Abstract

Purpose

This study aimed to assess if an Italian artisanal pasta filata cheese, named Provolone del Monaco, is perceived by consumers as typical or not and if any variability exists among cheeses made by different dairies.

Design/methodology/approach

Two experiments were performed. In the first experiment, two artisanal Provolone del Monaco having different ripening times and two industrial Provolone cheeses were evaluated. A total of 95 subjects, divided into three homogeneous groups, first rated the samples in blind condition, then, after having received information about typicality; price, and both sets of information. In the second experiment, the quantitative descriptive profiles of eight Provolone del Monaco samples aged six months and made by different dairies were compared with the quantitative descriptive profiles of the same cheese aged ten months and provolone cheeses made by industrial dairies.

Findings

Consumer results revealed that consumers knowing typicality information gave a better score to cheeses markedly different. The price together with typicality information, represented a quality indicator. Cluster analysis of descriptive scores revealed homogeneity between the equally aged Provolone del Monaco samples. Moreover descriptive data showed that cheese was characterized by several specific attributes, that the consumer, probably, recognized as typical.

Research limitations

It must be noticed that once it was performed in Campania, the results extrapolation to other regions or countries should not be made unless similar results are found.

Originality/value

This study will contribute to better addressing consumer needs and enhancing the competitiveness of traditional foods.

Abstract

Purpose

Temporal dominance of sensation (TDS) is a sensory method developed by Pineau et al. (2003) which studies the sequence of dominant sensations of a product during its consumption. TDS is believed to be more appropriate to explain consumer responses than static descriptive analysis due to its temporal element. The purpose of this paper is to define the temporal sensory profile of a new product: polenta stick. In particular, TDS method was used to measure the dominance of sensory attributes in polenta stick samples and dynamic consumer tests were performed in order to verify if the acceptability changed over time during sample consumption.

Design/methodology/approach

Eight polenta sticks, different in terms of storage conditions, cooking procedures and serving temperatures, were analysed by means of TDS with 13 assessors. During two preliminary sessions, the attributes list, constituted by the nine most cited sensations, was generated. Five replications were carried out. In dynamic consumer tests, 50 subjects were asked to give their liking on a seven-category scale for the frozen samples, in different five moments during the evaluation.

Findings

TDS results showed a significant effect of the experimental conditions on dominant attribute perception of polenta sticks. For the oven-cooked samples, more flavour attributes were perceived as dominant, whereas for the fried samples, the attributes crispness and oiliness overcame with a high panel dominance rate and for a long time. For the chilled samples, crispness had the highest panel dominance rate; whereas for the frozen samples, creaminess was the most dominant attribute. Consumer liking scores did not significantly change over time during consumption for all the samples. The fried samples received the highest liking scores, at both serving temperatures.

Practical implications

The chosen sensory methods gave the authors important information about the real perception of the products during consumption. A lot of foodstuffs show several sensory properties that appear in different times during evaluation and/or consumption. These properties could affect overall liking so they should be taken into account.

Originality/value

New dynamic sensory methods were used to characterize a new food product, i.e. polenta-based sticks. The procedure used to evaluate the liking by consumers was completely innovative, whereas the sensory method used to characterize the samples was recently developed. The new food product was developed as an aim of an Italian research project funded by MiSE (Ministero dello Sviluppo Economico) for the valorization of maize flour (MAISFOOD, Industria 2015).

Abstract

The paper offers a survey of major Italian accounting scholars and their work for the period from 1900 to 1950. Apart from the late works of Rossi and Besta, the main focus is on the contributions by Zappa, who undoubtedly dominated the scene. In this period, as well as later, most Italian accountants and “aziendalisti” adopted the so‐called “income system”. Although its premises originated with Fabio Besta, master of the so‐called “patrimonial or proprietorship system”, the Italian School under Zappa gave this system a new theoretical basis that differed fundamentally from that of Besta. Zappa also developed the dynamic aspect of accounting and business economics that still prevails in Italy. The paper also devotes attention to other Italian scholars, less well‐known abroad. In the area of cost accounting it concentrates on the views of De Minico and his disciple Amodeo, but also mentions other contributors. The final Section deals with Italian contributions to accounting history during this period

Abstract

This chapter is concerned with the estimation of spillover effects when outcomes arise as a consequence of bilateral interactions instead of from individual actions. In this type of environments, outcomes are generated on links instead of on nodes of a network, like bilateral prices in over-the-counter markets. The author proposes a link-based spatial autoregressive (SAR) model and discusses identification conditions and a two step least square estimation procedure. The author shows analytically that using a standard node-based SAR, which models nodes instead of links’ outcomes, produces misleading results when the data generating process is link-based. The methodology is illustrated using Monte Carlo experiments and real data from an interbank network.

Abstract

Purpose

This study advocates the importance of taking an evolutionary perspective in the strategic configuration of closed-loop supply chains (CLSC) in the transition to a circular economy. Building on the supply chain management and industrial dynamics research domains, an evolutionary analytical framework was developed and applied in the empirical context of the ongoing industrial transition to e-mobility.

Design/methodology/approach

This study is designed as an in-depth exploratory case study to capture the multi-layer dynamic complexities and their interplay in CSLC development. The empirical investigation was based on two-year interactions between the authors and various departments in a leading European heavy vehicle manufacturer. The proposed evolutionary analytical framework was used for investigating the dynamics of four CLSC configurations through ten possible trajectories.

Findings

The findings demonstrate that the evolution of each CLSC configuration comes with multiple challenges and requirements and point out the necessity for the co-development of technologies, product design and production, and infrastructure through long-term relationships among key supply chain actors. However, this evolutionary journey is associated with multiple dilemmas caused by uncertainties in the market and technology developments. All these factors were properly captured and critically analyzed, along with their interactions, thanks to the constructs included in the proposed evolutionary analytical framework.

Research limitations/implications

The proposed evolutionary framework is applicable for examination of SC transformation in the context of market and technology development, and is particularly relevant for transitioning from linear SC to CLSC. The framework offers a single actor perspective, as it does not directly tackle dynamics and effects of actions taken by SC actors.

Practical implications

The developed framework can support SC managers in identifying, framing, and comparing alternative strategies for CLSC configuration in the transition process.

Originality/value

This study proposes the framework for understanding and guiding the evolutionary process of CLSC development. Its uniqueness lies in the integration of concepts from innovation and evolutionary theories coming from industrial dynamics and SCM literature streams.

Abstract

Purpose

The purpose of this paper is to discuss the dynamics of the evolution of damage to the residential buildings within the city walls of Norcia during the six-month seismic swarm that hit Central Italy in the period 24th August 2016 to end of January 2019. This is accomplished by comparing the damage recorded by the Italian Civil Protection usability form (AEDES form) during this period after each event.

Design/methodology/approach

First, these outputs are compared with a qualitative assessment conducted by means of omnidirectional camera (ODC) imagery collected on site by the authors, to explore the ability of this technology to support post-earthquake damage assessment. The damage level attributed with these two techniques is then further compared with the output of the analytical vulnerability assessment method FaMIVE, which allows to correlate damage to vulnerability. Specifically, the objective is to investigate the efficacy and performance of historic and recent strengthening interventions.

Findings

Results show that there is a good correspondence between AeDES and ODC assessments for low to medium damage grades (DG). Discrepancies in higher DGs are discussed in light of the different levels of information that can be recorded by using the two tools. The efficacy of strengthening is also well captured by the FaMIVE method. The procedure estimates a decrease of almost 40, 25 and 20 per cent of the total number of buildings failing out-of-plane, respectively, for the three seismic events considered, when restraining elements are in action.

Research limitations/implications

The analysis conducted in this work make use of deterministic values of Norcia’s masonry fabric characteristics that have been found in literature, thus implying that neither the probabilistic aspects nor the related uncertainties have been properly investigated and addressed. However, this limitation is to be considered within the more general context of the legislation for the preservation of historic buildings which limits substantially any type of semi-destructive tests, hence limiting the reliability of the values available in literature. This in turn affects the decisions informing the design and implementation of strengthening interventions which can be confidently considered reliable and effective.

Originality/value

The paper addresses for the first time a systematic investigation of damage progression in historic masonry structures, part of urban aggregates in heritage cities. The current urban fabric is discussed in view of historic building codes as the basis for determining the present seismic vulnerability of the historic city centre of Norcia. The study provides new data sets for the city of Norcia and develops a statistical correlation between cumulative damage and analytical vulnerability functions for heritage buildings exposed to a swarm of earthquakes. The analytical assessment of the effect of historic strengthening is totally novel.
