Abstract
Purpose
The purpose of this study was to accelerate the fermentation process of minced mackerel fish (Scomber scombrus L.) mixed thoroughly with 20 per cent salt (w/w) and hydrolyzed by 0.2 and 0.4 per cent bromelain at 37°C.
Design/methodology/approach
S. scombrus L. was mixed thoroughly with 20 per cent salt (w/w) and hydrolyzed by the bromelain at levels of 0.2 and 0.4 per cent at 37°C. The physicochemical and sensory properties were evaluated after 60 and 90 days.
Findings
In a comparison of all of the aforementioned treatments, the results showed that the samples with higher bromelain levels (0.4 per cent) had higher concentrations of formal nitrogen (622 mg/100 mL) and total volatile base nitrogen (TVB-N, 0.3 g/dL) after 90 days of fermentation (p < 0.01) . The sample with 0.4 per cent bromelain showed total free amino acids content of 13.3 g/100 g after 90 days of fermentation (p < 0.01). High levels of total fatty acids (15.6 mg/100 g) were found in samples treated with 0.4 per cent bromelain and allowed to ferment for 90 days (p < 0.01). The sauce colour became significantly highly saturated (p < 0.01) with the increase in fermentation time. Chroma was significantly increased by 44 and 66 per cent in fermented sauce samples with 0.2 and 0.4 per cent bromelain during fermentation for as long as 90 days (p < 0.01). Moreover, the addition of bromelain (0.4 per cent) resulted in mackerel fish sauce that was organoleptically preferred at the end of fermentation.
Originality/value
The results showed that an acceptable fish sauce could be produced from mackerel fish with supplementation with 0.4 per cent of bromelain, which reduced the fermentation time to 90 days and resulted in the most satisfactory results without compromising the product quality.

Abstract
Six million Iraqis were displaced during the Iraq-Daesh War, and although many have returned to their communities, there remain approximately 1.3 million internally displaced persons (IDPs) across the country. Today, approximately 25% of IDP children in Iraq are out of school (REACH, 2020). This study foregrounds the voices and family histories of IDPs when navigating educational access and makes a methodological argument for the need for increased qualitative research in post-conflict settings. Using the conceptual framework of navigation, the author presents displaced persons as agentic, dynamic people with lived histories, present realities, and imagined futures which inform their journey through the education system. Semi-structured interviews with 16 IDPs who identified as parents or caregivers were conducted virtually. Displaced Iraqis value education for different reasons, ranging from basic literacy to employment to societal improvement. In doing so, the author challenges the barrier-dominant framework through which IDP educational access is often understood and nuanced with a temporal lens which requires us to identify IDPs as (1) persons capable of making choices for themselves, (2) givers as well as receivers, and (3) persons who aspire to goals beyond basic survival.

Nowadays, the main challenge in the higher education is the daunting task of transforming universities into digital era institutions. Improving HE students' competence to meet the flow of technological innovations through DT has been the focus of many countries. This task has imposed the restraint that HE institutions should implement the most effective strategies of DT. This chapter is focusing on how DT strategies play their role in making the transformation itself become germane and give its fruits. Therefore, this chapter presents the most effective DT strategies that can be implemented by HE institutions in order to prepare their students for the existing professional roles in their societies. A good DT strategy is one that connects the organization's current level of digital maturity with its future ambition. The well-known strategies in the DT field are as follows: the strategy of electronic projects, strategy of smart electronic platforms, integrated training strategy, participatory e-learning strategy, smart learning strategy, pervasive learning strategy, microlearning strategy and e-design thinking strategy, in addition to the strategy in which traditional learning methods are combined with e-learning methods. It is worth noting here that the chapter is not an attempt to favor a strategy over another or compare and contrast them to uncover their differences at any level. On the contrary, the writer will work on displaying how each strategy can be implemented in order to accomplish DT in HE instructional practices. Also, this chapter will show how complementary these strategies can be once they are utilized to reach DT.

Purpose
This paper aims to examine why the alliance formed between non-Islamist forces and state actors to oust Mohamed Morsi from power in 2013 broke down quickly.
Design/methodology/approach
This paper makes use of original data set derived from three waves of surveys fielded in 2011, 2014 and 2015 that ask questions about public threat perception. Around 10 elite interviews were also conducted to further test the study’s hypothesis.
Findings
On the one hand, non-Islamists, civic forces challenged the status and interests of state actors in a way that made state actors view them with heightened distrust. On the other, many civic forces, in face of high threat perception, prioritized law during and order after Morsi’s removal, driven – at least partly – by shifts in public attitudes.
Originality/value
Many views look at transitions in the Arab world from the angle of how Islamists interact with traditional power holders. Such an approach, however, could be reductionist in many ways because it disregards civic forces. This is a point this paper seeks to address.

Abstract
Purpose
The purpose of this paper is twofold: first, to develop a conceptual model using the push-pull-mooring (PPM) framework to understand the switching behavior of small- and medium-size enterprises (SMEs) of batik from adopting traditional marketing to e-commerce; and, second, to test whether the PPM variables prevent or lead to the switching behavior of SMEs of batik to adopt e-commerce.
Design/methodology/approach
This study uses a hypothesis which is drawn from related literature, quantifiable measures variables with a 1–5 Likert scale, hypothesis testing and draws the inference about a phenomenon of switching the behavior of SMEs from traditional marketing to e-commerce from the sample of 100 owners of batik SMEs, which are located in Yogyakarta, Solo and Pekalongan. The study used partial least square with the aid of the SmartPLS software program to test the hypothesis.
Findings
The result of hypothesis testing indicates that two factors significantly influence the switching behavior of batik SMEs from physical store retailing to e-commerce. The first factor is the desire of SMEs to support the information searching behavior of their customers, and the second factor is the perception that adopting e-commerce can provide value for the SMEs. However, this study fails to prove that the attractiveness of e-commerce can significantly pull the switching behavior of batik SMEs from physical store retailing to e-commerce. Moreover, related to mooring factors, the results show that the computer self-efficacy of the SME owners as a moderating effect is not supported.
Research limitations/implications
This study has several limitations. First, the samples were restricted to the SMEs of batik in three cities (Yogyakarta, Solo and Pekalongan). It is significant to conduct cross-sector, cross countries, cross-region or even cross-cultural investigations on this subject for better explanations of the results from a global perspective. Studies on cultural differences in switching behavior are supposed to accommodate to different individuals from the SME owner. Second, the study does not differentiate the sizes of enterprises; that is, no test was conducted for small-, medium- and large-size enterprises. The study only focuses on SMEs. Different empirical results may be obtained for different sizes because each enterprise size can have a different condition in e-commerce adoption. Second, this study pays more attention to the product categories of stamped batik and hand-drawn batik. Consumers can have dissimilar favorite channels to purchase other types of batik. Future research should also consider this issue.
Practical implications
Within all the opportunities available through e-commerce (support the information searching behavior, save the travel time and travel cost, better service quality to their customer, a lower price to their customer as well, and increase their sales), the SMEs need to enhance e-commerce activities and put it in their strategy for moving forward. On the other side, the government should have a strong interest in helping and supporting the SME through several activities.
Social implications
The research confirms that e-commerce adoption may benefit SMEs. It may encourage more SMEs to move from the traditional physical store retailing to e-commerce.
Originality/value
Although this study uses the conceptual model from the study of Chang et al. (2017), significant differences exist between the two studies. This study uses the PPM framework in the context of the seller migratory decision, whereas in most studies, the PPM framework is used in the context of the consumer migratory decision. Moreover, most studies about the adoption of e-commerce by owners of SMEs use the theory of reasoned action, theory of planned behavior, technology acceptance model, technology, organization and environment, and unified theory of acceptance and use of technology as the framework.

Abstract
Purpose
This study investigates the relationship between leaders' ethical behaviors and internal whistleblowing among hotel employees through the mediation role of organizational virtuousness. According to the conceptual framework, ethical leadership creates a virtuous workplace and encourages whistleblowing.
Design/methodology/approach
A survey approach with responses of 442 employees from Egyptian five-star hotels was used. Structural equation modeling (SEM) was used to test the hypotheses proposed based on leader–member exchange (LMX) and ethical leadership theories.
Findings
Ethical leadership has a favorable impact on organizational virtuousness and, as a result, has a significant impact on whistleblowing intention. The ethical leaders–subordinates' intents to whistleblow association partially mediated organizational virtuousness. To assist them in reporting ethics violations, most hotel employees require organizational characteristics, such as organizational climate and psychological empowerment, in addition to individual characteristics, such as moral bravery and ethical efficacy.
Originality/value
The conceptual framework of this paper adds a new guide for future research related to the hospitality literature, which is how employees' intent to internal whistleblowing. As such, senior management should serve as a moral role model for hotel employees, inspiring them to be moral and allowing them to participate in decision-making.

領導倫理會給組織美德帶來積極的影響,因此,領導倫理也會給舉報動機帶來重要的影響。領袖-下屬舉報合夥人合乎道德的動機,對組織美德起著仲介作用。若要酒店僱員舉報違反道德規範的行為,除了僱員須有個人特質、如道德勇氣和倫理效能等之外,酒店亦須具備一些組織特徵、如組織氛圍和心理賦權等。
研究的原創性/價值
本研究的概念框架,給探討僱員作內部舉報行為的動機的學者提供新的指引,為餐旅業的研究提供方向。組織的高級管理人員應以身作則,為僱員建立道德典範,鼓勵他們遵循道德規範而行事,並容許他們參與決策。

Abstract
Purpose
The purpose of this study is to assess the prevalence of burnout syndrome and its associated factors among medical students at Jazan University, Jazan, Kingdom of Saudi Arabia.
Design/methodology/approach
A cross-sectional survey was conducted among 440 randomly selected medical students at Jazan University. The questionnaire used for this study was based on the Copenhagen Burnout Inventory.
Findings
The overall prevalence of burnout was estimated at 60.2% (95% CI 55.6–64.8). The prevalence was higher for females (64.1%) than for males (56.2%) but without statistically significant differences (p > 0.05). On average, the students scored the highest averages in the personal burnout category, followed by the study-related and client-related burnout categories. In the multivariate analysis, a lower age (beta = −3.17, p = 0.026), female (beta = −0.896, p = 0.016), and having better burnout knowledge (beta = 0.710, p = 0.025) predict significantly higher personal burnout.
Practical implications
It is necessary to implement strategies to reduce the incidence of burnout among medical students for the sake of a better quality of life for future doctors.
Originality/value
There is a high prevalence of burnout among Jazan’s medical students.

Abstract
Purpose
Building on social cognitive theory and self-determination theory, this study aims to discern the innovative work behaviors of organizational employees as the process by which they generate, develop and implement new and valuable ideas, practices, products or procedures shaped by entrepreneurial leadership by reinforcing intrinsic motivation and creative self-efficacy under the boundary condition of a firm’s innovative climate.
Design/methodology/approach
This study used partial least squares-based structural equation modeling on a sample of 203 employees of small and medium-sized enterprises operating in Saudi Arabia.
Findings
This study found that entrepreneurial leadership improves employees’ innovative work behavior by successively enhancing their intrinsic motivation and creative self-efficacy. Furthermore, the analysis confirmed that a firm’s innovative climate significantly moderates the strength of the indirect mediation effect between entrepreneurial leadership and employees’ innovative work behavior through sequential mediation.
Practical implications
The findings of this study yield substantial theoretical and practical implications resulting from a fine-grained understanding of the instrumentality of entrepreneurial leadership in fostering employees’ innovative work behavior. Effectively orchestrating these psychological mechanisms could enable entrepreneurial leaders to alleviate their behaviors.
Originality/value
This is an original study that outlines the importance of aligning entrepreneurial leadership and an innovative climate to shape intrinsic motivation and creative self-efficacy in employees’ innovative work behavior. It demonstrates how entrepreneurial leadership enhances innovative work behavior through the sequential mediation of intrinsic motivation and creative self-efficacy under the boundary condition of an innovative climate.
