Abstract

Purpose

The purpose of this paper is to explore the pertinence of using an integrated conceptual framework based on several theories and models to guide interviews with adults and youth as a prelude to school nutrition policy (SNP) deployment.

Design/methodology/approach

Appropriate socio-behavioral and communication theories and models within a social marketing approach were used to build the integrated conceptual framework of this study. The target population consists of 115 multidisciplinary key stakeholders in Lebanon. Directed and semi-structured individual interviews and focus groups were conducted by using questionnaires associated with the variables of the framework. Collected data have been submitted to a thematic qualitative analysis.

Findings

Combining theories and models increases the potential for understanding the broader determinants of SNP deployment. It is important to choose a holistic theoretical perspective: to study key stakeholders’ perceptions of the facilitators and barriers of SNP development and implementation, to emphasize the active participation of communities and to guide the work of policy and decision makers.

Practical implications

This research offers perspectives on determinants factors envisaged in the deployment of SNP that help key stakeholders in their promotion and communication practices.

Social implications

For public policy makers, this research suggests a need to address communities perceptions’ of an eventual SNP deployment.

Originality/value

The comprehensive integrated conceptual framework proposed in this study amalgamates several variables involved in the process of health promotion under various categories to facilitate SNP deployment.

Abstract

Purpose

The purpose of this paper is to explore associations between different food literacy dimensions and diet quality among a sample of Canadian parents and examine differences in the prevalence of food literacy items between mothers and fathers.

Design/methodology/approach

Parents responsible for food preparation (n=767) completed an online survey including dietary intakes and 22 items across five dimensions of food literacy (knowledge, planning, cooking, food conceptualisation and social aspects). Differences between genders for each item were analysed with χ2 tests. The healthy eating index (HEI) adapted to the Canadian Food Guide (CFG) was computed from a food frequency questionnaire. Associations between HEI scores and each item were analysed with linear regression models, controlling for sociodemographic variables and multiple testing.

Findings

Of parents responsible for food preparation, 81 per cent were mothers. The mean HEI score was 76.6 (SD: 10.6) and mothers reported healthier diets in comparison to fathers (p=0.01). More mothers than fathers used CFG recommendations, selected foods based on nutrition labels, made soups, stews, muffins and cakes from scratch and added fruits and vegetables to recipes (p<0.05). More fathers reduced the salt content of recipes than mothers (p=0.03). Two knowledge items and seven food conceptualisation items were significantly associated with better HEI, after controlling for covariates and multiple testing. Planning items, cooking skills and social aspects were not significantly associated with HEI.

Originality/value

This study investigates multiple dimensions of food literacy and identifies knowledge and food conceptualisation as potential targets for future interventions involving parents responsible for household meal preparation. This study highlights the importance of considering gender differences in food literacy.

Abstract

Purpose

The purpose of this study is to explore the continuity and/or rupture in food motivations as revealed from documents issued from Châtelaine in 1960‐1961, 1970, 1980 and 1990.

Design/methodology/approach

A historical content analysis was used to explore the food motivations in Châtelaine. A total of 51 issues were read and all documents referring to food and nutrition were photocopied except for advertisements. Variables associated with each document were grouped into four themes: health and diseases, food and nutrition, body and society. Descriptive statistics were conducted using SPSS (version 10.1, 1999).

Findings

Overall, the content analysis has indicated that food and nutrition is the dominant motivation (n  =  430) followed by health and disease (n  =  292), society (n  =  71) and body concerns (n  =  70). Each decade was associated with major sub‐themes. In brief, 1960 was the year of food, family and tradition; 1970 was the transition year; 1980 was the year of knowledge, culpability and environment; 1990 was the nutritional education year.

Research limitations/implications

Study done using the first year of each decade and in a single magazine cannot be generalized. Moreover, these results are specific to a French‐Canadian context. Further research on other media could provide more insight into some of the relationships explored in this study.

Originality/value

The findings suggest that the dominant motivations are projecting in a different way from one year to another. These results support the need to take into consideration the role of media in shaping women's food preferences and the evolution of these motivations over time.

Abstract

Purpose

The purpose of this study is to examine the potential of the internet to address nutrition topics.

Design/methodology/approach

From a survey posted on the Dietitians of Canada Website, 870 questionnaires were retained. Subjects indicated how frequently they used different sources to obtain information on healthy eating and what level of confidence they had in these sources. They also identified nutrition topics which were of the most interest to them.

Findings

Internet was reported to be often used as a source of nutrition information by 40 per cent of respondents, from time to time by 47 per cent of respondents and rarely or never by 14 per cent of them. In terms of credibility, 34 per cent of respondents reported being very confident in internet as a source of nutrition information, 62 per cent being slightly confident and 4 per cent being not confident at all. Findings were obtained between nutrition topics, frequency of use of the Web as a source of information and the level of confidence in the internet.

Research limitations/implications:

Future research on differences in terms of how populations from different countries search for and assess the credibility of nutrition information on the Web is required.

Originality/value

Among the possible ways of informing consumers on food and nutrition issues properly and in time, the Web technologies represent an interesting avenue. However, our findings suggest that specific nutrition topics dictate different strategies if internet can be used as a source of information.

Abstract

In 2002, Story et al. proposed an ecological model for understanding the individual and environmental factors that influence young consumers’ eating behaviors. The theoretical framework suggests that eating behavior is a function of four levels of influence: individual, interpersonal, environmental and societal. The objective of the study is to explore how these levels of influence may explain strategies used by ten‐year‐old children to influence parental decisions on food purchasing. A self‐administered questionnaire was filled out by children. Gender differences were observed in terms of eating environment, social motivations to select foods and use of specific persuasive strategies. The results obtained contribute to our knowledge on interpersonal influences on children’s consumer behavior and on individual differences in consumer socialization. Practical implications are presented and recommendations for future research are made.

Abstract

Purpose

The purpose of this paper is to shed more light on the motivations for environmental, social and governance (ESG) risk management by agri-food companies and the neutralization techniques used to legitimize the measures taken in this area.

Design/methodology/approach

Based on an analysis of the sustainability reporting of 135 companies, this study shows the interdependence between the main motivations for ESG risk management and the neutralization techniques used in disclosing information about their exposure to threats or negative events that could damage their image.

Findings

The results of the study allow us to understand the four main complementary neutralization techniques used to obfuscate the negative consequences of risks related to agri-food activities: mitigating ESG threats, addressing global risks through corporate leadership, taking advantage of sustainability trends and turning risks into opportunities.

Practical implications

Managers can use the results of this paper to identify the best management approaches to take ESG risks into account more substantially in their company.

Social implications

Ultimately, this study is important to improve the practices of agri-food companies and therefore their social legitimacy.

Originality/value

The examination of these neutralization techniques and their underlying motivations makes important contributions to the emerging literature on ESG risk management. The study also contributes to research on the disclosure of negative information that can damage a company’s reputation and on the strategies that companies use to promote the social acceptability of their activities.

Abstract

While going through a revival in sociology and business studies, the concept of communities, as used in those disciplines, appears to confront, in an unresolved tension, the development of differentiated and transnationally interconnected modern societies. We argue that there is a need not only to “rediscover” but in fact also to “renew” the notion of community. Building on insights from classical sociology, we propose a definition of transnational communities as social groups emerging from mutual interaction across national boundaries, oriented around a common project or “imagined” identity. Transnational communities are not static structures but fluid and dynamic processes. They are constructed through symbolic or “imagined” proximity rather than through physical propinquity. More often than not, they are “communities of limited liability” rather than the expression of permanent ascriptive markers. Finally, transnational communities go well beyond the provision of local protection and solidarities as they engage in different kinds of transnational activism. This chapter compares bottom-up and top-down patterns of transnational community development, exploring in both cases the role of those communities in the dynamics of transnational governance. We propose that transnational communities impact cross-border governance in at least six different ways. They contribute to the framing of a governance problem space. They allow the mobilization of collective action while also serving as public arenas. They foster preference transformation. They directly participate in rule-setting while also playing a key role when it comes to monitoring and control. In conclusion, we identify key directions for further research.

Abstract

The following list is a first attempt to catalogue and describe systematically the British Museum's extensive holdings of early opera librettos and related plays. The great importance of these unpretentious booklets as supplementary and, more often than not, even primary sources for the history and bibliography of dramatic music, besides or instead of the scores, was already clearly recognized in the eighteenth century by Dr. Burney and other scholars. But it is only since 1914, the year in which O. G. T. Sonneck's Library of Congress Catalogue of opera librettos printed before 1800 appeared, that their documentary value could to any greater extent be put to general use in international musicological research. A similar bibliography of the British Museum librettos, while naturally duplicating many Washington entries, would produce a great number of additional tides, not a few of them otherwise unrecorded; it would provide the musical scholar with the key to a collection unequalled elsewhere in Europe, which owing to the peculiar nature of the material is not easily accessible by means of the General Catalogue.

Abstract

In this chapter, we consider the tensions that arise at the intersection of various organizational units (i.e., academic departments, research centers, and administrative areas) and actors (i.e., professors, graduate students, investors, and secular entrepreneurs) that are commonly involved with academic entrepreneurship and the exploration of the entrepreneurial dimensions of science. Using the premises of organizational boundary spanning (e.g., Aldrich & Herker, 1977; Thompson, 1967; Tushman & Scanlan, 1981), we organize our discussion around the role of university entrepreneurship and innovation centers in facilitating and mediating the interorganizational transactions that most often underpin academic entrepreneurship. Specifically, we illustrate and discuss the role university entrepreneurship and innovation centers play in (1) managing the various agendas and expectations of stakeholders within and outside of the academy, (2) providing clarity of purpose to the entrepreneurial endeavor, (3) clarifying ownership rights throughout the entrepreneurial process, and 4) maximizing the potential of individuals to contribute to venture success.
