Abstract
Purpose
Oxidative rancidity is a major problem in chicken meat because of its higher content of polyunsaturated fatty acids. Besides this, microbial contamination is also one of the major problems of chicken meat which leads to deterioration in quality during storage. Therefore, the purpose of this paper is to investigate anti-microbial and anti-oxidant effects of various blends of essential oils (EOs) on the quality of emulsion-based (ready-to-eat) chicken sausages.
Design/methodology/approach
Sausages were incorporated with optimum level of four different blends of EOs containing six different EOs (Clove oil, Holybasil oil, Thyme oil, Cassia oil, Ajowan oil and Beetel oil), namely, Blend-1 (0.25 per cent), Blend-2 (0.25 per cent), Blend-3 (0.25 per cent) and Blend-4 (0.125 per cent); vacuum packaged and stored at −18±1°C for 60 days. Duplicate samples were taken for each parameter, and three trials were conducted for each experiment, total being six observations (n=6) for consistency of the results.
Findings
Significant decrease (p<0.05) in pH of control products was observed at each interval of storage period; however, in case of treatment products, significant decrease (p<0.05) was noticed from day 30 onwards. Blend-2 was observed with significantly lower (p<0.05) thio-barbituric acid reacting substances followed by Blend-1. Significantly lower (p<0.05) total phenolics content was observed in Blend-4 products as compared to other treatments. Regarding DPPH activity, control products showed significant decrease (p<0.05); however, in case of treatment products, DPPH activity showed significant (p<0.05) decrease after day 15 of storage. Microbial count increased with progressive storage period; however, the counts were well below the permissible limit of frozen meat products. All the blend incorporated products received very good sensory scores in consistent manner.
Practical implications
The work under this study would be very useful for the meat processing industries dealing with the perishable meat products. Use of natural anti-oxidants will also restore faith towards the consumers who are becoming more health conscious day by day.

Abstract
Purpose
Flaxseed is considered as a source of functional ingredients because it contains alpha-linolenic acid and high amount of dietary fiber which provides potential health benefits. Therefore, this paper aims to evaluate the effect of flaxseed flour on the quality of mutton nuggets.
Design/methodology/approach
Mutton nuggets were incorporated with three different levels of hydrated flaxseed flour (1:1), namely, 4, 8 and 12 per cent to optimize the level of incorporation. Detailed profile analysis was carried out to study various physico-chemical parameters, texture profile analysis and color values in the product with optimum level and compared with control product.
Findings
There was no significant difference (p > 0.05) in sensory attributes of product with 4 and 8 per cent level of incorporation except for binding; however, significantly lower (p < 0.01) scores were observed for 12 per cent incorporation level. On the basis of sensory scores, 8 per cent level of incorporation was adjudged as optimum. Incorporation of flaxseed flour resulted in significantly lower (p < 0.01) moisture content, but higher (p < 0.01) fat and dietary fiber content. Texture profile analysis showed increased hardness of the product but resulted in decreased springiness and chewiness parameters. Incorporation of flaxseed flour significantly increased (p < 0.01) redness and yellowness of the product which improved overall acceptability.

Purpose
Reverse logistics has attracted many industries due to product recalls, enormous waste generation, competitive reasons, vast opportunity in the waste management market, and to get the maximum value out of waste recovery. Selection of the right implementation strategy is vital for reverse logistics to function efficiently. Therefore, this research aims to evaluate the criteria for selecting reverse logistics strategy and help to choose the preferred strategy for its implementation.
Design/methodology/approach
Three reverse logistics implementation strategies, namely, in-house, joint venture and outsourcing, are proposed. A novel hybrid fuzzy analytical hierarchy process (F-AHP) and fuzzy measurement of alternatives and ranking according to COmpromise Solution (F-MARCOS) based framework is developed to fulfil the research objective. A survey is performed on Indian manufacturing industry to demonstrate the applicability of the proposed framework.
Findings
The result shows that government policy and regulations, reverse logistics risks and reduced emission have prime importance for a manufacturing industry which needs to implement reverse logistics into its supply chain. Outsourcing is the preferred reverse logistics strategy followed by joint venture and in-house that a manufacturing firm in India can implement.
Research limitations/implications
The research results are based on the responses of the survey received. This research considers various industry sectors to test the applicability of the framework. However, for actual implementation, this survey must first be limited to a particular industry as the results will apply to that industrial sector only.
Practical implications
This developed framework simplifies the procedure of selecting the strategy when the industry needs to implement reverse logistics. For industries working with a smaller set of criteria, this framework is a powerful and dynamic approach for reducing and choosing the most pertinent one that helps accomplish their objectives of reverse logistics implementation strategy selection.
Originality/value
Based on the literature and current applicability of reverse logistics, this research proposes three models to implement reverse logistics in Indian industries. A novel hybrid F-AHP and F-MARCOS based framework is developed to handle the selection of suitable reverse logistics strategy.

Abstract
Purpose
The purpose of this study is to evaluate empirically the perceptions of the stakeholder regarding their relevance based on their perceived preference in terms of climate strategy proactivity (CSP) which is an outcome of the importance and influence of the category of the stakeholders of Indian companies. Revolutionized by the liberalization–privatization–globalization, the practices and strategies of the companies in the developing country such as India have been marked by dynamic changes in the several past decades. In these circumstances, it has become imperative to understand the relevance of the stakeholders in terms of CSP displayed by these companies to seek help in developing appropriate strategies in the emerging competitive market.
Design/methodology/approach
This paper used a research design comprising descriptive analytical method using non-probability purposive sampling method to collect data from a sampled 701 respondents representing eleven categories stakeholders, with the help of a cross-sectional, self-administered online survey questionnaire.
Findings
The findings of the study detail the evaluation of the stakeholders relevance based on their perceived preference in terms of CSP attaching significance to the stakeholders’ perception as a useful tool. While the findings hint at the incessant growth of stakeholder awareness urging corporations to analyze effects and adopt appropriate strategies in developing countries, they also evaluate empirically the perceptions of the stakeholder regarding their relevance based on their perceived preference in terms of CSP which is an outcome of the importance and influence enjoyed by the category of the stakeholders of Indian companies. The findings confirmed the adequate level of awareness of the stakeholders of Indian companies responsible for making them adopt CSP.
Research limitations/implications
This study had the limitations such as collection of information through a self-reported questionnaire which might have the impact of self-bias despite all the preventive and corrective measures, and the risk of creation of a subjective viewpoint due to the assessment of the perceptions of varied stakeholders. Nonetheless, meeting the objective of this study, the study succeeds in providing a stakeholder perspective to the existing body of knowledge with respect to CSP, a stakeholders-centric concept which is in infancy in the context of developing countries and their corporations.
Originality/value
The paper is original as it adds value by providing empirical evidence from the perspective of different stakeholders, including but not limited to managers or shareholders only, like majority of previous studies. By doing so, it successfully attempts to contextualize them indicating the need to unlock huge potentialities and substantial significance for other developing countries.

Purpose
Re-use of products in the supply chain has become a significant consideration in the last decade. It has resulted in the development of several product recovery alternatives. Remanufacturing in the supply chain is one such product recovery option that yields social, economic and environmental benefits. This study aims is to identify and evaluate the key performance indicators (KPIs) of the remanufacturing supply chain (RSC).
Design/methodology/approach
The KPIs of RSC are classified along with the five primary management processes (plan, source, make, deliver and return) of the supply chain operations reference (SCOR) model. A grey decision-making trial and evaluation laboratory (DEMATEL) technique is applied to investigate the complex interrelationships amongst the identified KPIs and categorize them into cause and effect group. The applicability of the proposed framework is demonstrated through a case organization involved in remanufacturing business.
Findings
The KPIs are identified based on literature analysis and subsequent discussion with decision panel experts. The present research work results reveal that “consumer awareness program”, “technological compatibility” and skilled workforce' are the most influential indicators.
Originality/value
This research work provides a framework to evaluate the causal relationship between the RSC KPIs. The framework proposed in this study is empirically applied to a case organization. Based on the study findings some important recommendations are presented to the decision-makers/policy planners to help them develop an action plan. This would help the case organization reduce resource consumption, increase market share and enable sustainable development.

Purpose
The purpose of this paper is to develop the balance score card (BSC) approach based Lean Six Sigma (LSS) performance measurement system and investigate the critical measures currently practiced by Indian manufacturing organizations.
Design/methodology/approach
This study offers insights of LSS performance measurement from manufacturing industry. Initially, the BSC-based framework is developed to recognize the adoption of LSS performance measures. Then, the framework is applied to nine Indian manufacturing organizations to assess the LSS performance measure practice.
Findings
The BSC-based framework of LSS performance evaluation for manufacturing industry is formulated. Then, adoption of these LSS performance measures is investigated with nine Indian manufacturing organizations. The result indicates significant variability in terms of practicing level of LSS measures. However, the majority of organizations are more sensitive to the customer perspectives.
Practical implications
This study reveals a background as to why the performance measurement is required for the success of LSS and for providing practical guidelines for designing performance metrics. The framework interrelates and captures various LSS perspectives and indicator measures, and furnishes a comprehensive outlook of the organization for strategic analysis. This study provides BSC-based template for performing the benchmarking study. This analysis may serve as a reference point for manufacturing organization to determine their system weaknesses, and assist them to concentrate on their most vital and suitable criteria and objectives. However, the analysis contributes to the knowledge on LSS performance measurement system and catches differences in theory and practice, paving the approach to newer research.
Originality/value
This study renders an industry-oriented LSS performance measurement practical approach and suggests the easily adopted vital performance measures for different manufacturing organizations.

Outsourcing has become a strategic decision for most of the organizations in the present context of globalization and circular economy. The objective of proposed study is to empirically investigate the relationship between the outsourcing benefits and triple bottom line (TBL)-based performance of reverse supply chain (RSC) comprising of economic, environmental and social factors.
Design/methodology/approach
In the present study, the partial least square path approach of structural equation modeling has been applied for testing hypotheses. A questionnaire was developed for collecting the information and responses from the experts of electronics industry, India. Measurement models were tested for ensuring the fitness of data for further applying partial least square path approach of SEM.
Findings
The results provide insightful information on outsourcing and RSC performance. It reveals that outsourcing decisions are important and have great influence on the economic, environmental and social performance of RSC.
Research limitations/implications
The study will provide useful guidance to the organizations for outsourcing decisions. One of the limitations of the study is that it has considered data collected from the Indian electronics industry. Therefore, results may not be generalized.
Originality/value
The third-party service providers have core competencies, and they are the experts of providing RSC services. It is also apparent from the exploration of past research and theoretical background that there are limited number of studies focusing on the impact of outsourcing decisions in RSC performance specifically from the TBL perspective. Hence, the proposed study is an effort to explore the impact of outsourcing RSC activities on the performance of RSC from a sustainability perspective.

Purpose
The purpose of this paper is to differentiate the empowering influences of critical enablers of supply chain management (SCM) along with their interrelationships. These empowering enablers are significant, as they encourage productive execution to improve organizational performance and stakeholder's satisfaction.
Design/methodology/approach
From the literature review, incidence of a number of SCM enablers were found and they were subjected to critical scrutiny by a considerable number of experts engaged in SCM research and application to identify significant and applicable empowering enablers by grounded interactions. By using Impact Matrix Cross-Reference Multiplication Applied to a Classification analysis, the driving and dependence power were analyzed and the empowering enablers were ordered. This was pursued by building up a structural model of the empowering enablers using interpretive structure modeling, followed with measuring cause–effect relationship using decision-making trial and evaluation laboratory (DEMATEL).
Findings
Among these identified enablers of SCM, operational performance, green SCM, employee empowerment and motivation and strategic association came out to be strategic enablers.
Research limitations/implications
The findings may help the practicing professionals to develop clarity in understanding of these essential enablers and their contextual as well as cause–effect relationship in SCM. The practicing professionals need to focus on all these enablers during implementation of SCM for enhancing the organizational performance and stake holders' satisfaction.
Originality/value
This study is of practical utility in real-life implementation of SCM. The algorithm used in applying the multi-criteria decision-making approach is very user-friendly, and the application of DEMATEL is an innovation compared to previous research. Further, the findings can be used as a benchmark for improving the performance of SCM by considering the cause–effect relationship.

Purpose
The purpose of this paper is to examine Philip B. Crosby’s 14 quality principles and analyze the interaction between them. Hitherto no research has been published on the implementation of total quality management (TQM) using Crosby’s 14 principles. To fill this gap, interpretive structural modeling (ISM) and Matrix Impact Cross-Reference Multiplication Applied to a Classification (MICMAC) analysis have been designed to prioritize, sequence and categorize variables to find both the dependence and driving power of these variables.
Design/methodology/approach
At the initial stage experts from industry as well as from academia were contacted to provide an input for ISM methodology and examine interactions between identified variables. In this approach, interpretations of the interrelationships among variables have been discussed, whereas MICMAC analysis is used to discover dependence and driving power.
Findings
The results of the investigation revealed that “Management Commitment,” “Quality Improvement Team,” “Quality Awareness,” “Supervisor Training,” “Goal Setting” and “Cost of Quality Evaluation” are strategic requirements; “Corrective Action,” “Zero Defects Day” and “Error Cause Removal” are tactical requirements. “Recognition,” “Quality Measurement,” “Quality Councils” and “Do It Over Again” are operational requirements for TQM applications.
Originality/value
ISM is used as a part of this research to provide valuable insights into interrelationships among Crosby’s quality principles through a systematic framework. The research opens up a new focus area on the implementation of TQM for services as well as for the manufacturing industry.

Purpose
The purpose of this study is to analyze sustainability issues in the context of logistics service providers (LSPs) and to evaluate the sustainability index of an LSP in the Indian scenario.
Design/methodology/approach
The case study method is used to understand the sustainability issues of an Indian LSP. The situation–actor–process (SAP) and learning–action–performance (LAP) framework has been applied to critically examine the sustainability issues of the case organization. The information about the case study is collected from both primary and secondary sources, and a detailed analysis of different sustainability issues in the context of an Indian case has been done. The sustainability index for the case organization has been also evaluated.
Findings
It can be observed from the in-depth case analysis that LSPs have started making use of green practices for long-term sustainability, but adoption is very slow in developing countries such as India. Based on SAP-LAP analysis of an Indian LSP, suitable actions are recommended for improving the performance of LSPs.
Practical implications
Adoption of sustainable practices by LSPs can lead to sustainable performance. Sustainability index can assist LSPs to benchmark their sustainability performance to meet the market requirements.
Originality/value
The novelty of this study is to analyze the issues related to implementation of sustainable practices in an Indian LSP through SAP-LAP framework. It also illustrates the evaluation of sustainability index.
