Abstract
Purpose
Although milk is considered a vital source of nutrition for the livelihood, as the beginning of civilization, its antioxidant potential is required to be improved. This paper aims to increase antioxidant activities in milk and soy milk (Glycine max L.) has been found as a good compatible source. Hence, the present work was planned to investigate the impact of blending of different proportions of soy milk with standardized milk (i.e. 50 per cent soy milk with 50 per cent standardized milk, 60 per cent soy milk with 40 per cent standardized milk, 70 per cent soy milk with 30 per cent standardized milk and 100 per cent standardized milk as control sample) on antioxidant properties and sensory attributes of the blends.
Design/methodology/approach
Antioxidant properties of the blends were determined in terms of 2,2-diphenyl-1-picrylhydrazyl, ferric reducing antioxidant power and total phenol content. Sensory evaluation was carried out using a nine-point hedonic scale based on four selected quality attributes (i.e. smell, taste, color and appearance and mouthfeel) and ranked for their quality traits by fuzzy modeling.
Findings
A blend containing 70 per cent soy milk with 30 per cent standardized milk showed the highest antioxidant activities as compared to control milk sample (p <0.05). Blend of 50 per cent soy milk with 50 per cent standardized milk was found most acceptable on the basis of sensory analysis and its antioxidant activities were also appreciable as compared to control milk sample (p <0.05). Smell, taste, color and appearance and mouthfeel influenced the acceptability of formulated milk samples in decreasing order of significance (p <0.05).
Originality/value
The present attempt has been made to formulate liquid milk by mixing standardized milk and soy milk, in which enhancement in the antioxidant activities of standardized milk and masking of off-flavor of soy milk is done. It is not done before and it may improve the nutritional and commercial value of the milk. Further, fuzzy modeling used for choosing appropriate blend in terms of sensory scores is also found as a novel approach.

Purpose
Pearl millet (Pennisetum glaucum) is a rich source of nutrients as compared to the major cultivated cereal crops. However, major factors which limit its utilization are the presence of anti-nutritional factors (phytate, tannins and polyphenols) which lower availability of minerals and poor keeping quality because of higher lipase activity. Therefore, this paper aims to focus on the impact of different processing methods on the nutrient composition and anti-nutritional components of pearl millet.
Design/methodology/approach
This is a literature review study from 1983 to 2017, focusing on studies related to pearl millet processing and their effectiveness in the enrichment of nutritional value through reduction of anti-nutritional compounds.
Findings
From the literature reviewed, pearl millet processing through various methods including milling, malting, fermentation, blanching and acid as well as heat treatments were found to be effective in achieving the higher mineral digestibility, retardation of off flavor, bitterness as well as rancidity problems found during storage of flour.
Originality/value
Through this review paper, possible processing methods and their impact on the nutrient and anti-nutrient profile of pearl millet are discussed after detailed studied of literature from journal articles and thesis.

Abstract
Purpose
In keeping with global developments rendering online shopping as an emerging trend among consumers, the present study extends the unified theory of use and acceptance of technology (UTAUT2) comprising the digital payment mode (DPM) as a new driver of online shopping and with the mediation of attitudes toward technology (ATTs) to gauge a better and deeper understanding of behavioral intention (BI).
Design/methodology/approach
This study used a survey instrument with snowball sampling from 600 consumers in northern India. Partial least squares structural equation modeling was used to find the association between drivers using UTUAT2, along with DPM and ATTs. The data were divided into a test group (20%) and validated through a training group (80%).
Findings
DPM was shown to be directly associated with BI. The mediation of ATTs was also validated through the model. The predictability of the model was 67.5% for the test group (20%) and 69.6% for the training group (80%). The results also indicated that facilitating conditions is a critical driver of BI.
Originality/value
This study enhances the understanding of the roles that DPM and ATTs play in BI during online shopping, suggesting that Indian managers need to adopt DPM as a support service to make online shopping a worthwhile experience.

Abstract
The Laplace and Fourier transforms have been employed to find the general solution to the fields equations in porous generalized thermoelastic medium subjected to thermomechanical boundary conditions permeated with various heat sources; in the transformed form. On the boundary surface, the distributed sources have been taken. To get the solution in the physical form, a numerical inversion technique has been used. The effect of continuous and moving heat sources with the thermomechanical boundary conditions; and the response of boundary sources (concentrated and continuous) with heat source varying with depth; on the normal stress component, change in volume fraction field and temperature distribution have been depicted graphically for a particular model. A particular case is also deduced from the present formulation.

Abstract
Purpose
The purpose of this study is to investigate offline retailers’ cryptocurrency adoption through the unified theory of acceptance and use of technology (UTAUT/2), technology acceptance model (TAM) and other related variables.
Design/methodology/approach
A mixed-method (QUANT-Qual) was employed. The study employed a quantitative approach (partial least squares-structural equation modeling) for Study 1 and a qualitative focus group discussion for Study 2. The qualitative segment enhances the comprehension and interpretation of outcomes derived from the quantitative analysis.
Findings
Study 1 identified six crucial factors in cryptocurrency adoption: trust, personal innovation, hedonic motivation, social influence, safety and a positive attitude. Perceived ease of use, price value and satisfaction were non-significant. Study 2 elaborates on the findings, and highlights the reasons for the insignificant factors.
Research limitations/implications
This research contributes to theoretical knowledge by empirically testing established technology acceptance theories like UTAUT/2 and TAM in the context of retail cryptocurrency adoption. It introduces previously unexplored factors, such as personal innovativeness, hedonic motivation and safety/reliability, enriching the theoretical landscape.
Practical implications
This study provides practical insights for cryptocurrency stakeholders, including government, regulators, consumers, businesses and the financial sector, regarding retailers' intentions to adopt cryptocurrencies in North Cyprus.
Social implications
This study can enhance understanding of factors facilitating cryptocurrency integration into mainstream retail, potentially reshaping traditional finance. Economically, adoption can boost financial inclusion, offering efficient transaction methods. This transition may disrupt existing economic models, drive payment technology innovation and change consumer behavior toward digital assets.
Originality/value
This study stands out by using a mixed-method approach to comprehensively examine cryptocurrency adoption by offline retailers, considering various factors and providing a holistic perspective, unlike previous research that often focused on specific user groups.
