Abstract

Purpose

The purpose of this paper is to investigate consumers’ variety perception for online grocery assortments and, more generally, to better understand consumers’ attitude toward digital assortments. In particular, this research examines the influence of the organization of products that results from assortment structure and display.

Design/methodology/approach

Starting from the observation that previous work on traditional assortments is not sufficient to understand consumers’ perceptions and attitudes, the paper adopts a hypothetico-deductive approach and develops four hypotheses. These hypotheses are tested using an experimental approach.

Findings

This research enables us to see that both attitude and variety perception are affected by the way products are organized on a website. Furthermore, contrary to what the literature on traditional assortments allows one to assume, the assortment corresponding to a more positive attitude is not perceived as being the more varied. As a result, our findings reconsider the link between variety perception and consumer assortment evaluation for digital assortments.

Research limitations/implications

The work is based on data collected for only one product category. It would be interesting to explore other categories also, to determine if the structure of the assortment and variety perception have stable effects.

Practical implications

The results inform retailers that they must carefully design the display of their digital assortments. If a retailer wants to enhance variety perception, the authors recommend using an assortment organized by brand, or presenting all the products together. If, instead, the goal is to encourage a positive attitude, the retailer should opt for assortments sorted by attribute or that present all products together.

Originality/value

This research adopts a new orientation on assortment perception and evaluation, considering the specificities involved in digitizing assortments. In addition, this research studies a real product category and puts respondents in experimental conditions close to reality.

Abstract

Purpose

This introductory paper aims to place the contributions to this special issue within the context of the recent impact of globalisation on the wine industry, characterised by rapidly growing and evolving international markets, the expansion of New World wines on international markets, and the response of Old World rivals to New World competition.

Design/methodology/approach

This paper examines the new competitive environment in the wine industry created by globalisation and outlines the way in which the authors of the papers in this special issue have contributed to an understanding of that environment.

Findings

This paper reflects a renewed academic interest in winemaking, one of the most dynamic and rapidly developing agricultural sectors.

Originality/value

The paper hightlights how the authors of the papers in this special issue have contributed to an understanding of this new competitive environment.

Abstract

Purpose

This paper aims to apply intuition theory to clarify consumers’ assortment evaluations. For each decision process, this paper explores how perceptions of organization and variety influence consumers’ attitudes and purchase intentions.

Design/methodology/approach

In total, 504 observations were collected across three product categories. Perceived choice, time and expertise in the product category provide proxies to distinguish between intuitive and deliberative systems. The intuitive system further consists of intuition based on either expertise or heuristics.

Findings

It was revealed that distinct decision processes (deliberative, intuitive based on expertise and intuitive based on heuristics) affect the link between assortment perceptions and consumers’ assortment evaluations. Consumers’ evaluations in deliberative- and heuristic-based intuitive systems rely more on perceptions of organization than of variety; whereas intuitive judgments based on expertise depend almost equally on both perceptions.

Research limitations/implications

Some limitations have to be underlined. The approximations used could be more precise and are subjective in nature. Moreover, the ordinary product categories that were studied might encourage more intuitive decisions by consumers. If so, the deliberative mode of thinking might have been underrepresented in this sample.

Originality/value

Despite the limitations, this research is, to our knowledge, the first to explore the influence of intuition theory on ordinary shopping and in particular on assortment perception. As such, it contributes to a deeper understanding of this theory in the field.

Abstract

Purpose

This paper sets out to investigate the view that a firm's strategy in a marketing channel is contingent on the organization of its related upstream network of embeddedness.

Design/methodology/approach

An in‐depth documentary study of recent developments in marketing channels in the French Rhône Valley Appellation d'Origine Controlée wine industry combined with content analysis of qualitative data derived from interviews with local wine merchants and Inter‐Rhône wine experts.

Findings

The extended theoretical framework used in this case study enables researchers to more completely specify channel members' behavior. By taking into account not only general objectives but also legitimacy concerns of this type of organizations, it is possible to identify reputation and institutional commitment management in the upstream network as two governance mechanisms of equal importance to the mechanisms of vertical integration or management of relationships with suppliers.

Research limitations/implications

This study suggests the need for further research into external validity and measurement issues.

Practical implications

The study highlights the necessary governance mechanisms wine merchants have to deploy in their upper professional and supply networks in order to enhance their market performance. Successful positioning strategies seem to be more and more dependent on the wine merchants' ability to acquire a strong position and recognition in its upstream networks: only those who have taken into account the legitimacy issue and have deployed mechanisms to govern it effectively will survive the current internationalisation processes and avoid market decline.

Originality/value

This more nuanced channel approach offers a number of empirical illustrations to support the tri‐dimensional conceptualization of institutional environment suggested by Grewal and Ravi in 2002.

Abstract

Purpose

This study aims to address how the social structure of the hospitality management field has evolved from 1960 to 2016.

Design/methodology/approach

The informal social structure of the hospitality management literature was analyzed by collecting authorship data from seven hospitality management journals. Co-authorship analyses via network analysis were conducted.

Findings

According to the findings, throughout the history of hospitality management, international collaboration levels are relatively low. Based on social network analysis, the research community is only loosely connected, and the network of the community does not fit with the small-world network theory. Additional findings indicate that researchers in the hospitality management literature are ranked via degree centrality, closeness centrality and betweenness centrality. Cliques, which contain at least five researchers, and core researchers are identified.

Practical implications

This study helps both scholars and practitioners improve the informal structure of the field. Scholars must generate strong ties to strengthen cross-fertilization in the field; hence, they collaborate with authors who have strong positions in the field. Specifically, this provides a useful performance analysis. To the extent that institutions and individuals are rewarded for publications, this study demonstrates the performance and connectivity of several key researchers in the field. This finding could be interesting to (post)graduate students. Hospitality managers looking for advisors and consultants could benefit from the findings. Additionally, these are beneficial for journal editors, junior researchers and agencies/institutions.

Originality/value

As one of the first study in the field, this research examines the informal social structure of hospitality management literature in seven journals.

Abstract

Purpose

The consumption of music performed in different languages represents a significant aspect of the contemporary cultural experience. This phenomenon questions how different languages mediate music consumption in specific national contexts. In this paper, the authors investigate the case of live music consumption in France.

Design/methodology/approach

The authors surveyed 428 persons who saw 159 artists either performing in French or in English in 46 locations around Paris, France. The authors tested the effect of the language of the concert on three dimensions of music consumption: singing in unison, appraisal of the lyrics and dancing.

Findings

Multilevel analysis revealed that English was positively associated with dancing, whereas French was positively associated with the appraisal of the lyrics. The authors found no evidence that the language of the concert was associated with differences in singing in unison.

Originality/value

Results are discussed with respect to language diversity in the context of globalised popular music consumption.

Abstract

Purpose

This study aims to investigate the morphing concepts able to manipulate the dynamics of the downstream unsteadiness in the separated shear layers and, in the wake, be able to modify the upstream shock–boundary layer interaction (SBLI) around an A320 morphing prototype to control these instabilities, with emphasis to the attenuation or even suppression of the transonic buffet. The modification of the aerodynamic performances according to a large parametric study carried out at Reynolds number of 4.5 × 106, Mach number of 0.78 and various angles of attack in the range of (0, 2.4)° according to two morphing concepts (travelling waves and trailing edge vibration) are discussed, and the final benefits in aerodynamic performance increase are evaluated.

Design/methodology/approach

This article examines through high fidelity (Hi-Fi) numerical simulation the effects of the trailing edge (TE) actuation and of travelling waves along a specific area of the suction side starting from practically the most downstream position of the shock wave motion according to the buffet and extending up to nearly the TE. The present paper studies through spectral analysis the coherent structures development in the near wake and the comparison of the aerodynamic forces to the non-actuated case. Thus, the physical mechanisms of the morphing leading to the increase of the lift-to-drag ratio and the drag and noise sources reduction are identified.

Findings

This study investigates the influence of shear-layer and near-wake vortices on the SBLI around an A320 aerofoil and attenuation of the related instabilities thanks to novel morphing: travelling waves generated along the suction side and trailing-edge vibration. A drag reduction of 14% and a lift-to-drag increase in the order of 8% are obtained. The morphing has shown a lift increase in the range of (1.8, 2.5)% for angle of attack of 1.8° and 2.4°, where a significant lift increase of 7.7% is obtained for the angle of incidence of 0° with a drag reduction of 3.66% yielding an aerodynamic efficiency of 11.8%.

Originality/value

This paper presents results of morphing A320 aerofoil, with a chord of 70cm and subjected to two actuation kinds, original in the state of the art at M = 0.78 and Re = 4.5 million. These Hi-Fi simulations are rather rare; a majority of existing ones concern smaller dimensions. This study showed for the first time a modified buffet mode, displaying periodic high-lift “plateaus” interspersed by shorter lift-decrease intervals. Through trailing-edge vibration, this pattern is modified towards a sinusoidal-like buffet, with a considerable amplitude decrease. Lock-in of buffet frequency to the actuation is obtained, leading to this amplitude reduction and a drastic aerodynamic performance increase.
