Abstract
Purpose
The purpose of this paper is to present a quantitatively supported explanation of the intellectual development, the schools of thought and the sub-areas of the food cold chain (FCC) research to derive meaningful avenues for future research.
Design/methodology/approach
This study builds on bibliometric analysis and network analysis to systematically evaluate a sample of 1,189 FCC articles published over the past 25 years. The descriptive statistics and science mapping approaches using co-citation analysis were performed with VOSviewer software.
Findings
The findings reveal a state-of-the-art overview of the top contributing and influential countries, authors, institutions and articles in the area of FCC research. A co-citation analysis, coupled with content analysis of most co-cited articles, uncovered four underlying research streams including: application of RFID technologies; production and operation planning models; postharvest waste, causes of postharvest wastage and perishable inventory ordering polices and models; and critical issues in FCC. Current research streams, clusters and their sub-themes provided meaningful discussions and insights into key areas for future research in FCC.
Originality/value
This study might reshape practitioners’, researchers’ and policy-makers’ views on the multifaceted areas and themes in the FCC research field, to harness FCC’s benefits at both strategic and tactical level. Finally, the research findings offer a roadmap for additional research to yield more practical and modeling insights that are much needed to enrich the field.

Abstract
Purpose
Simulation-based digital twins represent an effort to provide high-accuracy real-time insights into operational physical processes. However, the computation time of many multi-physical simulation models is far from real-time. It might even exceed sensible time frames to produce sufficient data for training data-driven reduced-order models. This study presents TwinLab, a framework for data-efficient, yet accurate training of neural-ODE type reduced-order models with only two data sets.
Design/methodology/approach
Correlations between test errors of reduced-order models and distinct features of corresponding training data are investigated. Having found the single best data sets for training, a second data set is sought with the help of similarity and error measures to enrich the training process effectively.
Findings
Adding a suitable second training data set in the training process reduces the test error by up to 49% compared to the best base reduced-order model trained only with one data set. Such a second training data set should at least yield a good reduced-order model on its own and exhibit higher levels of dissimilarity to the base training data set regarding the respective excitation signal. Moreover, the base reduced-order model should have elevated test errors on the second data set. The relative error of the time series ranges from 0.18% to 0.49%. Prediction speed-ups of up to a factor of 36,000 are observed.
Originality/value
The proposed computational framework facilitates the automated, data-efficient extraction of non-intrusive reduced-order models for digital twins from existing simulation models, independent of the simulation software.

Abstract
Purpose
Since last few years, cold chain management (CCM) has gained growing interest among practitioners, policymakers, researchers and academicians. The purpose of this paper is to provide a review focused on food cold chain management (FCCM) over the last 16 years to identify state of the art in the literature, highlight research gaps and define appropriate research questions (RQs) for future research.
Design/methodology/approach
The paper analyzes the content of 89 research articles published on the topic of food cold chain (FCC) from 2001 to 2016 within different journals. The Scopus and Web of Science databases were taken into consideration to shortlist research articles. Henceforth, the authors scrutinized the FCC industry to offer some effective strategies to tackle the chain complexities. The authors also draw interwoven between FCC infrastructure, integration, stakeholders’ interest, value addition, partners’ performance and overall food cold chain performance (FCCP) into a conceptual framework.
Findings
This paper identifies four research gaps in the literature of FCC concerning the most popular approaches used for the FCCP measurement, the performance measurement metrics, the factors which negatively affect the FCCP and the main sustainability issues in FCC.
Originality/value
This study identifies RQs which represent possible areas of investigation to improve the body of the FCCP evaluation and management. Furthermore, the FCC practitioners, food authorities and researchers might find this review useful, as it draws a clear picture of research in the respective domain.

Abstract
Purpose
Presented work gives comparative review of food supply chain (FSC) under various notions related to its conceptualisation, operationality and technological advancements in lieu with Industry 4.0 revolution. In Indian scenario, the impression of FSC seems in a scattered way that cannot be directly useful for an organisation, to overcome this scattering, a framework has been developed to consolidate the previous research works and exploration of new trends in food supply chain management (FSCM) in context to Indian scenario.
Design/methodology/approach
This article encapsulates the essence of various research articles and reports retrieved from databases of Emerald and Elsevier's Science direct, clustering the various notions related to FSC in Indian context. To visualise the one-sight view of related works, a pictorial representations have also been appended.
Findings
This article explains the general aspect of FSC and its linkage in context to Indian system. Presented work outlays both empirical and theoretical approaches trending from last 15 years. As research count in context to Indian FSC is lacking, so this work will be a road map for expedition in direction of FSCM, in era of research.
Practical implications
Findings and suggestion in this work can expanded in various industries related to food, helping to turn their fortune and enrichment of Indian FSC.
Social implications
Food is binding word for all the commodities, and its effective supply chain management is a big boon for economy of country along with large employment generation for people directly/indirectly associated with this industry. This article covers a generalise approach from ground level framework to a level of advancement which fulfil technological aspects, future needs and upcoming trends in lieu to need of developing nation.
Originality/value
As limited research is done in Indian FSCM, this work to bridge this gap along with a well-defined framework which going to explore FSC. This work is going to be facilitation for researchers of this area as no major review for Indian context has not been published.

Abstract
Purpose
The literature review of post-harvest supply chain (PHSC) losses is carried out and analyzed in this paper followed by bibliometric analysis of the literature.
Design/methodology/approach
The literature survey is performed across various dimensions such as PHSC losses, PHSC risks and PHSC sustainability (waste management and waste reduction). One hundred thirty research articles during the period of 1989–2020 were considered for the review.
Findings
The PHSC losses have been identified in this literature survey. The calculation and mitigation strategies stated by various researchers in the literature are addressed. The important loss mitigation dynamics are also presented to reduce the PHSC losses and to improve food availability.
Research limitations/implications
The major focus is given on the PHSC of agriculture produces. However, research articles from fish and meat supply chain are excluded as they follow a different perishability curve.
Practical implications
The current work will add value to the agriculture supply chain literature, provide a platform for PHSC losses and provide assistance/guideline toward loss calculation, loss mitigation, improved rural employability, improved rural entrepreneurship and improved revenue generation.
Social implications
The performed research will assist the researchers, entrepreneurs and farmers to understand the current scenario of food wastage at different stages of the supply chain better. It will provide the guidelines for calculation and mitigation of various stated PHSC losses. This study will be helpful to enhance food availability and food security in post-coronavirus crisis.
Originality/value
The paper explores and highlights PHSC loss calculations and mitigation strategies to identify the postharvest loss situation and better utilization of fresh produces.

Abstract
Purpose
The purpose of this paper is to elaborate value-added service of cold chain logistics between China and Korea. The covering strategy for developing the cold chain value-added service between the two countries is proposed.
Design/methodology/approach
The author expounds the driving power for developing cold chain logistics between the two countries basing on the trade data of agricultural exports and imports, the tariff liberalization agreement of China–Korea FTA and the short distance between the two countries. It analyzes the value-added service of cold chain logistics with exemplary cases from four aspects (customized service, integrated service, consultation/solution and strategic alliance service), and its value-added mechanism for the enhancement of core competences of the entire cold chain. Then, by considering the drawbacks of the current cold chain logistics practices, between the two countries, the author proposes certain measures for fostering the cold chain value-added services between them.
Findings
There are apparent mutual benefits in developing cold chain value-added service between the two countries, but there exists some shortcomings which impede the sound development of the cold chain logistics, such as low circulation rate and insufficient cold chain facility in China, shortage of integrated and compatible information platform between the two countries, few integrated cold chain service and strategic alliance service and occurrence of some trade frictions.
Originality/value
The enforcement of China–Korea FTA will greatly reduce the tariff and increase the import and export volumes between the two countries; with the proximity between them, development of cold chain logistics between the two countries holds tremendous potential. This paper thoroughly discusses the mechanism of the value-added service of the cold chain logistics, and brings into focus the development of the value-added service in the two countries.

Purpose
The purpose of this paper is to propose a framework of value co-creation in platform ecological circle for cold chain logistics enterprises to guide the transformation and development of cold chain logistics industry.
Design/methodology/approach
This paper establishes a conceptual framework for the research on the platform ecological circle in cold chain logistics, utilizes a structural equation model to investigate the influencing factors of the value co-creation of the platform ecological circle in the cold chain logistics enterprises and elaborates the internal relations between different influencing factors regarding the value co-creation and enterprises’ performance.
Findings
Results show that resource sharing in logistics platform ecological circle can stimulate the interaction among enterprises and this produces a positive influence on their dynamic capabilities, which, in turn, affects the they to work together to plan, implement and solve problems, so as to achieve the goal of improving enterprise performance.
Practical implications
The shared resources and value co-creation activities in the platform ecological circle are very important for the transformation and development of cold chain logistics enterprises. Therefore, enterprises should promote value co-creation through realizing resource sharing and creating a win-win cooperation mechanism.
Originality/value
This paper targets at incorporating the resource sharing in platform ecological circle for cold chain logistics enterprises, explores from an empirical perspective the role of the resource sharing in cold chain logistics enterprises in enhancing the dynamic capabilities of enterprises, thereby encouraging the value co-creation behavior, and ultimately boosts enterprise performance and stimulates business development.

Abstract
Purpose
The application of digital twins to optimise operations and supply chain management functions is a bourgeoning practice. Scholars have attempted to keep pace with this development initiating a fast-evolving research agenda. The purpose of this paper is to take stock of the emerging research stream identifying trends and capture the value potential of digital twins to the field of operations and supply chain management.
Design/methodology/approach
In this work we employ a bibliometric literature review supported by bibliographic coupling and keyword co-occurrence network analysis to examine current trends in the research field regarding the value-added potential of digital twin in operations and supply chain management.
Findings
The main findings of this work are the identification of four value clusters and one enabler cluster. Value clusters are comprised of articles that describe how the application of digital twin can enhance supply chain activities at the level of business processes as well as the level of supply chain capabilities. Value clusters of production flow management and product development operate at the business processes level and are maturing communities. The supply chain resilience and risk management value cluster operates at the capability level, it is just emerging, and is positioned at the periphery of the main network.
Originality/value
This is the first study that attempts to conceptualise digital twin as a dynamic capability and employs bibliometric and network analysis on the research stream of digital twin in operations and supply chain management to capture evolutionary trends, literature communities and value-creation dynamics in a digital-twin-enabled supply chain.
