Abstract

Purpose

The high content of unsaturated fatty acids and the elevated presence of bioactive compounds make pistachio oil a healthy product with great commercial potential. One of the primary constraints for its production is the lack of information regarding oil extraction from an industrial perspective. The purpose of this paper is to ensure the success of pistachio oil production at a commercial scale, attention should be paid to the effect of the main extraction procedures on the characteristics of oil, the consumer acceptance of these oils and their production cost.

Design/methodology/approach

Comparison and evaluation of the physicochemical and sensory characteristics and production cost of oil extracted using two different production lines (hydraulic press and screw press) are considered here.

Findings

Slight differences were found in the physicochemical analysis, but significant differences were identified in the sensory analysis. Consumer judges preferred the oil extracted with the hydraulic press. According to production costs, the break-even value that makes screw press extraction sustainable is €70.4 per litre, while for the hydraulic press it is €91.0 per litre, mainly due to a lower extraction yield and the longer extraction time required. As production costs of both methods are high, pistachio oil quality should prevail, making the use of the hydraulic press more advisable.

Originality/value

Although significant research has been conducted to analyse pistachio oil composition and nutritional value, little attention has been paid to differences that appear regarding consumer preferences and production costs depending on the production method used. This paper provides a comprehensive approach to high-quality pistachio oil production from an industrial perspective.

Abstract

Purpose

This study aims to identify the most important attributes that the consumer uses in the process of choosing wine, which can then be used by wine‐producing companies in marketing strategies.

Design/methodology/approach

The methodology consisted of a survey of 421 wine consumers using the best‐worst scaling methodology. Various consumer segmentations were made by gender, income and age groups.

Findings

The two main attributes that condition consumers in choosing wine are previous tasting and region of origin. The latter attribute is valued mainly by women and in general by consumers over 34 years old who have a net monthly family income above €1,500. The previously tasted attribute, which on many occasions is associated with the price attribute, is valued basically by men and particularly by younger consumers and those with lower incomes.

Practical implications

It must be pointed out that in the short term the basic strategy of wine‐producing enterprises from any given region of origin is to compete on price. However, in the long term increasing their prestige is all that remains to compete actively with the various regions of origin.

Originality/value

This paper contributes to a greater knowledge of Spanish consumer habits by analysing the most important wine attributes in the process of purchasing wine.

Abstract

Purpose

This study measures the degree of influence that attributes such as price, organic production, origin and commercial type have on Spanish consumers when purchasing lamb meat, while also analysing various lamb meat differentiation strategies.

Design/methodology/approach

The methodology consisted of a survey of 421 Castilla‐La Mancha (Spain) lamb meat consumers during the month of January 2009. The preferences of these consumers were determined through several multivariate techniques.

Findings

The results obtained by means of conjoint analysis techniques show that an additional potential differentiation strategy is to offer the market conventionally produced suckling lamb and organic “ternasco” lamb. Thus, potential commercial cannibalism would be simultaneously prevented between two types of meat belonging to one and the same PGI Manchego Lamb.

Originality/value

The excessive commercial differentiation that can arise in food for basic consumption in general and particularly within the Manchego Lamb PGI. Whether it be from the inclusion of another commercial type (suckling lamb meat) together with the traditional type (“ternasco” lamb meat) and the additional possibility of the organic certification, it can make way for a certain commercial “cannibalism” among PGI lamb meats.

Abstract

Purpose

The paper aims to measure the degree of influence that attributes such as price, origin, type and production system have on Spanish consumers when purchasing cheese, while also analysing various cheese differentiation strategies.

Design/methodology/approach

The methodology consisted in a survey of 420 Madrid (Spain) cheese consumers during the month of December 2006, whose preferences were determined through several multivariate techniques.

Findings

The first result derived from this paper is the negative influence of the organic production system attribute on the cheese consumer preference structure. Therefore, this attribute becomes an inadequate differentiation strategy for cheese, while origin is the most adequate differentiation. In this sense, three consumer segments are identified: the first, shops for cheese mainly by type, the second, by a combination of origin, type and price and the third, by an origin of cheese. In this sense, except for the first segment, where competition by a type of cheese from other places could endanger the local market, possible strategies would be to continue emphasizing origin in a traditional approach.

Originality/value

The paper highlights organic differentiation in products already differentiated and accepted by the consumer does not always contribute additional utility to the consumer. It does not matter whether this differentiation and acceptance comes from origin and/or traditional production, as is the case of Manchego cheese.

Abstract

Purpose

This study aims to identify how Spanish consumers’ extrinsic preferences for food have evolved by examining the extant literature on food preferences in Spain, focusing on food-related attributes and food-related values.

Design/methodology/approach

This study is based on a synthetic review of the extant academic literature on Spanish consumer preferences for food-related attributes and food-related values from the mid-20th to the 21st century. This study uses key economic and social milestones that are most likely to influence food value chain actors to show how consumer preferences have evolved over the study period.

Findings

Spanish consumer food attribute preferences expanded as the food sector of the nation continued to grow, and value preferences showed a similar pattern from the mid-20th to the 21st century. The drivers of these preferences were trust, lifestyle, education (campaigns), sociodemographic factors and purchasing power.

Originality/value

Evaluating the extant literature’s contribution to consumer preferences for food-related attributes and values is important because it can aid in understanding the hierarchy and variety of consumers’ food preferences as well as the factors that drive these preferences. To the best of the authors’ knowledge, this study is the first to explore how Spanish consumer preferences evolved between the mid-20th and 21st centuries.

Abstract

Purpose

This paper attempts to examine new technologies, typologies, FATF recommendations and the last Spanish penal reform on money laundering.

Design/methodology/approach

The paper describes the potential provided via internet and electronic transfers, prepaid cards and payment services with mobile phones for executing money laundering, and comments on the Spanish penal reform on this crime.

Findings

The study finds that the new payment systems facilitate money launderers’ criminal activity. However, the development of technologies, including the internet, has unquestionable advantages involved, and even provides verification of identity or other duty of surveillance for the prevention of money laundering. Also, this paper analyzes the amendments made recently in the Spanish Criminal Code regarding money laundering.

Originality/value

This paper would be beneficial to the legislature. Future development of measures for the prevention of money laundering should take into account all potential threats that arise from the use of new technologies. Moreover, the long list of modifications on laundering undermines the legal certainty and the consideration of criminal law as ultima ratio, within the framework of a globalized crime policy.

Abstract

Purpose

The purpose of this paper is to visualize the inter‐university and international collaboration networks generated by Spanish universities based on the co‐authorship of scientific articles.

Design/methodology/approach

The approach takes the form of formulation based on a bibliometric analysis of Spanish university production from 2000 to 2004 as contained in Web of Science databases, applying social network visualization techniques. The co‐authorship data used were extracted with the total counting method from a database containing 100,710 papers.

Findings

Spanish inter‐university collaboration patterns appear to be influenced by both geographic proximity and administrative and political affiliation. Inter‐regional co‐authorship encompasses regional sub‐networks whose spatial scope conforms rather closely with Spanish geopolitical divisions. Papers involving international collaboration are written primarily with European Union and North and Latin American researchers. Greater visibility is attained with international co‐authorship than with any other type of collaboration studied.

Research limitations/implications

Impact was measured in terms of journals rather than each individual paper. The co‐authorship data were taken from the Web of Knowledge and were not compared with data from other databases.

Practical implications

The data obtained in the paper may provide guidance for public policy makers seeking to enhance and intensify the internationalization of scientific production in Spanish universities.

Originality/value

The Spanish university system is in the midst of profound structural change. This is the first paper to describe Spanish university collaboration networks using social network visualization techniques, covering an area not previously addressed.

Abstract

Purpose

The purpose of this paper is to attempt to provide a review of the growing literature on co-authorship networks and the research gaps that may be investigated for future studies in this field.

Design/methodology/approach

The existing literature on co-authorship networks was identified, evaluated and interpreted. Narrative review style was followed.

Findings

Co-authorship, a proxy of research collaboration, is a key mechanism that links different sets of talent to produce a research output. Co-authorship could also be seen from the perspective of social networks. An in-depth analysis of such knowledge networks provides an opportunity to investigate its structure. Patterns of these relationships could reveal, for example, the mechanism that shapes our scientific community. The study provides a review of the expanding literature on co-authorship networks.

Originality/value

This is one of the first comprehensive reviews of network-based studies on co-authorship. The field is fast evolving, opening new gaps for potential research. The study identifies some of these gaps.

Abstract

Purpose

The objective of this study was to evaluate and compare how school heads and teachers perceived the impact of implementing ISO 9001 Standards on the dimensions management and planning and support and recognition.

Design/methodology/approach

The study included 2,192 subjects (86.2% teachers and 13.8% heads) belonging to 85 schools in four Spanish autonomous communities (Castilla y León, Community of Madrid, Andalusia and Community of Valencia). We used an instrument made up of 25 items evaluating both dimensions (Cronbach's α = 0.961). We conducted descriptive and differential analyses (applying ANOVA and calculating the effect size) overall and for the assessments by heads and teachers.

Findings

Results show a higher impact in small private schools with state subsidies, with 9–11 years of ISO implementation and receiving internal aid or none at all. The impact was medium–high on the management and planning system and medium–low on support and recognition, with heads evaluating at a significantly higher level the impact of ISO 9001 standards on improvement of preparation of classroom timetables, meetings, analysis of staff expectations and recognition of staff achievements.

Originality/value

Implementation of quality management systems in education has increased significantly in the last decades, and it is thus necessary to find evidence on how the resulting improvements are generated in schools. This study provides conclusions to the scientific and professional community about how school heads and teachers perceived the impact of implementing ISO 9001 standards on the dimensions management and planning and support and recognition.

Abstract

Purpose

In the current education context, quality management has increasingly become a key element and more educational organizations are deciding to implement a Quality Management System. Because there are so few studies on the impact that implementation has on educational institutions, the main objective of this paper is to profile educational centers on the basis of their implementation of ISO 9001 quality standards.

Design/methodology/approach

Specifically, this was done by taking a sample of 83 educational centers from four regions of Spain (Comunidad de Madrid, Castilla y León, Andalucía and the Comunidad Valenciana) and analyzing assessments made by teachers and members of the center Management Teams (2,132 subjects in total). The first step was to carry out a number of descriptive and differential studies globally, analyzing 8 broad dimensions: Communication System, Management, Support and Recognition, Learning Process, Quality, Climate, Satisfaction, and External Relations. A cluster analysis was then performed to identify center profiles in terms of the degree of impact from their having implemented ISO 9001 standards.

Findings

The results show that the impact of is greater in educational centers in Comunidad Valenciana and Andalucía with 9–11 years of implementation, with internal financial aid or funding, and at charter centers.

Originality/value

The cluster analysis reveals three clearly differentiated profiles (with high, medium, and low degrees of impact) in the different dimensions evaluated in the study.
