Shows how the Head Start programme has helped as a training guide for staff and parents on key elements of quality and quality services. Abstract
This chapter examines how opponents of same-sex marriage have used rights discourse to construct an identity of themselves as victims, and construct gays and lesbians as deviant “others.” I find that conservative rights discourse has been more effective outside the courtroom than in it. This is because these arguments rely on implicit discriminatory stereotypes which are frequently exposed under the scrutiny of dispassionate judicial actors. However, in a popular arena, they are free to operate with considerably less scrutiny. Here, rights discourse is used to mask discriminatory stereotypes and lend legitimacy to positions that would be rejected if made explicitly.

Abstract
Purpose
This study investigates how, in the context of organizational change initiatives, the adoption of empowering leadership can foster positive social exchange relationships between leaders and subordinates, in turn, neutralizing cynicism about organizational change (CAOC) and allowing follower championing behavior (FCB) to emerge.
Design/methodology/approach
The authors analyzed data from 908 faculty members from 11 top-rated public universities in Indonesia. The data used in this research are multisource, so the data processing steps are rwg and ICC tests, data quality testing, and hypothesis testing.
Findings
The authors found that CAOC among these members had a negative effect on their FCB, but this negative effect was buffered by the presence of empowering leadership.
Research limitations/implications
The authors' research captures perceptions at one point in time. Future research could adopt a longitudinal approach to simulate empowering leadership stimuli and investigate the impacts of FCB.
Practical implications
This study contributes to Indonesian business management, which exhibits a culture of high power distance. The findings suggest that managers should improve managers' interpersonal communication with subordinates and consider managers' feelings toward change in the organization so that managers' subordinates will provide feedback in the form of decreasing cynicism and will exhibit FCB.
Originality/value
This study contributes to the understanding of why CAOC may not be expressed explicitly in Asian countries due to Asian collectivist and high power-distance values that discourage subordinates from voicing their disagreement with change initiatives.

Abstract
In these times—aptly described as the age of dehydration—few food products appear to have aroused as much technical interest as has dried egg. Upon this point we have the criterion of the galaxy of papers and communications in the various trade and scientific journals. Admittedly, much of the interest is doubtless due to the painfully rare appearance of the goods in the form delivered by the hen. However, there is little doubt that some of the developments in our knowledge and usage of a convenient form of an otherwise highly perishable commodity may have wide repercussions in food‐preparation in the future, both in industry and in the household. It would appear that the attaining and maintaining of hygienic conditions in the dehydrating plants has received the attention it warrants. Naturally, unless reasonable care in the storage or usage of the finished product is exercised, conditions will occur under which rapid contamination with and multiplication of bacteria will occur. The intention of the Dried Egg (Control of Use) Order, 1945 (S.R. & O. No. 627), which forbids the use of dried egg in certain foods and in materials sold in the wet state, is to provide against such conditions. Of the desirable properties which a dehydrated product should possess, ease of reconstitution is one of the most important. In the bakery and allied trades the difficulty, or, more correctly, the variability, of solubility of various deliveries of dried egg has occasioned some complaint. It is interesting to note that, with a view to assisting wetting, and hence reconstitution, addition of surface‐active agents, either to the egg pulp before dehydration, or to the dried product, has been the subject of several patents. As regards keeping properties, dried egg offers no exception to the general rule that the rate of deterioration on storage decreases progressively with reduction in the moisture content. It is reported that a product containing as little as 2 per cent. of moisture is being manufactured in U.S.A. Apparently, the only satisfactory packing for such a highly‐dehydrated product is a sealed metal container. The deterioration of dried egg powder, with the production of the peculiar and characteristic off‐flavour, has been shown to be connected with a small amount of glucose originally present. This decreases during storage, and the development of unpalatability may be correlated with the amount of glucose remaining. At the same time, the solubility of the powder decreases, rendering reconstitution more difficult, and the whipping or beating properties, so vital in the making of cakes, become impaired. Initial removal of the glucose, such as De‐controlled fermentation, markedly improves the stability of the product; re‐addition of glucose to an egg pulp from which the natural carbohydrate has been removed yields on dehydration a powder showing the same effects of deterioration as ordinary dried egg. Addition of reducing monosaecharoses other than glucose has a similar effect. Recently‐published reports of work carried out at the Cambridge Low Temperature Research Station provide strong evidence that the reaction mechanism resulting in the loss in solubility of dried egg powder is a two‐stage process. In the first stage, which does not in itself result in a decrease in solubility, the reducing group of the glucose molecule condenses with the free amino groups of the protein components; a further reaction then occurs which causes the protein to become insoluble. It had been previously discovered that addition to the egg pulp before drying of a simple amino‐acid such as glycine or alanine retarded the loss of solubility, although other forms of deterioration, such as the darkening of the colour of the powder, were not inhibited. Presumably, the glucose reacts preferentially with the added amino‐acid, instead of attacking the egg‐proteins. Another method of overcoming the loss of solubility is by the addition of substantial amounts of sucrose (or lactose) to the egg pulp before drying. How the protective action operates does not appear to be known, and it is peculiar that lactose, itself a reducing sugar, does not cause loss in solubility in the same manner as glucose. The “sugar‐dried egg” obtained on dehydration is readily soluble, and, since it possesses all, or nearly all, of the aerating properties of fresh egg, is claimed to be as good as frozen egg, or even shell egg, for cake‐making. Allocations of sugar‐dried egg are now being made to the bakery trade, and, should no difficulty be encountered in large‐scale production, it is to be presumed that in due course its use will become much more general. In the form now being supplied, sugar‐dried egg has an egg solids to sugar ratio of 2 to 1, thus allowing existing trade recipes to be rebalanced without recourse to awkward calculations. When reconstituted, 3 pounds of liquid egg contain approximately 5 ounces of sugar; this high sugar content of course restricts the use of this product to food preparations of a sweet nature. The mixture aerates rapidly, and, since it possesses a good oven spring, underbeating rather than full development of the batter gives the most satisfactory result. Additionally, the use of sugar‐dried egg lowers the amount of baking powder required; in some mixes baking powder may be omitted altogether. Sponges and similar goods of superior texture, flavour and keeping qualities may thus be made. Obviously, developments in other forms of dried egg and allied products are to be expected. Thus the previously‐mentioned protective action of lactose suggests the preparation of dehydrated mixtures of egg and milk or milk products, and in fact interesting experiments have been carried out involving the use of whey powder as a protective agent.

Abstract
Work–family balance is important for working parents, their children, and their family functioning. However, little research has considered how one’s sense of work–family balance may influence parenting behavior. The purpose of this study is to investigate whether perceived work–family balance of fathers of infants predicts engagement behaviors and whether stress mediates this relationship. The sample (n = 64) completed a phone survey, and data analysis consisted of linear regression tests and path analysis models for mediation. Perceived work–family balance did not significantly predict overall father engagement, but did predict fathers telling stories to their infant more often (B = 0.91, t(55) = 2.22, p < 0.05) and dressing their infant more often (B = 0.70, t(55) = 2.05, p < 0.05). Although perceived work–family balance was found to have a significant negative effect on father stress (r = –0.48, p < 0.001), stress did not mediate the relationship between perceived work–family balance and the two engagement behaviors. Greater perceived work–family balance may encourage engagement in behaviors above and beyond the stereotypical fathering behaviors (e.g., playing) and basic caregiving behaviors (e.g., changing diapers). Limitations include a small sample size, cross-sectional nature of the data, and self-report measures. It is recommended future studies use longitudinal designs, larger samples that differ in family type, and include mothers. This study provides preliminary evidence that one’s perceived work–family balance may influence parenting behaviors; thus, workplace policies that increase work–family balance, through greater job flexibility, for example, could promote positive family outcomes and reduce stress.

Purpose
This study aims to examine internal and external factors as well as main obstacles to managers’/owners’ participation in education and training.
Design/methodology/approach
The sample comprises managers of 151 Bulgarian predominantly micro- and small-size enterprises. The data was gathered in 2020 through direct standardized interviews at the respondent’s workplace. This study uses quantitative estimation methods including binominal and multinominal logistic regression as well as nonparametric testing.
Findings
Regarding the findings in the relevant studies, the results confirm that the larger firm's size, the existence of human resource management strategy and practices as well as learning-oriented culture stimulate employer-financed management training. The lack of trainers with relevant need-specific expertise appears to be a major barrier. Additionally, the outputs highlight the role of other important determinants not being extensively discussed so far such as the level of development of the region in which the company operates, involvement in R&D and innovation activity as well as the issue of trust in trainer.
Practical implications
This study provides insights into (under)investments in continuing vocational training which might lead to practical implications for businesses, education and government policy in lifelong learning. Moreover, this study focuses on a country with one of the lowest participation rates in adult education across Europe which allows for a better understanding of similar examples.
Originality/value
To the best of the author’s knowledge, this is the first paper examining determinants of management training in Bulgaria and one of the few in the European context. It gives support to the existing literature but adds new findings as well.

Abstract
Purpose
This study aims to understand if and how European digital innovation hubs (DIHs) filling the role of knowledge brokers (KBs) can support the digital transformation (DX) of small and medium-sized enterprises (SMEs) by triggering open innovation (OI) practices.
Design/methodology/approach
After presenting a conceptual model of reference, a survey and a subsequent in-depth interview were conducted to capture evidence from Italian DIHs. These structures were selected for their growing importance, as confirmed by the National Plan for Industry 4.0.
Findings
The findings highlight that Italian DIHs act not only as KBs but also as knowledge sources that give rise to a digital imprinting process that is able to shape the DX of SMEs.
Originality/value
Research on knowledge sharing and OI has mainly focused on large firms. The study covers the gaps identified in the literature by considering the role of KBs in enabling SMEs to embrace DX.

Abstract
This paper examines several measures of poverty and hardship for the United States to illustrate how a single measure of poverty may identify different groups of people as “in need.” Individuals and families may encounter difficulty meeting needs on many dimensions and there are a variety of measures designed to identify those who experience poverty or difficulty making ends meet. In general, there is agreement that all of the approaches capture different pieces of the puzzle while no single indicator can yield a complete picture. To understand this multidimensional aspect of poverty, several measures are examined in this paper: the official U.S. poverty measure, a relative poverty measure, a new supplemental measure that follows recommendations of the U.S. National Academy of Sciences (NAS), an index of material hardship, a measure of household debt, and responses to a question about inability to meet expenses. This study uses the 2008 panel of the Survey of Income and Program Participation (SIPP) and updates a similar analysis that used the 1996 panel of SIPP (Short, 2005). The SIPP is a longitudinal survey that allows us to examine all of these various indicators for the same people over the period from 2009 to 2010. The study uses regression analysis to assess the relationship among several indicators of economic hardship. Results suggest that an understanding of relationships between various indicators can allow only one indicator of poverty alone to be interpreted more appropriately and used more wisely to target the needs of the disadvantaged.
