Abstract
Purpose
Recently, several regional protected geographical indications (PGI) have been introduced in Italy for extra virgin olive oil (EVOO) with the aim of coping with the substantial failure of protected designations of origin (PDO). This study aims to identify which characteristics consumers expect, in order to anticipate the market success.
Design/methodology/approach
In this study, a survey has been used on a sample of consumers from Sicily, one of the first regions which recently developed a regional PGI for EVOO. Data have been analyzed with a rank-ordered logit model.
Findings
Results yielded that consumers would accept this new product and their expectations correspond to a product with attributes such as: green color, not filtered, not with a sweet taste and with a known brand. A possible target can be represented by young men.
Practical implications
The results obtained anticipate whether this product would be accepted and provides direct indications for producers who wish to enter the market with a PGI EVOO.
Originality/value
This work focuses on consumer behavior toward products that are specifically certified with a recently introduced PGI label, and they still are not so common on the market.

Abstract
Purpose
This study aims to investigate consumer acceptance for a set of innovations that can be applied to the production process of extra-virgin olive oil. The final purpose is to verify whether, and to what extent, consumer acceptance of innovations varies depending on the type of technology used and the profile of consumers.
Design/methodology/approach
A cross-sectional consumer survey has been carried out in Italy. A structured questionnaire was administered to a national representative sample of individuals who are responsible for grocery shopping (N = 1,003). Consumer acceptance for a set of ten innovations has been measured. Statistical differences between the various measures have been analysed through pairwise comparisons using Wilcoxon's signed-rank test, and subsequent effect sizes have been estimated. A cluster analysis has been also performed to distinguish consumer segments with different response patterns.
Findings
The results showed that the type of technology affects significantly the level of consumer acceptance of the tested innovations. In addition, high heterogeneity has been detected among consumer responses, and this leads to identify three consumer segments with different response patterns.
Originality/value
The study is focused on extra-virgin olive oil, which is one of the most important traditional food product in Mediterranean countries. This is the first study where several innovations for extra-virgin olive oil were jointly tested and compared for acceptance through a survey on a nation-wide representative sample of consumers.

Purpose
Cell-based meat is currently one of the most debated food sources of recent decades, as it involves cultivating animal-derived biological tissues in controlled environments. Opinions on this topic vary widely; some see this nutritional source as a strategy to address the sustainability challenges of the agri-food sector, while others perceive it as a potential negative impact on their culture and traditions. In this context, this study aimed to gather the opinions of Italian students engaged in animal production science studies to assess their viewpoints regarding socio-ethical, environmental, and economic dimensions since they represent the future generation of professionals and potential consumers.
Design/methodology/approach
In this study, the hybrid qualitative-quantitative method of Q-methodology was used. By leveraging the strengths of both qualitative and quantitative approaches, Q-methodology provides a systematic method for examining interviewees’ subjectivity by gathering individuals’ points of view into clusters of opinions referred to as factors.
Findings
The analysis of the results revealed the existence of four distinct factors within the analyzed student population, highlighting the different viewpoints among a group of individuals pursuing the same course of study.
Originality/value
The results may provide additional insights into the debate on this topic and offer valuable information for policymakers regarding the discussion on novel foods, particularly cell-based meat, which still lacks a regulatory framework at the European Union level.

Abstract
With this study we investigate the preferences of an important category of consumers of organic products (regular consumers of organic food or RCOFs) allowing for preference heterogeneity. A survey instrument was developed to elicit preferences for important qualitative and quantitative attributes of extra virgin olive oil. The survey was administered via questionnaire to a random sample of 198 RCOFs in organic food stores of Naples, Italy. The choice task was organised around a fractional factorial main effects orthogonal design. Each respondent made eight choices to rank‐order nine product profiles in terms of their individual preference. Product attributes included price, origin of production, type of certification and visual appearance. Interestingly, the set of observed responses appears to display significant preference heterogeneity for origin of production and price. Once heterogeneity and correlation among repeated choice by the same respondent are accounted for by means of random‐parameter panel logit models, the fit increases dramatically with respect to the more restrictive fixed‐parameter logit models. Results also suggest that price plays an important role as quality proxy, while visual appearance is not significant in preference modelling and the type of certification programme has a fixed effect.

Purpose
Investigating the drivers of consumers’ behaviour towards purchasing in short food supply chains (SFSCs) and clarifying their relationships, the purpose of this paper is to test the theory of planned behaviour (TPB) in order to predict the intention and the behaviour under investigation.
Design/methodology/approach
The research includes a literature review of SFSCs. To investigate all the variables (attitudes, subjective norms (SN), perceived behavioural control (PBC) and intention) underlying consumers’ behaviour towards buying in SFSCs, an exploratory survey with a TPB questionnaire and a principal component analysis have been carried out among university students in Italy. Using a system of simultaneous equations, the relationships among variables have been measured.
Findings
Findings illustrate that both attitudinal variables (i.e. sustainability, typicality and loyalty), SN and PBC play a key role in the consumers’ intention, that has a predictive effect on behaviour instead of PBC.
Originality/value
This paper fulfils the purpose to explain and predict post-modern consumers’ preferences towards SFSCs, in order to orient policy strategies to support SFSCs.

Purpose
Big pharma, which comprise the most important companies in the pharmaceutical sector, are ambidextrous organizations by nature. Big data can heavily influence this characteristic by simultaneously requiring adequate business process management. In fact, the impact of big data on business process management can assist big pharma in increasing process efficiency (which is related to the research and development pipeline) and process efficacy (related to product portfolio management). The purpose of this paper is to investigate this possibility and opportunity.
Design/methodology/approach
In the absence of specific scientific studies, as indicated by a review of the existing literature, the authors have adopted a grounded theory approach. This research has observed multiple cases (the 15 most important big pharma companies worldwide) through an electronic survey conducted on secondary data. The study has allowed the generation of a theoretical framework based on the (direct) relationship between knowledge process standardization (as the dependent variable) and big data (as the independent variable) in organizations oriented toward ambidexterity, such as big pharma in the specific scope of this research.
Findings
As big data utilization becomes widespread along the pipeline (or even along the value chain/supply chain), business process management increasingly uses (or tends to use) standardization, adopting process standardization as the main coordination mechanism to manage big knowledge. This theory is even more true when considering the moderating role of ambidexterity. An enterprise oriented toward structural ambidexterity (such as big pharma) that uses big data will require increased process standardization to manage big knowledge. Alternatively, an enterprise oriented toward contextual ambidexterity that uses big data will require increased output standardization.
Originality/value
Based on an analytical literature review, no research to date has focused strict attention on the influence that big data can have on business process management to improve the natural ambidexterity of big pharma. The main unique feature of this research relies on this point. The main value of the research originates from the theoretical framework reconstructed by grounded theory, which constitutes a powerful strategic tool to support executives and managers of big pharma in organizing business process management for their ambidextrous organizations using big data.

This paper aims to explore the intersection of artificial intelligence (AI) and marketing within the context of knowledge management (KM). It investigates how AI technologies facilitate data-driven decision-making, enhance business communication, improve customer personalization, optimize marketing campaigns and boost overall marketing effectiveness.
Design/methodology/approach
This study uses a quantitative and systematic approach, integrating citation analysis, text mining and co-citation analysis to examine foundational research areas and the evolution of AI in marketing. This comprehensive analysis addresses the current gap in empirical investigations of AI’s influence on marketing and its future developments.
Findings
This study identifies three main perspectives that have shaped the foundation of AI in marketing: proxy, tool and ensemble views. It develops a managerially relevant conceptual framework that outlines future research directions and expands the boundaries of AI and marketing literature within the KM landscape.
Originality/value
This research proposes a conceptual model that integrates AI and marketing within the KM context, offering new research trajectories. This study provides a holistic view of how AI can enhance knowledge sharing, strategic planning and decision-making in marketing.

Abstract
Purpose
The purpose of this study is to explore the role of continuous learning and the mitigation or elimination of knowledge barriers affecting information technology (IT) assimilation in the health-care sector. Most of the problems with IT assimilations stem from a poor understanding of the nature of suitable information, the lack of trust, cultural differences, the lack of appropriate training and hierarchical bureaucratic structures and procedures. To overcome these barriers, this study provides evidence that a continuous learning process can play a part in overcoming some of the obstacles to the assimilation of IT.
Design/methodology/approach
This study investigates how a continuous learning environment can counteract the presence of knowledge barriers, and, along with such an environment, can, in turn, facilitate IT assimilation. The study uses ADANCO 2.0.1 Professional for Windows and involves the collection and analysis of data provided by 210 health-care end users.
Findings
The study provides evidence in support of the proposition that continuous learning may facilitate the assimilation of IT by health-care end users through the mitigation of knowledge barriers (e.g. lack of trust or resistance to change). The mitigation of these barriers requires the gathering and utilization of new knowledge and knowledge structures. The results support the hypothesis that one way in which this can be achieved is through continuous learning (i.e. through assessing the situation, consulting experts, seeking feedback and tracking progress).
Research limitations/implications
A limitation of the study is the relatively simple statistical method that has been used for the analysis. However, the results provided here will serve as a preliminary basis for more sophisticated analysis which is currently underway.
Practical implications
The study provides useful insights into ways of using continuous learning to facilitate IT assimilation by end users in the health-care domain. This can be of use to hospitals seeking to implement end user IT technologies and, in particular, telemedicine technologies. It can also be used to develop awareness of knowledge barriers and possible approaches to mitigate the effects of such barriers. Such an awareness can assist hospital staff in finding creative solutions for using technology tools. This potentially augments the ability of hospital staff to work with patients and carers, encouraging them to take initiative (make choices and solve problems relevant to them). This, in turn, allows hospitals to avoid negative and thus de-motivating experiences involving themselves and their end users (patients) and improving IT assimilation. This is liable to lead to improved morale and improved assimilation of IT by end users (patients).
Social implications
As ICT systems and services should entail participation of a wide range of users, developers and stakeholders, including medical doctors, nurses, social workers, patients and programmers and interaction designers, the study provides useful social implication for health management and people well-being.
Originality/value
The paper contributes to a better understanding of the nature and impacts of continuous learning. Although previous studies in the field of knowledge management have shown that knowledge management procedures and routines can provide support to IT assimilation, few studies, if any, have explored the relationship between continuous learning and IT assimilation with particular emphasis on knowledge barriers in the health-care domain.

Purpose
This study intends to analyze the relationship between the digital maturity of SMEs and intellectual capital, investigating the determining factors. Starting from the endowment in terms of intellectual capital and evaluating Management Style, Decision-Making Competences, and Business Network, a model is proposed aiming to provide a comprehensive measure of SMEs’ digital maturity and thus to improve understanding and, consequently, effectiveness. The empirical analysis allows assessing the validity and applicability of the suggested model, providing valuable insights for the improvement of digital strategy and competitiveness of SMEs in the Amalfi Coast Tourist District (Italy), with evident implications also for policymakers and the community.
Design/methodology/approach
A mixed-methods research strategy was utilized to confirm research hypotheses that were derived from literature review. The field study was organized into two separate phases: the first phase, which is qualitative, employed focus groups comprising key stakeholders (managers and entrepreneurs) from various companies within the Amalfi Coast Tourist District. This phase adhered to the principles of homogeneity (to facilitate deeper discussions) and heterogeneity (to allow for a broader range of viewpoints among participants). The insights gathered from these preliminary focus groups informed the subsequent quantitative phase. In this second phase, structured interviews were conducted using a questionnaire to probe the participants’ views on digital maturity. This analysis involved 94 companies, all part of the Amalfi Coast Tourist District, assessing their digitalization levels and highlighting key management attributes. Logistic regression was applied to quantitatively analyze the data, effectively assessing the impact of various independent variables (such as Management Style, Decision-Making Competencies and Business Network) on the dependent variable, digital maturity. Employing both qualitative and quantitative methods provides a thorough and nuanced understanding of the digital maturity landscape within the specified context.
Findings
The main results suggest the existence of a correlation between the analyzed variables and digital maturity. Innovation, indeed, increases by applying a data-driven leadership style. Intellectual capital (measured in its three components of human capital: decision-making competences; structural capital: management style; and relational capital: business network) influences digital maturity, although some of the variables used are not equally weighted.
Originality/value
The main contribution of this article is to provide an in-depth understanding of the company components that favor digital maturity, to support strategic choices oriented towards a conscious digital transition. The results enrich the existing literature on intellectual capital in terms of its contribution to the digitalization of organizations, which can be a critical success factor in the context of SMEs.

Purpose
The aim of this research is to elucidate the correlation between open innovation, digital strategies and networking in enhancing agricultural enterprises within the new perspective of Agrifood 5.0. As such, it contributes to making businesses more competitive, especially in the Italian agricultural sector, where small and medium-sized enterprises are highly fragmented. Numerous studies have asserted that the competitiveness of actors operating within a specific territory is closely linked to local identity and image enhancement. Agricultural organizations are undergoing a profound transformation, with technological assets emerging as catalysts for new synergies. Advanced technologies such as robotics, the Internet of Things (IoT) and automation (AI) are emerging as differentiating elements capable of further advancing the agricultural sector, transitioning it from Agrifood 4.0 to Agrifood 5.0. The empirical analysis of the research shows a positive correlation between a collaborative attitude and a propensity for innovation. Indeed, the data demonstrated that digital strategies and open innovation positively influence competitiveness in agricultural SMEs.
Design/methodology/approach
The methodology employed in this study is mixed, incorporating both qualitative and quantitative approaches. The quantitative aspect involves analysis of the dataset from the Italian Statistical Institute (ISTAT) through logistic regression, while the qualitative component entails analysis of semi-structured interviews conducted with a sample of 174 agricultural cooperatives in southern Italian regions (Campania). This approach allows for a comprehensive understanding of the research topic, capturing both numerical trends and nuanced insights from interviews.
Findings
After analyzing the data from the 7th General Census of Agriculture conducted by ISTAT, a clear understanding of the sector has emerged, revealing several potential research avenues. It is evident that innovation in the agricultural sector is often driven by the largest and best-capitalized production entities, primarily located in Italy. Conversely, smaller agricultural entities can benefit from networking as new technological assets act as catalysts for new synergies, innovation and competitiveness.
Practical implications
Enhancing the relational contribution within the network and humanizing a fragmented sector are crucial elements for promoting open innovation. Network structuring facilitates the transmission of managerial knowledge, contributing to an overall increase in the intellectual and relational capital of the agricultural sector. These factors, combined with open innovation, enhance the competitiveness of individual firms and elevate the brand of the entire sector, creating a conducive environment for transitioning toward Agrifood 5.0. This transition is characterized by increased interconnection, continuous innovation and overall prosperity. Specific studies on this topic are lacking in Italy, particularly in the southern regions. Therefore, this contribution focuses on investigating the Campania region.
Originality/value
The novelty of this study lies in its investigation of the relationship between agricultural enterprises and innovation in the context of enterprises networking strategies (i.e. associationism and/or cooperation), promoting competitiveness. The limitations of this study are related to the dimension of the sample selected and its relationship with other productive sectors.
