Abstract
Purpose
The study aimed to assess the digital literacy skills of the students of Sacred Heart College, Chalakudy, to know whether they possess the digital literacy skills to perform well in the digital environment. The study also analyzed how digital literacy skills were affected by various factors.
Design/methodology/approach
The study used stratified random sampling technique, and data were collected through a self-assessment survey using an online questionnaire designed based on DigComp 2.1: The Digital Competence Framework by the European Commission.
Findings
The results indicated that the college students needed training on digital literacy skills, as the majority students had only moderate to low digital literacy skills. It was proven that exposure to technology and the Internet will not necessarily yield skills to perform well in the digital environment. Also, digital literacy skills were not affected by various factors like age, level of study, etc.
Practical implications
The study helped to identify the digital literacy deficiencies in the students of Sacred Heart College, and it can serve as a valuable model for conducting similar investigations in diverse educational institutions. Conducting such studies offers institutions valuable insights, enabling them to create and implement personalized digital literacy training programs that can enhance students' abilities to navigate the digital landscape with proficiency and effectiveness. The study results can be insightful for educators, policymakers and the Kerala Government to reassess the current approaches and design an effective curriculum for integrating technology in education.
Originality/value
Although there are several studies that evaluated college students’ digital literacy in India and other countries, there are very few studies in the context of Kerala. Therefore, this study is distinctive and will serve as an example for all such studies in the future.

Abstract
The connection between critical thinking and students' reliance on Artificial Intelligence (AI) has been examined in this chapter. While there are many educational advantages to AI technology, it has been demonstrated that a heavy dependence on it may impair autonomous problem-solving and critical thinking skills. The research highlights the necessity of incorporating a critical thinking approach into educational programs to assist students in scrutinizing, analyzing, and assessing AI technologies. For data analysis descriptive and correlational analysis were conducted to test the research hypothesis. Furthermore, by honing their critical thinking skills, students will be able to question data supplied by AI, recognize potential biases, assess the validity of sources, and make defensible conclusions. Additionally, the findings show a positive relationship between using AI and critical thinking toward transformation of innovative learning. This study highlights the importance of critical thinking abilities in navigating an AI-driven society by demonstrating a link between higher critical thinking capabilities and a stronger desire to employ AI technology. It is advised that lawmakers and educational institutions give the integration of critical thinking abilities in curricula top priority considering these findings. Furthermore, future studies should focus on the difficulties in integrating AI into classroom environments and the long-term impacts of a critical thinking approach on AI dependence. This chapter's main contention is that critical thinking is necessary for the ethical use of AI, autonomous reasoning, and independent decision-making.

Abstract
This chapter studies the effects of the COVID-19 pandemic on the economic structure of the US and EU economies by measuring its impact on some reference macro-economic variables. We use a factor model approach on a set of variables available at different frequencies (daily, weekly, monthly, and quarterly) and provide evidence of instability in the primary factors driving the economy. A sequential analysis of the factors allows us to evaluate the model's forecasting performance and extract some instability measures based on the factor model's eigenvalues. Finally, we show how to use COVID-related variables, such as policy, economic, and health indicators, to compute conditional forecasts with factor models, and perform a scenario analysis on the variables of interest to understand economic instability.

Abstract
This study investigates the relationship between lean manufacturing practices, management accounting and performance measurement (MAC & PM) practices, organizational strategy, structure, and culture, and facility performance. We extended past research by examining the relationships between lean manufacturing, MAC & PM practices and performance in a broader organizational context. Our study was performed using survey data provided by managers and executives at 368 facilities that had contacted the Shingo Institute for information or that had entered a Shingo Prize competition. Consistent with past research we found a significant positive association between lean manufacturing practices and lean MAC & PM practices. We found that greater employee empowerment, use of process performance measures, and use of lean accounting practices were driven primarily by lean strategy and secondarily by the extent of lean manufacturing practices. We also found that changes in organization structure to support lean are driven primarily by lean strategy and secondarily by lean manufacturing practices. Change toward lean culture, on the other hand, is driven by the extent of lean manufacturing practices. Further, we found that emphasizing process performance measures does not reduce emphasis on results performance measures and emphasizing results performance measures leads to improved financial performance. Process and results measures are being used in tandem and value stream costing has not replaced traditional accounting. The results of our study provide important insights for managers of companies engaged in lean transformation and for academics who teach or research lean accounting.

Abstract
Purpose
The purpose of this paper is to apply okara flour in the elaboration of a product, verifying the effect of the fermentation by Lactobacillus plantarum BG 112 on the antihypertensive activity and to develop probiotic sauce with gums and low lipid content.
Design/methodology/approach
During the fermentation process, the inhibitory activity of angiotensin-converting enzyme (ACE) and production of organic acids were determined. The simplex-centroid mixture of guar gum, xanthan gum and pregelatinized cassava starch was used for studying the variables water holding capacity, viscosity and firmness. Counts of probiotics and in vitro survival of probiotics in simulated gastrointestinal conditions were made.
Findings
The fermented soymilk showed ACE inhibition capacity above 50 percent with 32 h of fermentation, increasing the levels of lactic acid and acetic acid progressively. Based on the regression analysis and response surfaces, the binary mixture with guar gum and xanthan was chosen as the most suitable for the formulation of the sauce, having over 30 days of storage counts above 8.5 log CFU.g−1 and above 6 log CFU.g−1 after simulation of gastrointestinal conditions. The global acceptance was 7.0 corresponding to the moderately liked.
Practical implications
The findings suggest that the sauce developed has been well accepted by potential consumers and can be incorporated into the diet and can result in health benefits for the consumer when regularly ingested. The fermentation process of soymilk promoted an increase in antihypertensive capacity. Despite the reduction in viable cell counts throughout storage, counts remained high in the product, having a high survival rate after exposure under simulated gastrointestinal conditions.
Originality/value
The use of okara flour in the diet is viable and helps to improve the nutritional composition of foods. The use of okara flour in sauce showed potential applicability and could be incorporated into different products. The fermentation process of soymilk with okara flour produces benefits beyond the sensorial characteristics. The elaborated probiotic sauce presented physical–chemical and microbiological stability throughout the storage, being an alternative for people with food restrictions.

Abstract
Purpose
The aim of this research is to study the role and formation of hydration products particularly crystalline portlandite Ca(OH)2 in MWCNT-reinforced concrete at 28 days. Concrete is the largest manufactured building material in world in which cement, sand aggregates and water cement ratio plays governing role. Water–Cement ratio decides it strength, usage, serviceability and durability. As strength of concrete depends on formation of crystalline hydrates; therefore, water–cement ratio can alter formation of hydrates also. Unfortunately, concrete is the most brittle material and to overcome brittleness of conventional concrete is tailored with some fibers. Till now, multiwalled carbon nano tubes are the most tensile and strongest materials discovered. Addition of multiwalled carbon nano tubes changes basic properties of conventional concrete. Therefore, it is important to evaluate formation of crystalline hydrates in multiwalled carbon nano tube–reinforced concrete by micro structure analysis.
Design/methodology/approach
Till now, multiwalled carbon nano tube–reinforced concrete has not been analyzed at micro structure level. To accomplish the objective, four concrete mixes with 0.45, 0.48, 0.50 and 0.55 water–cement ratio having 0.5 and 1% multiwalled carbon nano tubes incorporated by weight of cement, respectively. For hardening property analysis, compressive strength was obtained by crushing cubes; flexural strength was obtained by three-point loading; and split tensile strength was obtained by splitting cylindrical specimens. For analyzing role and formation of crystalline portlandite Ca(OH)2 hydrates, X-ray diffraction test was conducted on 75-µ dust of each mix. Scanning electron microscopy analysis was performed on fractured samples of crushed cubes of multiwalled carbon nano tube–reinforced concrete samples to check aggloremation.
Findings
It was observed multiwalled carbon nano tubes successfully enhanced compressive strength, flexural strength and split tensile strength by 8.89, 5.33 and 28.90%, respectively, in comparison to reference concrete at 0.45 water–cement ratio and 0.5% multiwalled carbon nano tubes by weight of cement. When its content was increased from 0.5 to 1% by weight of cement compressive strength, flexural strength and split tensile strength diminished by 2.04, 0.32 and 1.18%, respectively, at 0.45 water–cement ratio. With the increment of water–cement ratio, overall strength decreased in all mixes, but in multiwalled carbon nano tube–reinforced concrete mixes, strength was more than reference mixes. In reference, concrete at 0.45 water–cement ratio crystalline portlandite Ca(OH)2 crystals are of nano metre size, but in carbon nano tube–reinforced concrete mix having 0.45 water–cement ratio and 0.5% multiwalled carbon nano tubes by weight of cement, its size is much smaller than reference mix, thereby enhancing mechanical strength. In reference, concrete at 0.55 water–cement ratio size of crystalline portladite Ca(OH)2 crystals is large, but with incorporation of multiwalled carbon nano tubes, their size reduced, thereby enhancing mechanical strength of carbon nano tube–reinforced concrete having 0.55 water–cement ratio and 0.5 and 1% multiwalled carbon nano tubes by weight of cement, respectively. Also at 1% multiwalled carbon nano tubes by weight of cement, agglomeration and reduction in formation of crystalline portlandite Ca(OH)2 crystals were observed. Multiwalled carbon nano tubes effectively refine pores and restrict propagation of micro cracks and act as nucleation sites for Calcium-Silicate-Hydrate phase. Geometry of crystalline axis of fracture for portlandite Ca(OH)2 crystals is altered with incorporation of multiwalled carbon nano tubes. Crystalline portlandite Ca(OH)2 crystals and bridging effect of multiwalled carbon nano tubes is governing factor for enhancing strength of multiwalled carbon nano tube reinforced concrete.
Practical implications
Multiwalled carbon nano tube–reinforced concrete can be used to make strain sensing concrete.
Originality/value

Purpose
This paper aims to demonstrate the degree of dissimilarities among Chinese individuals' value profiles by using data collected from Shanghai and Hong Kong.
Design/methodology/approach
The shortened version of the Rokeach Value Survey for consumer research by Munson and McQuarrie was used. The data collection was done by distributing copies of questionnaires to researchers' contacts who worked at financial intuitions, e.g. banks, brokers and insurance agencies in Shanghai and Hong Kong.
Findings
The current study demonstrates the degree of dissimilarities among Chinese individuals' value profiles by using data collected from Shanghai and Hong Kong.
Research limitations/implications
The study selects two developed cities of China only and the samples from the two cities are relatively small.
Practical implications
The results imply that value‐based information should be used together with demographic information for segmenting the market. The study suggests the number of segments for Shanghai and Hong Kong.
Originality/value
This study explains the significance of studying values in the context of market segmentation, particularly among Chinese populations.
