Abstract
Urban food markets have been receiving increased attention over the last few decades. Their role as cohesion centres of the local community and in the urban regeneration of cities was especially pronounced. Nowadays, these public spaces are also acting as a valuable tourist resource as well, attracting tourists to experience both the tangible and intangible heritage of the destination. Exposed to considerable tourism pressure, urban food markets in one of the most recognised destinations in global scale (such as Barcelona) have undergone through different phases in their development, going from traditional, sustainable, and eventually touristified urban food markets. For the purposes of this book chapter, proposed types of urban food markets in Barcelona are depicted based on the common urban food market tourist drivers and effects of the (gastro)gentrification process.

Abstract
This study aims to analyse the extent of online social responsibility (SR) information disclosure by Portuguese municipalities and to identify related determinant factors, based on Institutional Theory and Legitimacy Theories.
A content analysis was performed on webpages from 60 sampled municipalities, and an information disclosure index was created.
Descriptive statistics obtained indicate the Total Disclosure Index (TDI) value was 0.46. The Economic Information sub-category exhibits the highest value (0.66), followed by the Social and Environmental Information categories (0.61 and 0.36, respectively).
The multivariate analysis results indicate that LA21 implementation the existence of tax burdens, the characterisation of a municipality as urban and environmental/SR certification application positively influence SR information disclosure. TDI is negatively affected by the existence of an inactive population (i.e. by the percentage of individuals ≤19 and ≥65 years of age).

Abstract
Purpose
This paper integrates the action phase theory (APT) and the theory of planned behaviour (TPB) to analyse the dynamic mechanisms involved in the configuration of goals and implementation intentions throughout the entrepreneurship process.
Design/methodology/approach
The empirical analysis compares individuals in different phases of this process (not yet decided, potential and nascent entrepreneurs). A large sample of adults from Spain is analysed. Structural equation models and multi-group analysis (MGA) serve to test the hypotheses.
Findings
The results confirm that perceived behavioural control (PBC) is the most influential antecedent of entrepreneurial goal intention (EGI) in pre-actional phases (undecided and potential entrepreneurs), whilst attitude towards entrepreneurship (ATE) takes this role during nascency. Subjective norms (SNs) are more important in Phase 1 (establishing the goal) and in Phase 3 (performing nascent behaviour).
Originality/value
This study contributes to both the TPB and the APT. It provides the most relevant insight into the mental process that leads to starting up and helps explain certain previous conflicting results found in the literature. Additionally, it has important implications not only for theory building but also for support bodies and for entrepreneurship educators.

Abstract
Purpose
Continuous training in professional teaching competencies has become one of the challenges of the school of the 21st century, especially if we refer to the mastery of digital competence. The aim of this study is to analyze the degree of digital competence of secondary school teachers of different areas of knowledge during the global pandemic of COVID-19 in the Galician autonomous community and obtain data that allow us to infer whether there is an association between individual variables such as age, gender, degree, work experience and their mastery of digital competence.
Design/methodology/approach
A cross-sectional descriptive quasi-experimental study is performed using an accidental sample of secondary school teachers from different fields of knowledge.
Findings
The different results obtained determine that the level of knowledge and use of digital media and tools is low. There are no significant differences depending on the variables analyzed, but it is necessary to establish specific continuing education plans for the improvement of digital competence in secondary school teachers to enable the effective use and management of information and communication technologies in future professionals.
Originality/value
Therefore, the findings of this study allow the development of educational interventions focused on increasing the digital competence of teachers, taking into account their individual characteristics.

Abstract
Purpose
Human capital (HC) represents a particularly important element capable of guiding the firms’ value creation process in the new economy. The purpose of this study is to analyze the level of HC information contained within integrated reports and to identify the variables that influence the HC disclosure policies of companies.
Design/methodology/approach
Research hypotheses, developed on the basis of agency theory, were tested using a regression model on a sample of 137 worldwide companies. A HC disclosure index was designed to examine the level of HC disclosure and a content analysis was used to investigate the integrated reports.
Findings
Results showed a positive and significant impact of firm size, board size, board independence and board diversity on the level of HC information disclosed by companies within their integrated reports. On the contrary, they demonstrated a not significant effect of firm profitability.
Practical implications
Results have important implications for corporate executives, high-level corporate governance, policymakers and investors. They point out additional further motivations for creating larger boards and including non-executive members and women on the board. In addition, investors could use the HC disclosure index to evaluate companies’ HC disclosure policies in their investment decisions.
Originality/value
This study extends the agency theory application scope and extends the analysis of HC disclosure to other corporate documents, namely, integrated reports. Besides, it increases knowledge about the factors capable of influencing HC disclosure, identifying a series of elements capable of directly affecting the level of information that companies disclose.

Purpose
Food markets have gathered a growing attention by tourism researchers and practitioners in recent years. Many destinations have placed food markets as a tourism attraction which allows visitors to discover a territory through its food. Drawing on the understanding of markets as identity and tourism icons, this paper aims to analyze the role of urban food markets in the different stages of the tourist experience from a visitor perspective.
Design/methodology/approach
To achieve this, a qualitative design was implemented to interview 18 tourists who visited for the first time the city of Palermo, the capital of the Mediterranean island of Sicily, Italy.
Findings
The results of this study show the factors that drive the motivations, the experiences and the satisfaction of visitors to food markets and provide relevant perspectives into the management and marketing of food tourism in urban environments.
Originality/value
The originality of this paper lies on the understanding of the relationships between visitor experiences and urban food markets.

Abstract
The current state of globalization is aggravating the inequalities within globalized cities and is generating a high degree of conflict. If we seek to find out to what extent ghettos, agents in conflict or if there is a situation of unsustainable imbalance caused by this degree of inequality, we should consider the objective data and the social consciousness of stratification enclosed in social interaction of the people living in neighborhoods in global cities. This chapter explains how we can study this topic with an example: a town in the Metropolitan Area of Madrid in 2012, with a theoretical perspective that asks about how the human space is today and how everybody builds his social identification, and a methodology that uses the problem-centered interview to collect data. From this perspective, it is discussed whether the new urban social structure tends to be dual or fragmented. When social awareness is studied, it may be understood that urban people tend to develop fragmented identities today based on leisure and family that bond everyone with other by small groups or weak bonds. However, into a poor urban area, there are other boundaries that a lot of people recognize based on class and ethnic differences that mean polarization and conflict, but these ones work only in particular problematic situations. So, the image of system of stratification in large cities appears to be a dynamic thing, under the influence of a series of different factors which are not only global but also local.

Abstract
Purpose
This papers aims to study lattice structures in terms of geometric variables, manufacturing variables and material-based variants and their correlation with compressive behaviour for their application in a methodology for the design and development of personalized elastic therapeutic products.
Design/methodology/approach
Lattice samples were designed and manufactured using extrusion-based additive manufacturing technologies. Mechanical tests were carried out on lattice samples for elasticity characterization purposes. The relationships between sample stiffness and key geometric and manufacturing variables were subsequently used in the case study on the design of a pressure cushion model for validation purposes. Differentiated areas were established according to patient’s pressure map to subsequently make a correlation between the patient’s pressure needs and lattice samples stiffness.
Findings
A substantial and wide variation in lattice compressive behaviour was found depending on the key study variables. The proposed methodology made it possible to efficiently identify and adjust the pressure of the different areas of the product to adapt them to the elastic needs of the patient. In this sense, the characterization lattice samples turned out to provide an effective and flexible response to the pressure requirements.
Originality/value
This study provides a generalized foundation of lattice structural design and adjustable stiffness in application of pressure cushions, which can be equally applied to other designs with similar purposes. The relevance and contribution of this work lie in the proposed methodology for the design of personalized therapeutic products based on the use of individual lattice structures that function as independent customizable cells.

Abstract
Purpose
Gastronomy can be a key destination choice factor. As tourists, people will be able to learn more about the culture of the place through its culinary assets. This paper aims to analyse the interest and the gastronomic motivations of tourists to the city of Granada (Spain), where two important UNESCO World Heritage Sites (WHS) are included.
Design/methodology/approach
To achieve the aim of this study, fieldwork was carried out on a representative sample of tourists in Granada (Spain). Specifically, a total of 1,612 valid surveys were filled out in culinary establishments and historical sites. In these surveys, the opinion of tourists regarding gastronomy and their motivations when travelling was assessed.
Findings
The results of this research allow to make a segmentation of tourists into three groups according to their position and their interest in gastronomy based on their destination choice, distinguishing among survivors, enjoyers and experiencers’ tourists. Additionally, it is confirmed that gastronomy is shaped as a motivation that influences the level of tourist satisfaction, performing as a differentiating element that can help increase the competitiveness of the destination.
Originality/value
This research contributes to the scarce academic literature on tourism experiences in a city with WHS recognitions. This study confirms the existence of a relationship between gastronomic motivations and the level of satisfaction achieved by tourists who visit the city of Granada, where no similar studies were found. In addition, this work confirms the connection between gastronomy and culture.
