Abstract

FROM the very beginning of their career as aircraft engine builders in 1915, Messrs. Rolls‐Royce have held the view that any sacrifice of efficiency in the interests of expediency was not permissible. It was for this reason that water‐cooling was adopted from the outset and has been developed continuously up to the production of their latest “F” and “H” engines, which form the subject of this article.

Abstract

The inaugural meeting of the newly established National Party was held in the Queen's Hall, Langham Place, on Thursday, October 25th, under the presidency of Admiral Lord Beresford. There was a large and distinguished audience numbering about 3,000 persons, among those on the platform being Lord Montagu of Beaulieu, Brigadier‐General Page Croft, M.P., Mr. Havelock Wilson, Miss Constance Williams, the Hon. Abstract

In a previous article we had occasion to refer to and to condemn the standards for jams, jellies and marmalade which had been arrived at as the result of a conference which had taken place during the year 1930 between the Jam Panel of the Food Manufacturers' Federation and certain members of the Society of Public Analysts and other Analytical Chemists. There is another point in connection with these standards which we think might have received the attention of this Conference. At the present time everyone is being exhorted to buy British goods on the grounds, it may be supposed, that such purchases are patriotic in character and good for trade. But to speak quite frankly, if these jams are to be taken as a fair example of British skill and enterprise, the legend “Buy British” leaves us cold. What, then, is a British jam? Is there such a thing? If by the term we mean a jam made of sound British grown fruit which gives the name to the jam mixed with an equal weight of sugar, it would seem to be a rarity. Some fruits we cannot grow. Hence Scotch marmalade is a fair enough term to use, assuming of course that the orange is of the right sort and in the right quantity. The same thing applies of course to apricot jam. The greater number of our best known jams are made from fruit that, whatever may be its origin, can be grown here and grown better here than elsewhere— strawberry, raspberry, plum, gooseberry. We say unhesitatingly that there is no need under any circumstances to buy the pulp of these fruits or the fruits themselves abroad when it is of immediate interest to the health and pocket of the consumer, the prosperity of the home fruit grower and ultimately to the trade itself to buy them at home. In a report issued in 1927 on Fruit Marketing in England and Wales issued by the Board of Agriculture it is stated that the manufacture of jam is the “backbone” of the fruit‐growing industry. It is further stated that 90 per cent. of the home grown raspberry crop, 60 per cent. of the strawberry and 40 per cent. of the plum are or were at that time purchased by the manufacturers of jam. We say “at that time” because the figures in all probability relate to the conditions in force up to 1926, and that year it seems began to mark an increase in the amount of fruit pulp imported from foreign countries. The fact that pulp was being imported in large amount previous to that year is noted in the report whose title is given above, 90 per cent. of the home grown raspberry crop available for the manufacture of jam is used, but what is to be thought of the figure given for plums? In connection with this we need only quote the remarks of Lieut.‐Col. Ruggles Brise which he made during the debate in the House of Commons on the terms of the Resolution.

Abstract

According to a report issued by the Director of the Chemical Laboratory of the Department of Police in Berlin which has reached the Journal of the American Medical Association, some interesting exhibitions of German “culture” in the matter of food frauds have been afforded during the war. We do not know the origin or the justification (if any) of the ancient proverb that there is “honour among thieves.” Evidently, however, even this form of “honour,” if it exists, does not exist among the Huns, since the criminal in the German lines is hocussed by the huckster‐criminal in the German fake‐shop. One of the articles supplied to stimulate the Hun in the doing of those deeds of Hunnish valour peculiar to himself is known as “solid alcohol,” advertised as a substitute for familiar alcoholic beverages, and consisting of cubes of gelatin to which brandy and sugar are supposed to have been added before the mixture has solidified. The directions are to pour hot water on these cubes, whereupon one obtains a sweetish fluid, weak in alcohol, and possessing the objectionable flavour of glue. The longer the cubes are kept the greater is the tendency of the alcohol originally present to disappear by evaporation, so that the supposedly invigorating “solid brandy,” never at any time a representative product, becomes weaker and weaker in alcoholic strength. In some cases the cubes have been replaced by collapsible tubes of semi‐gelatinous mixtures containing some brandy and advertised for use in the same way with hot water. The price of two‐ounce tubes varies from 25 to 35 cents. The alcohol content has gradually been reduced by the manufacturers, and one firm went so far as to introduce brandy substitutes and substances of a “peppery” nature to simulate the “warmth” of a dose of brandy. Painful lesions about the mouth have been reported by Germans on the march who were unable to wash out the disgusting mixture that was sent to them by their friends. Other “substitutes” for alcoholic beverages were found to consist of cubes of sugar coloured with coal‐tar dyes mixed with tartaric acid. Grosslv adulterated coffee and cocoa have likewise been supplied in tablet form. One popular brand was sold at the rate of 12 marks per pound. Coffee has been often replaced by chicory mixed with sugar. 500,000 kilograms of cocoa husks found their way into the market in Hamburg alone. Tablets alleged to be made of dried milk, but being nothing of the kind, have been sent in enormous quantities.

Abstract

FINANCIAL fears are only less cruel than those of war, and lead men into extravagances which they would repudiate indignantly in their cooler moments. If the doings of the Economy Committee at Manchester in relation to children's libraries, as described in the article by Mr. Lamb in our last issue, are true, we have in them an example of a kind of retrenchment at the expense of the young which we hope is without parallel and will have no imitators. Some reduc‐tion of estimates we hear of from this or that place, but in few has the stupid policy which urges that if we spend nothing we shall all become rich been carried into full effect. Libraries always have suffered in times of crisis, whatever they are; we accept that, though doubtfully; but we do know that the people need libraries.

Abstract

The Library Association of Ireland issued last month the first number of An Leabharlann, their new official journal. The title, for those of us who do not speak the language of Erin, means The Library. It is an extremely interesting venture which will be followed by librarians on the mainland with sympathetic curiosity. In particular our readers would be interested in the first of a series of articles by Father Stephen J. Brown, S.J., on Book Selection. The worthy Father lectures on this subject at University College, Dublin, in the Library School. It is mainly concerned with what should not be selected, and deals in vigorous fashion with the menace of much of current published stuff. No doubt Father Brown will follow with something more constructive. Mr. T. E. Gay, Chairman of the Association, discusses the need for a survey of Irish libraries and their resources. We agree that it is necessary. The Net Books Agreement, the Council, Notes from the Provinces, and an article in Erse—which we honestly believe that most of our Irish friends can read—and an excellent broadcast talk on the Library and the Student by Miss Christina Keogh, the accomplished Librarian of the Irish Central Library, make up a quite attractive first number. A list of broadcast talks given by members of the Association is included.

Abstract

At a recent meeting of the Glasgow Grocers' and Provision Merchants' Association, it was alleged that there are provision merchants in Glasgow who are doing a large business in selling margarine as butter at 1s. 2d. per pound. In commenting upon this statement The Grocer very properly urges that the officials of the Association referred to should take prompt steps to place the facts in their possession before the Glasgow authorities and their officers, and observes that in certain cities and towns—Birmingham, for example—the grocers' associations have co‐operated with the authorities in their efforts to suppress illegal trading, particularly in regard to the sale of margarine as butter. It appears that one of the members of the Glasgow Association expressed the opinion that the Margarine Act has been a failure and that shopkeepers who sell margarine as butter should be charged with obtaining money under false pretences.

Abstract

THE question of display in libraries becomes more important with the days. It is therefore a peculiar pleasure to us to publish a fine article by Mr. Savage on this. From his earliest days the ex‐President has been deeply and practically interested in book‐display. We believe that nearly forty years ago he and Mr. Jast worked out many experiments in it which are occasionally revived by those who have quite forgotten their origin. He was, we think, the first librarian here to take an ordinary shop as a branch library and dress its window as if it were a bookshop. Before him few English libraries used colour to any extent, or were aware of the aesthetic value of plants, flowers, curtains and well‐shaped furniture.

Abstract

On May 12th the case for the abolition of night baking from the operatives' point of view was placed before the Committee appointed by the Government to investigate the subject under the chairmanship of Sir WILLIAM MACKENZIE. MR. BANFIELD, the General Secretary of the Union of Operative Bakers, Confectioners and Allied Workers, said there was a general demand for legislation prohibiting night work. Bakers looked old before their time, and the Chairman of the Richmond Tribunal had stated that no baker passed A1 had ever been before him. Witness urged that new bread was not so important as the health of the night worker, although new bread could be supplied under a system of day work. The only ground for night work was that it was in the interests of certain employers, but he said that 80 per cent. of the employers had enough ovens and plant to carry on a system of day work. He suggested the prohibition of night baking between the hours of 11 p.m. and 5 a.m., with legal provision for an extension of the prohibited hours at intervals. He added that 90 per cent. of the operative bakers would prefer day work. Continued night work was bad for the health of the baker. The returns showed that the rate of mortality from bronchitis among working bakers was abnormally high. This was due to the constant change from a heated atmosphere to a cooler one. The mortality from phthisis was slightly higher than the average, while the figures for suicide were considerably higher than the average Replying to the Chairman, MR. BANFIELD said that there need be no increase in the price of bread if night baking was prohibited, as any expense which might be occasioned to the employer could come out of the profits the employer now put into his pocket, instead of using it to extend his plant. His experience was that the bulk of the bread was not sold till late in the afternoon. Witness desired the abolition of the order prohibiting the sale of bread less than twelve hours old. He said that if the order was rigidly enforced it would itself solve the problem of night baking. He did not think, however, that there was sufficient justification for continuing the order, which, in his opinion, should be revoked and replaced by an enactment prohibiting night‐baking. The order, he said, was fairly extensively ignored, simply because, in his opinion, the local food committees refused to prosecute, or would not inspect. MR. CANNON, the owner of fifty bakers' shops in working districts of London, declared that the waste of bread resulting from the order prohibiting the sale of bread less than twelve hours old was enormous. The Food Controller in introducing the order, had introduced a new business—the stale bread industry, which consisted in the buying up of stale bread. He was not prepared to say what was done with it but it was not being used as bread. A strike of bakers would be futile as it would simply mean that housewives would bake their own bread, and after a little practice they would do it better than any baker.
