Abstract

Purpose

This paper aims to report strategies towards a green campus project at Politecnico di Torino University, a 33,000-students Italian higher education institution (HEI), and estimate the avoided ecological footprint (EF) of different scenarios accounted for open spaces.

Design/methodology/approach

A consumption-based study has been developed to analyse the current EF of the main campus site. Data were collected from different departments and administrative units to identify the measure of the pressure exerted by the campus activities on the ecosystem. Then, possible scenarios were accounted for open spaces along five different design layers: energy, water, landscape, food and mobility. Acting on the spaces by means of biophilic design and user-driven design requires complex considerations on university’s anticipated future needs and a wide-ranging evaluation of the most appropriate pathways forward according to all university stakeholders, far beyond the mere accounting of avoided EF.

Findings

A reduction of the 21 per cent of the current EF can be achieved through the solutions envisaged in the green campus project along the open space layers. Moreover, universities have the opportunity to not only improve the sustainability of their facilities but also demonstrate how the built environment can be designed to benefit both the environment and the occupants.

Research limitations/implications

The acknowledgement of predicted behavioural change effects is a question left open to further researchers on methods and indicators for social impact accounting and reporting in truly sustainable university campuses.

Originality/value

This is the first research that estimates the EF of an Italian HEI. The research represents also an innovative approach integrating the EF reduction scenarios in the design process of the new masterplan of open spaces, trying to identify the connection between environmental impact reduction and improvement in users’ perception.

Abstract

Purpose

The purpose of this study was the development and the nutritional, physical-chemical and sensorial characterization of probiotic and synbiotic sorbets elaborated with jussara pulp (Euterpe edulis), Lactobacillus spp. and polydextrose.

Design/methodology/approach

Five formulations of jussara sorbets (one control, two probiotics and two synbiotics) were produced and evaluated according to their centesimal composition, pH, soluble solids, instrumental color, overrun, apparent density, sensory acceptability and purchase intent.

Findings

All sorbets exhibited low calorific value, with no difference between them (p =0.96). The synbiotic samples (S3 and S5) showed the higher carbohydrate (30.4 and 30.2 per cent) and crude fiber content (0.4 and 0.5 per cent). Regarding to sensory acceptance, the probiotic samples (S2 and S4) presented greater global acceptability (averages acceptance 6.4 and 6.6, respectively) while the polydextrose samples (S3 and S5) showed low values (5.9 for both samples), although this prebiotic was able to increase the overrun to values above 40 per cent.

Practical implications

The functional jussara sorbets are a promising possibility for diversification of the probiotic foods already offered. The combination of its probiotic, prebiotic and bioactive properties can provide technological improvement and superior nutritional quality, with good sensorial acceptance. Likewise, jussara pulp showed nutritional properties favorable to its application in the food industry, which can help preserve its endangered palm tree.

Originality/value

The probiotics and synbiotics jussara sorbets showed to be adequate as a lactose-free and low-calorie functional product, with high nutritional, commercial and ecological value. Also, it was possible to notice that while the addition of probiotics improved the sensorial acceptance of jussara sorbets, polydextrose raised the technological quality by increasing its overrun.

Abstract

Purpose

Additive manufacturing (AM) has been one of the most highlighted processes of the last few years. AM prints complex parts and items from 3D files regarding different materials, such as polymers. Moreover, there are different AM techniques available for polymers, such as selective laser sintering. In the SLS technology, polyamides 11 and 12 lead 88% of the market. These materials are high-cost and use an average of 50% of virgin material at each printing. It is possible to use lower rates of virgin material, but at least 30% is recommended. Low rates of virgin material decrease mechanical properties.

Design/methodology/approach

This study aims to evaluate the influence on the mechanical properties of the percentage of reused PA12 in parts manufactured by the SLS process. The specimens of PA12 were manufactured with a percentage of virgin/reused polymer of 50/50, 40/60, 30/70, 20/80 and 10/90. We considered three distinct printing directions to compare the mechanical properties of the specimens: horizontal, perpendicular and vertical.

Findings

The results showed that when the percentage of reused material increases, the tensile strength limit (TSL), flexural strength limit and Shore D hardness decrease. Another aspect visualized was the fragile behavior presented in the vertical specimens. In addition, DSC analysis indicated a 2% reduction of crystallinity. Scanning electron microscopy images revealed spherical voids and unfused particles of PA12 at the fracture of tensile test specimens. The material thermal history and unfused particles could decrease the material properties.

Originality/value

We observed that the mechanical properties, such as the TSL, flexural strength limit and hardness, decrease as the percentage of reused material increases. In addition, the process presented a printing-direction dependence, where the vertical direction presented as the more brittle between the ones used.

Abstract

Purpose

Although education for sustainable development (ESD) is a key tool in the transition to a more sustainable society, its integration in higher education remains scarce. One reason for this is that more evidence is needed about the effectiveness of ESD interventions. This study aims to address this gap in the literature by examining the immediate and long-term effects of an ESD intervention on university students’ pro-environmental knowledge, personal environmental norm and pro-environmental behaviors.

Design/methodology/approach

This study used a quasi-experimental design that examined to what extent participating in an ESD intervention influenced university students’ self-reported pro-environmentalism (i.e. experimental group), compared to those who did not participate in the ESD intervention (i.e. control group). The authors also examined the longitudinal effects of the ESD intervention by recording students’ pro-environmentalism (both in the experimental and control group) 1 year after the intervention.

Findings

The findings showed that participation in the ESD intervention enhanced students’ pro-environmental knowledge, personal environmental norms and pro-environmental behaviors relative to the no-participation control group. The positive effects of the ESD intervention remained 1 year after the program finished.

Originality/value

This work explores the effects that ESD interventions have on university students. Its findings provide evidence about the effectiveness of the intervention and, therefore, support the inclusion of ESD at higher educational levels.
