Abstract

Purpose

The purpose of this paper is to provide further evidence of the effectiveness of a new method of HACCP for the hospitality industry that was developed, piloted and validated by the UK Food Standards Agency (FSA) and the University of Salford. It is the sixth article in the second Worldwide Hospitality and Tourism Themes issue of the International Journal of Contemporary Hospitality Management presenting a new method of HACCP for the hospitality industry and proof of its utility.

Design/methodology/approach

A series of industry working parties and research projects were carried out between 2004 and 2006 to investigate the utility and impact of the new method in a wide range of sectors, cuisines and locations. Over 200 stakeholders and businesses were involved in this process.

Findings

The paper finds that in 2005 the new method was extended and published as Menu‐Safe a system for hospitality businesses of all types and sizes, and developed into a shorter ready to use package called Safer Food Better Business (SFBB) by the UK FSA for very small hospitality businesses. This series of projects shows further evidence of the success of the new method, and provides important guidance on how, when and where the new systems should be implemented.

Originality/value

This paper combines in‐depth, academically sound research with widespread industry involvement. It brings together the views and findings of all groups to make important recommendations for the future of HACCP‐based systems in the hospitality industry.

Abstract

Purpose

Building on a small body of work, the authors' study aims to investigate some important antecedents of online review characteristics in the Chinese restaurant industry.

Design/methodology/approach

Using a data set of restaurant reviews collected from a most popular review platform in China, the authors conduct a series of analyses to examine the influence of travel experience and travel distance on travelers' review characteristics in terms of review rating and media richness. The moderating effect of restaurant price on the influence is also investigated.

Findings

Travelers with a longer travel distance and more travel experience tend to provide higher and lower online ratings, respectively, which can be explained by the construal level theory (CLT) and the expectation-confirmation theory (ECT), respectively. Furthermore, these strong feelings can then induce travelers to post enriched reviews with more pictures, more words and more affective words to release consumption tension. Besides, restaurant price can moderate these relationships.

Originality/value

Distinguished from most studies which mainly focus on the consequences of online review characteristics or antecedents of review helpfulness, the authors pay attention to the effects of travelers' individual differences in terms of travel distance and travel experience on travelers' online reviewing behavior. In addition to review rating, the authors also focus on media richness in terms of visual and textual information. The authors' research findings can benefit restaurant consumers and managers for their online word-of-mouth utilization and management.

Abstract

This study examined the relationship between the headquarters and the foreign subsidiaries of multinational corporations (MNCs). Hypotheses concerning the strategies pursued by each MNC, intergroup conflict, conflict management styles, integrating mechanisms, and the effectiveness of the headquarters‐subsidiary relationship are developed and tested. There were no significant differences in the intergroup conflict experienced by subsidiaries pursuing different international strategies. However, effectiveness of the headquarters‐subsidiary relationship was negatively related to intergroup conflict. The use of the avoiding style of conflict management was negatively related to the effectiveness of the headquarters‐subsidiary relationship, as hypothesized. For MNCs pursuing global integration strategies, the use of personal integrating mechanisms and integrating conflict management styles were negatively related to intergroup conflict. For MNCs pursuing local responsiveness strategies, the use of bureaucratic integrating mechanisms and dominating conflict management styles were not negatively related to inter‐group conflict. This ran counter to expectations. MNCs pursuing multi‐focal strategies did not fit neatly into either strategy camp—global integration or local responsiveness.

Purpose

To determine how the correlational structure of emotion differs for individuals age 60 and above, compared to those under age 60, and to discuss the profound implications these differences may have for the experience and management of emotion.

Design/methodology/approach

Structural equation modeling and shortest path analysis of emotion items from the General Social Survey (GSS)’s (1996) emotions module.

Findings

Some positive and negative emotion pairs are more distant for individuals over age 60, while others are in fact closer. This variability leads to differences in available shortest paths between emotions, especially when emotional transitions require segueing through intermediary feelings. The segueing emotions most readily available to those over 60 are limited to the poles of affective meaning, whereas those used by ones under age 60 are more variable. The majority of negative emotions are more tightly correlated, whereas the majority of positive emotions are less so, among those over age 60.

Research limitations/implications

Although the measures are limited to 18 of the 19 emotions recorded by the GSS, and are based on self-report data regarding feelings felt over a period of seven days, these results suggest that attempts at intrapersonal and interpersonal emotion management may differ depending up the age of the actor/object.

Originality/value

Addresses the need for more nuanced analyses of emotional experience that goes moves beyond simple frequencies. Also suggests potential bridges between sociological and psychological approaches to the study of emotion.

Abstract

In spite of required state curriculum objectives, American history textbooks often become the de facto curriculum defining history. Self-imposed censorship by textbook publishers defines how individuals, groups, and events are portrayed. A 2004 Thomas B. Fordham Institute report concluded that today’s history textbooks are bland with no voice or storyline and have been sanitized and filled with history rewritten to meet the demands of special interest groups. The report also concluded that while American history textbooks now contain more pages, they include less content. Paradoxically, when a well-crafted textbook is created, students may never have access to it. Efforts by special interest groups to censor such books are not uncommon. A case study of one author’s efforts to have her award-winning history textbook adopted for classroom use and the ensuing censorship efforts by special interest groups are described.

Abstract

In The Americans, Philip and Elizabeth Jennings are undercover operatives for the Soviet Union. In that capacity, they are responsible for crimes including murder and espionage. Yet they also pose as a law-abiding family, running a small business, raising children, and making friends with their neighbours. By ‘practicing’ American life, Philip becomes more American, forging an identity more receptive to American values and attitudes. This chapter draws on concepts from the literature on legal consciousness to examine the relationship between identity and hegemony. Studies of legal consciousness emphasise that consciousness is not simply legal attitudes or even ideology; rather legal consciousness is reflected in the way that people enact their legal beliefs and values. Those enactments help individuals form identities, but those identities are constrained by the hegemonic ideologies that are prevalent in the culture. Law and legal consciousness are important to both processes.

This chapter explores the language of anti-violence activists, university coordinators, and due-process activists concerned with Title IX and campus sexual violence. Using an analysis of 32 in-depth interviews with anti-violence activists, due-process activists, and campus Title IX coordinators, the authors identify key themes in Title IX discourse, including ideas about cultural change and safety. In some instances, activists and coordinators discussed the need for cultural change, though often without agreeing on which campus cultures must be confronted. The authors also found the influence of the dominant discourse of the victims’ rights movement in interview subjects’ emphasis on safety and paternalism.

Twenty-first century education has been reconfigured to keep up with growing societal shifts in an effort to support a wide variety of learners. As changes occur, the workload for teachers continues to expand with little to no support and resources within classroom spaces to keep up with the current times. Post pandemic, the expectations and systems have shifted emphasizing the need for more programming around social emotional learning and systems to help mitigate the learning disruption. The insurmountable pressure placed on teachers has led to a robust and persistent departure of the profession causing the entire education system to rethink the policies, structures, and systems that influence teacher burnout.

Abstract

There is significant debate regarding the necessity for and existence of moral exemplars in business. We believe it is both necessary and beneficial for free market economic systems to be viewed as a moral exemplar by business students, educators, practitioners, and ethicists. Since much of the world operates under some type of free market economic paradigm, it is important that there be a moral base for these operations.

Free market economic systems are usually defended on utilitarian grounds, that they produce better results than other systems. In this chapter we take a micro approach and show that free market economic systems support individual rights and dignity. This is important because business persons need moral exemplars based in their own discipline’s theory to recognize the vocational aspects of business. That is, business persons must understand why free market systems serve the greater good.

Free market systems are not a complete or perfect moral exemplar. Business persons need to know the limits of the economic system and find other moral exemplars for their role as citizens. We illustrate this with the discussion of monopoly and Option for the Poor.

Catholic Social Teaching (CST), the moral exemplar of the Roman Catholic Church, has been developed over many centuries. The purpose of this chapter is to show how free market economic outcomes are compatible with CST goals. Illustrating the consistency between CST and free market systems provides compelling evidence that such systems are indeed a moral exemplar for business persons.

Abstract

Introduction All managers and supervisors are dependent on the performance of their team members. Unless these subordinates perform effectively, then the manager or supervisor will be seen in most cases to have failed. As Brown has noted, “the supervisor generally is more dependent on the work group than on the individual employee, because the work group's performance provides a measure of his or her supervisory capabilities”. We have recently been looking at the work of managers and supervisors in relation to the groups that they lead, to try to identify those factors which contribute to the success of a team. We have been able to identify a number of factors which define what we call High Performing Teams (HPTs). One of these factors is the linking factor — that is, all teams need a manager or supervisor who acts as a critical “link person” in getting things done.
