Abstract

Purpose

The purpose of this paper is to investigate the role of perceived food quality and consumer ethnocentrism and potential trade-offs between these two concepts in Russian consumers’ food purchase decisions after the implementation of the Russian import ban.

Design/methodology/approach

Survey data were collected via in-person interviews in the City of Perm, which is one of the largest and most industrial cities in Russia. A double-bounded dichotomous-choice contingent valuation model is utilized to estimate willingness to pay (WTP) and to analyze factors that affect consumers’ choice.

Findings

The results suggest that most respondents do not consider domestically produced cheese as a risky product in terms of food safety but simply of lower quality than imported cheese. However, the average respondent’s WTP discount for domestic cheese compared to imported cheese is 8 percent, which is relatively small. This corresponds to participants’ opinion that buying domestic cheese is the right thing to do since it supports Russian farmers and producers. The results indicate further that with increasing education and income levels, individuals are less likely to prefer domestically produced cheese for either economic or quality reasons. This effect is stronger for the quality preference.

Research limitations/implications

The results indicate that if the Russian government aims at expanding the domestic food market further, more attention needs to be paid to ensuring the quality of domestic food products in order to increase consumer acceptance and WTP.

Originality/value

This is the first study providing empirical evidence on Russian consumers’ attitudes and perceptions of domestically vs imported food products after the implementation of the Russian import ban, which can be considered as an external policy shock.

Abstract

Purpose

With a growing world population and climate crises, edible insects are a promising alternative to conventional livestock. However, Western consumers are largely opposed to eating insects. The aim of this study is to investigate the acceptance of insects in a German sample with a specific focus on risk–benefit perceptions and risk preferences.

Design/methodology/approach

Data were collected via an online survey (N = 569). Established scales for food neophobia (FN), risk perception, risk preference and acceptance were used. The statistical analyses included mean comparisons regarding acceptance and risk–benefit perceptions of unprocessed and processed insects. We further examined the role of perceived benefits and risks as well as risk preferences as determinants of acceptance via hierarchical multiple regressions.

Findings

Respondents indicated lower perceived risks, and higher perceived benefits and thus higher acceptance for processed insect products as compared to whole insects. Risk perception was the strongest predictor of acceptance of unprocessed as well as processed insect food. Respondents who reported to have already eaten insects before exhibited higher risk preferences than those who had not.

Originality/value

This study specifically considered the role of risk preferences, which has been so far largely overlooked in consumer research on insect foods. The findings indicate that acceptance of insect food is mainly driven by risk perception rather than individual risk preferences. However, risk preferences should not be totally overlooked as they seem to play a role especially for unprocessed insects and the decision to try insects for the first time.

Abstract

Purpose

Food-related innovations might contribute to a qualitative leap in the transition to sustainable food systems. In this article, the authors map the existing literature on food and innovation in order to identify and systematise major research streams and relate them to current discussions on sustainability. The authors rely on a broad definition of innovation covering specific technological innovations as well as social, environmental and system innovations.

Design/methodology/approach

The authors analysed the relationship between innovation and food through bibliometric and content analysis, augmented with visualisation based on data (N = 7,987) extracted from the Web of Science. The published volume, research areas and influential journals were investigated using descriptive analyses.

Findings

This review categorises the literature on innovation and food into six main clusters, showing that most of the studies are carried out at the macro-level related to the global sustainable food systems. Network visualisation allowed them to distribute recent keywords associated with innovation across the agri-food value chain. Moreover, the authors identified environmental, social and economic pillars of innovation, which not only relate to sustainability but also are associated with open innovation as well as social innovation and eco-innovation.

Originality/value

This bibliometric analysis is amongst the first to examine the holistic knowledge structure surrounding a triple concept of innovation, food and sustainability. In addition, the study identifies research gaps and indicates new research directions, which add further value.

Abstract

Purpose

This study analyses consumers’ perception of meat quality and safety in Afghanistan at the pre-harvest, harvest and post-harvest stages.

Design/methodology/approach

Qualitative data were collected through seven focus group discussions with 52 participants in Kabul and Bamyan, Afghanistan, between September and December 2020. A qualitative content analysis was undertaken using the Total Food Quality Model and the MAXQDA software.

Findings

At the pre-harvest stage, both sedentary and nomadic ruminants’ meat was perceived as high in quality and safety, with lower food safety hazards, unlike urban-raised ruminants’ meat. At the harvest stage, supermarket meat was perceived as better in hygiene, but not in freshness. Additionally, there were doubts about the Halal-slaughtering of this meat. Conversely, butchery meat was perceived as fresh, natural and trustworthy, but unhygienic. At the post-harvest stage, the most important quality attributes before purchase were color, freshness, place-of-origin, safety and Halal-slaughtering, and after purchase were taste and tenderness. Lack of consumer trust was also noticed for the formal institution, i.e. supermarket meat.

Research limitations/implications

This study provides valuable new results from Afghanistan that could be transferred to other Islamic-developing countries given the similarities in their meat industry, i.e. availability of both formal and informal institutions, and the sensitivity of Muslim consumers to Halal-slaughtering. Nonetheless, the qualitative nature of the study design demands further research, employing, e.g. a quantitative approach. Future studies conducted in other countries with similar context could validate the results of this paper.

Originality/value

Knowledge on consumer behavior in Afghanistan is scarce. The present study is one among a few that provides empirical evidence on Afghan consumers. Additionally, it is the first study to compare consumers’ perceptions of traditional butchery meat and supermarket meat.

Abstract

Purpose

The present study addresses acceptance of in vitro meat (IVM) among a predominantly student sample in Germany. It is investigated to which extent food technology neophobia, the currently followed diet and information treatments impact acceptance of IVM measured via the construct willingness to buy (WTB).

Design/methodology/approach

A quantitative online-survey was conducted in August 2020 using a between-subject design with three different information treatments and one control group. Moreover, the Food Technology Neophobia (FTN) scale was employed, For the statistical analysis, the χ2 and Kruskal–Wallis test were used. Additionally, a binary logit model was specified and estimated in order to investigate the determinants of willingness to buy IVM accounting for the effects of gender, age, vegetarianism/veganism, FTN, prior knowledge, information treatments and potential interaction effects.

Findings

Participants following a vegan or vegetarian diet exhibit a lower likelihood of IVM acceptance in comparison to participants following an omnivore diet. However, a considerable share of vegan and vegetarian participants expressed a positive WTB. Moreover, an increasing FTN score (i.e. an increase in food technology neophobia) goes along with a reduced likelihood of acceptance, while all three information treatments increase acceptance in comparison to the control group. The largest effect on acceptance could be found for the environmental benefit treatment.

Practical implications

The findings show that especially among a young and highly educated sample the stressing of environmental benefits of IVM has a substantial impact on acceptance. This might be taken up in information and marketing campaigns once the product becomes available on the European market.

Originality/value

So far the empirical evidence on German consumers' acceptance of IVM is scarce. The present study addressed this research gap by focusing on a young sample with a high percentage of vegetarians and vegans and analyzing the role of food technology neophobia and different information treatments in a between-subject design.

Abstract

Purpose

Given the fact that local food as a tool to create value-added is a relatively new trend in Scandinavian countries with a strong emphasis on organic food, only limited – and mainly qualitative and case-based - empirical evidence on producers and processors involved in local food value chains (FVCs) has been available so far. Thus, the present paper contributes to the small but growing literature analyzing local FVCs by providing and analyzing quantitative survey data. More specifically, the authors aim at investigating (1) how agricultural producers and processors define and perceive local food, (2) which drivers are important for the decision to become involved in local FVC and (3) whether these drivers differ in a systematic way across producers and processors.

Design/methodology/approach

In order to address these research questions, empirical data from a quantitative stakeholder survey carried out in spring in 2017 is used. Data are analyzed via descriptive and inductive statistics including a cluster analysis.

Findings

The survey results concerning the definition and perceptions of local food are in line with previous studies showing that there is usually a strong emphasis on geographic proximity. Besides, local (organic) food producers and processors are diverse and heterogeneous with differing distribution and product differentiation strategies being implemented and pursued. In particular, businesses employing primarily a personified distribution strategy (e.g. direct sales via farmers markets) differ quite substantially from businesses employing mainly a standardized distribution strategy (e.g. via retail) in their economic characteristics. Moreover, differences in the perception of potential benefits of local food as well as in the underlying drivers to become part of local FVCs were detected across businesses with different distribution strategies.

Research limitations/implications

Although the employed data sample is considered adequate for analyzing heterogeneity in firms' business strategies, the sample is not representative for Denmark and cannot straight-forwardly be extrapolated to the population level.

Originality/value

One of the first quantitative study on producers' and processors' perceptions of local food and its interaction with organic farming. So far, there is a large literature on consumers' perceptions but empirical evidence for other stakeholders is scarce. Hence, the present study provides a complementary perspective on the topic of local food.

Abstract

Purpose

This paper's objective is to investigate consumers' and producers' expectations towards geographical indications (GIs) in a German context, where this certification scheme has not been widely used so far.

Design/methodology/approach

Data for the consumer side were obtained by a structured questionnaire. A total of 741 consumers were asked online with respect to their knowledge and expectations towards geographical indications in general and Hessian apple wine in particular. The collected data were analysed by an explorative factor analysis and a binary logit model. Additionally, data for the producer side were collected via an in‐depth interview with one major producer of Hessian apple wine.

Findings

The consumer side results indicate that Hessian consumers' awareness and knowledge about GIs is very limited. Moreover, it is found that the quality warranty dimension is not as important as the economic support dimension and perceived authenticity of the product. A hypothetical willingness to pay for protection is mainly driven by consumer perceptions and expectations towards the positive impacts of geographical indications on the local economy. The producer side results highlight that the most important motivation to apply for a protected G1 (PGI) is to secure the established reputation against misuse by competing producers in order to ensure the quality level of Hessian apple wine.

Practical implications

The findings indicate that a PGI is by no means a self‐runner. The positive impacts of this certification scheme have to be communicated to consumers in order to be successful.

Originality/value

Empirical evidence regarding consumers' knowledge and expectations towards geographical indications in a non‐Mediterranean context is limited. The present paper contributes to the existing literature by providing empirical evidence for a German case study.
