Abstract
Today’s challenging economic situation means that it is no longer sufficient for a new graduate to have knowledge of an academic subject; increasingly it is necessary for students to gain those skills which will enhance their prospects of employment. Employability skills include the following abilities: the retrieval and handling of information; communication and presentation; planning and problem solving; and social development and interaction. The University of Luton has established an initiative to ensure that each of its students engages with these skills and has embedded this within the academic curriculum for all disciplines. Central to the initiative has been the creation of detailed templates that describe the University’s expectations for each undergraduate level. The article describes the Luton initiative and includes some initial comments on its impact.

Abstract
Whilst reports linking diet and health have been available for a number of years, it is only in the last couple of years that the subject has received significant coverage in the popular media of TV, radio, magazines and newspapers. Today, however, hardly a week passes without such coverage. This media attention is paralleled by unprecedented use of nutritional themes in the marketing of foodstuffs. A wide variety of products are sold on the basis of claims that they are:

Abstract
The early 1990s will be a watershed for UK food legislation being significantly updated. Primary control measures will be in keeping with a food system primarily consisting of a highly industrialised food manufacturing industry. Legislation will also be applicable to the rest of the industry: farmers, retailers and caterers. Many secondary controls will follow legislation which will be designed to increase public protection from food‐borne illness.

Tesco introduced their own healthy eating campaign in January last year by launching a comprehensive scheme of nutrition labelling on their own label products and linking the food labelling with a number of free leaflets on all the important aspects of healthy eating of which the consumer may need to be informed. These leaflets are shown in the photograph below. Carey Dennis, chief home economist and associate director at Tesco sent us this report on their healthy eating campaign during 1985.

Abstract
Focuses on food safety, food quality and nutrition and the Ministry of Agriculture, Fisheries and Food′s (MAFF) responsibility to maintain a complete awareness of developments in order that standards may be maintained. Reviews MAFF priorities and strategy for the period 1992‐1994. The attention is placed on ensuring that food is safe to eat, with consumers protected from all avoidable risk. The research requirement is wide ranging and covers matters such as microbiological safety, chemical safety, nutrient content, adulteration and food authenticity. A major theme is the development of expertise in risk management and the need to be able to deal scientifically with emerging issues.
