Abstract
Purpose
This study aims to determine the prevalence of selected health behaviors (smoking, diet, exercise and early cancer detection) and outcomes (obesity, cardiovascular fitness, type II diabetes mellitus and cancer) among Arab immigrants living in Colorado and evaluate the relationships between acculturation and health behaviors from a socio-ecological perspective.
Design/methodology/approach
This paper is a cross-sectional survey of 100 adult Arab immigrants living in Colorado.
Findings
The study showed that Arab immigrants in Colorado engage in healthy behaviors such as eating a healthy diet rich in fruits and vegetables (34 per cent), exercising (44 per cent) and seeking early cancer screening (35 per cent among women and 42 per cent among men). In comparison to the general population in Colorado, the study results showed that Arab immigrants were more likely to engage in moderate or vigorous exercise (p < 0.001, OR = 1.84) and consume the recommended daily amounts of fruits and vegetables (p = 0.05, OR = 1.56). The study revealed that culture plays an important role in shaping and affecting Arab immigrant health behaviors. Those who were more acculturated were more likely to be physically active and eat healthy.
Research/limitations/implications
The prevalence of overweight in the current sample was similar to the rate of overweight in other studies of Arab immigrants. This study’s findings about overweight signal a need for culturally sensitive health promotion interventions for Arab immigrants. The study limitations included the use of self-reported measures in the survey, the use of cross-sectional design and the use of a probability sample.
Originality/value
Understanding culturally relevant predictors of certain health behaviors, such as exercise and diet, can help health providers design health promotion interventions that focus on the individual and the environment to meet the health needs of Arab immigrants.

Abstract
Purpose
This study centers on high school pre-teacher education students’ reviews of their peers’ digital stories. The purpose of this study is twofold: to bring digital storytelling to the forefront as a literacy practice within classrooms that seeks to privilege students’ voices and experiences and also to encapsulate the authors’ different experiences and perspectives as teachers. The authors sought to understand how pre-teacher education candidates analyzed, understood and made meaning from their classmates’ digital stories using the seven elements of digital storytelling (Dreon et al., 2011).
Design/methodology/approach
Using grounded theory (Charmaz, 2008) as a framework, the question of how do high school pre-teacher education program candidates reflectively peer review their classmates’ digital stories is addressed and discussed through university and high school instructors’ narrative reflections. Through peer reviews of their fellow classmates’ digital stories, students were able to use the digital storytelling guide that included the seven elements of digital storytelling planning to critique and offer suggestions. The authors used the 2018–2019 and 2019–2020 cohorts’ digital stories, digital storytelling guides and peer reviews to discover emerging categories and themes and then made sense of these through narrative analysis. This study looks at students’ narratives through the contexts of peer reviews.
Findings
The seven elements of digital storytelling, as noted by Dreon et al. (2011, p. 5), which are point of view, dramatic question, emotional content, the gift of your voice, the power of the soundtrack, economy and pacing, were used as starting points for coding students’ responses in their evaluations of their peers’ digital stories. Situated on the premise of 21st century technologies as important promoters of differentiated ways of teaching and learning that are highly interactive (Greenhow et al., 2009), digital stories and students’ reflective practices of peer reviewing were the foundational aspects of this paper.
Research limitations/implications
The research the authors have done has been in regards to reviewing and analyzing students’ peer reviews of their classmates’ digital stories, so the authors did not conduct a research study empirical in nature. What the authors have done is to use students’ artifacts (digital story, digital storytelling guides and reflections/peer reviews) to allow students’ authentic voices and perspectives to emerge without their own perspectives marring these. The authors, as teachers, are simply the tools of analysis.
Practical implications
In reading this paper, teachers of different grade levels will be able to obtain ideas on using digital storytelling in their classrooms first. Second, teachers will be able to obtain hands-on tools for implementing digital storytelling. For example, the digital storytelling guide to which the authors refer (Figure 1) can be used in different subject areas to help students plan their stories. Teachers will also be able to glean knowledge on using students’ peer reviews as a kind of authentic assessment.
Social implications
The authors hope in writing and presenting this paper is that teachers and instructors at different levels, K-12 through higher education, will consider digital storytelling as a pedagogical and learning practice to spark deeper conversations within the classroom that flow beyond margins and borders of instructional settings out into the community and beyond. The authors hope that others will use opportunities for storytelling, digital, verbal, traditional writing and other ways to spark conversations and privilege students’ voices and lives.
Originality/value
As the authors speak of the original notion of using students’ crucial events as story starters, this is different than prior research for digital storytelling that has focused on lesson units or subject area content. Also, because the authors have used crucial events, this is an entry point to students’ lives and the creation of rapport within the classroom.

Abstract
Purpose
This paper aims to contribute to research on the interrelations between urban tourism, travelling and landscapes. It shows how young visitors to the tourism-reliant city of Arusha, northern Tanzania, experience and interpret discomfiting encounters with street sellers by drawing on stereotypes circulating in guidebooks, online forums and in the tourism industry. In turn, such re-interpreted encounters are increasingly seen as problematic for the city’s development of urban tourism.
Design/methodology/approach
The author draws on extensive ethnographic fieldwork with tourist-product street sellers in Arusha and Moshi, Tanzania in 2015–2017. With detail-oriented focus on social interaction and communication, the author has used participant observation and interviews to understand the perspectives and actions involved. Complementing this, the author draws on interviews with tour companies and local authorities to connect everyday occurrences with broader political, economic and urban transformations.
Findings
This paper explores the interrelation between changing urban landscapes, gentrification and burgeoning urban tourism by highlighting not only how streets are created and sought to be re-created but how also re-interpreted stories and stereotypes fundamentally influence how it is understood by local authorities. As the consumption of place, shopping and foreigners’ experiences take centre stage in Arusha’s urban development project, practices and people that are re-interpreted as causes of discomfort, become objects of ordering and discipline.
Originality/value
This paper emphasizes that the social encounters beyond dichotomies of host–guest relationships are a fruitful and important means of investigating how “encounters” connect space to power, the street to urban planning and mundane on-the-street interactions to processes of transformation and gentrification. This paper presents a reading of “landscapes” not as a text, but as a series of encounters that catch our attention when and where they break our norms, or the norms of others.

Abstract
This paper has two purposes. First, I offer a reading of interpretive biography (Denzin, 1989a) as an alternative method for understanding how individual lives are rendered meaningful in postmodern communication processes. Second, given the importance of many rock performers as cultural heroes, I present an interpretive biography of Pete Townshend, chief songwriter and most visible member of the classic rock band the Who. This method of inquiry is grounded in the more general tradition of interpretive interactionism (Denzin, 1989b, 1990a) and has its roots in C. Wright Mills's (1959) concept of the sociological imagination. Its guiding question is this: How is the postmodern self (or stated more accurately, selves) created within and sustained by the mass media? I argue that as postmodern cultural symbols, Townshend and the band (however ambiguously) mirror a collective search for identity on the part of audiences and society-at-large.

In 1987, the Harvard Business Review conducted a survey of its readers regarding the U.S. performance in the world markets. The study indicated that the U.S. had a deep‐seated problem of inadequate international competitiveness (Scott, 1987). More recently, Ernst & Young/American Quality Foundation undertook an International Quality Study which examined quality practices in Canada, Germany, Japan and the U.S. (See Bowles, 1992). The study revealed that 22 per cent of U.S. business always or almost always translate customer expectations into the design of new products and service. In Germany and Japan, the figure was 40 per cent and 58 per cent respectively. The results induced, Joshua Hammond, president of the American Quality Foundation, to state that “It is clear … that quality performance has a long way to go before it reaches parity with financial performance as a matter of primary importance to America's senior executives”. What makes the situation more complex and urgent is the fact that international competition has changed the structure of global markets and the rules of the business game. Furthermore, U.S. businesses no longer command the lead in the global marketplace and new international competitors are not only aggressive and competent, but appear to give priority to customer needs and expectations. For example, many Japanese companies view customer satisfaction as a way of building loyalty, thereby generating repeat sales. In contrast, U.S. executives have often aimed not at producing customer satisfaction, but at preventing customer dissatisfaction (Bowles, 1992). Similarly, the Fortune Global 500 List (Fortune 1995) showed that three countries accounted for the majority of the top 500 firms in the world; U.S. (151 firms), Japan (149 firms), and Germany (44 firms). Nevertheless, the list indicated that more Japanese companies have made it to the top ten (from three in 1993 to six in 1994), while the number of the U.S. firms stayed the same (three) in both years.

Students with an intellectual disability historically faced exclusion in both schools and in their communities. Through court cases, legislation, and parental advocacy, students with an intellectual disability were awarded the right to an education, and under the Individuals with Disabilities Education Act, an education in the least restrictive environment. This chapter explores the historical and current state of inclusion for students with an intellectual disability as well as the current and historical research base regarding inclusive educational placements for students with an intellectual disability. The chapter concludes with a discussion of the future of inclusive education for students with an intellectual disability.

Purpose
The purpose of this paper is to examine the applicability of HACCP within the hospitality industry from the perspective of two qualified and experienced chefs. It is the second article in the second Worldwide Hospitality and Tourism Themes issue of the International Journal of Contemporary Hospitality Management presenting a new method of HACCP for the hospitality industry and proof of its utility.
Design/methodology/approach
A combination of academic literature and industry materials is used to examine the nature of the hospitality industry, the scale of food safety problems and previous attempts to solve them.
Findings
The paper argues that in its traditional form, and in the way that many external bodies have tried to impose it, HACCP does not work for the hospitality industry and has been anything other than a benefit. However, HACCP could be the very catalyst the industry needs to come to terms with the food safety issues of a changing world. To make the principles meaningful they must be developed for the industry by the industry itself. They cannot simply be transferred from other sectors and superimposed by external agencies.
Originality/value
This informed and detailed chefs' perspective on HACCP in the hospitality industry is the first of its kind. It will be valuable reading for industry bodies, academics, enforcers and governments working with HACCP in this industry.
