and Naha are also relatively popular places to visit. However, potential Japanese cruisers are reluctant to visit two South Korean destinations which are frequently selected as cruise lines by avoiding Cabotage rule. Besides, shorter cruise duration and lower prices increase the possibility of participation in cruise tourism, particularly for working people. Retirees tend to have less interest in cruise tourism. However, Japanese-related services will increase retirees’ intentions to participate in cruise tourism.

Research limitations/implications

This study attempts to analyze potential cruisers’ behavior toward cruise ship tourism in Japan and discusses how to increase the number of cruisers participating in cruise ship tourism. In this vein, repeat behavior should also be analyzed. Repeat behavior contributes to the maintenance and increase in cruisers in Japan.

Originality/value

There is no study on potential cruiser’s behavior analysis in Japan which is the emerging country as cruise market. Thus, the number of potential cruisers is expected to be high. This study reveals that potential cruisers’ preferences on cruise ship services (e.g. duration, price, on board services, etc.), which are separately analysed for working ages and retirees. Besides, preferences on port of calls in East Asian context are revealed. These results are useful for cruise ship industries, especially for cruise lines.

Abstract

Purpose

In the maritime industry, it is vital to have a reliable forecast of container shipping demand. Although indicators of economic conditions have been used in modeling container shipping demand on major routes such as those from East Asia to the USA, the duration of such indicators’ effects on container movement demand have not been systematically examined. To bridge this gap in research, this study aims to identify the important US economic indicators that significantly affect the volume of container movements and empirically reveal the duration of such impacts.

Design/methodology/approach

The durability of economic indicators on container movements is identified by a vector autoregression (VAR) model using monthly-based time-series data. In the VAR model, this paper can analyze the effect of economic indicators at t-k on container movement at time t. In the model, this paper considers nine US economic indicators as explanatory variables that are likely to affect container movements. Time-series data are used for 228 months from January 2001 to December 2019.

Findings

In the mainland China route, “building permission” receives high impact and has a duration of 14 months, reflecting the fact that China exports a high volume of housing-related goods to the USA. Regarding the South Korea and Japan routes, where high volumes of machinery goods are exported to the USA, the “index of industrial production” receives a high impact with 11 and 13 months’ duration, respectively. On the Taiwan route, as several types of goods are transported with significant shares, “building permits” and “index of industrial production” have important effects.

Originality/value

Freight demand forecasting for bulk cargo is a popular research field because of the public availability of several time-series data. However, no study to date has measured the impact and durability of economic indicators on container movement. To bridge the gap in the literature in terms of the impact of economic indicators and their durability, this paper developed a time-series model of the container movement from East Asia to the USA.

Abstract

Purpose

The purpose of this paper is to provide a historical account of the significant role that Connecticut businesses and business leaders had in the spread of Lean management throughout the USA. The paper aims to describe what happens when managers do not understand and apply an important principle of Lean management.

Design/methodology/approach

Survey of published and unpublished records, as well as personal communications with key figures.

Findings

Establishes the role and importance of Connecticut businesses and business leaders in the discovery and dissemination of Lean management in America since 1979, external to Toyota and its affiliated suppliers.

Research limitations/implications

The accuracy of some past events necessarily relies on the recollection of key figures that were obtained by personal communications.

Practical implications

Describes how an important principle, “respect for people,” was not understood by most management practitioners, thus hindering efforts to correctly practice Lean management and improve business performance.

Originality/value

The paper provides a historical account of Lean management in America, focusing on activities that occurred in the State of Connecticut post‐1979. Description and relevance of a key area of misunderstanding among practitioners of the Lean management system.

Abstract

Purpose

This study aims to examine management attitude and awareness towards green logistics, explores the external conditions that drive and restrict its positive behaviour, investigates the level of its adoption amongst logistics service providers (LSPs) and determines the major barriers affecting its application in the industry.

Design/methodology/approach

This research investigates the key decision-making process on green logistics attitude and behaviour through in-depth interviews and thematic analysis.

Findings

This study explores both institutional and individual-level attitudes/awareness. Then, the driving and restraining forces and the challenges that influence the industry’s adoption of green initiatives are determined. Finally, this study constructs a framework following a behavioural driving route with interactions among green “attitude”, sustainable “subjective norms”, “behavioural control” and “external context” factors.

Practical implications

Findings can enlighten the practitioners who are struggling to adopt the green or low-carbon practice and provide valuable insights and constructive advice to LSPs and their stakeholders.

Social implications

Findings can draw the government and policy-makers’ attention to provide necessary financial or non-financial support for the practitioners to improve their green operations.

Originality/value

To the best of the authors’ knowledge, this study is one of the first attempts to adopt the hybrid theoretical lens on the green behaviour of the logistics industry. New insights are added to existing environmental management literature with a wider understanding and deeper investigation of the decision-making on green logistics in the industry. The theoretical framework in this study can offer future applications to a relevant large-scale study.
