Abstract

Purpose

The purpose of this study is to explore the dimensions of restaurant customers’ engagement or disengagement with healthy eating in terms of individual and environmental factors to develop a scale. The results identified the underlying constructs of customers’ individual motives for and perceived barriers to healthy eating, as well as environmental elements of restaurants that encourage or discourage healthy eating.

Design/methodology/approach

To develop an appropriate set of measures to assess factors influencing customers’ healthy eating behaviors at restaurants, the current study undertook the five steps of scale development suggested by Churchill (1979): specifying the domain of constructs, generating a pool of initial measurement items, assessing content adequacy, administering questionnaires (an online survey method) and purifying and finalizing the measurement (via exploratory factor analysis (EFA) using 410 samples and confirmatory factor analysis (CFA) using 423 samples).

Findings

The results revealed ten individual factors (health, body image, weight control, feeling better, unappealing food, cost perception, lack of knowledge, state of mind (stress), lack of self-control and negative influences) and five environmental factors (healthy indications, social impact, availability of healthy menu, price policy and unhealthy indications) influencing customers’ healthy eating behaviors at restaurants.

Originality/value

This study developed an appropriate set of measures to assess individual and environmental factors influencing restaurant customers’ healthy eating behaviors, along with identifying underlying sub-constructs. The reliability and validity of the scale and the factor structure are presented and potential applications and theoretical contributions of the scale are provided as well.

Abstract

Purpose

During difficult economic times the media often highlight examples of failing or failed business organizations. In some cases the demise of corporations is examined in considerable detail often resulting in the following take‐home messages: these are the sins that have brought about your failure; and if things had been done differently you might still be a viable company. This paper aims to point out success stories from creative leaders who successfully navigated through challenging environments.

Design/methodology/approach

The paper draws on existing cases from the literature highlighting leaders who led their organizations to positive ends during turbulent times.

Findings

There are opportunities for company success despite difficult business environments.

Originality/value

It is rare to read about successful leadership practices during turbulent times. Yet, they do exist. The overwhelming number of examples and cases written about, however, are indeed in the negative direction, not the positive.

Abstract

This paper explores the reasons why consumers choose wine over other alcoholic beverages, with a focus upon the beliefs held by consumers towards the behaviour of wine drinking. The research findings show that attitudes are somewhat more predictive of the intention to drink wine than perceived social pressure. Nevertheless, both attitudinal and normative elements are required to adequately explain wine consumption. Despite the fact that the issue of health figured prominently amongst the salient beliefs identified in the qualitative phase of the research, the subsequent quantitative research found that drinking wine because of its purported health benefits was not a significant attitudinal or behavioural factor. Drinking wine because it provides ‘a variety of tastes and flavours’ and because it ‘goes well with food’ was found to be significantly more important. The results suggest that efforts to actively promote awareness of the health benefits of wine drinking may have limited value.

Abstract

Until the Loma Prieta earthquake of 17 October 1989, also known as the “World Series earthquake” or the “San Francisco earthquake,” many of us may have considered earthquakes a remote danger. But instantaneous television transmission from the interrupted World Series game and frightening images of the collapsed Cypress Viaduct and the burning Marina district transformed this incident from a distant disaster into a phenomenon that touched us all. The Loma Prieta earthquake was followed in December 1990 by the inaccurate but widely publicized New Madrid earthquake prediction. Despite its inaccuracy, this prediction alerted the public to the fact that the largest earthquake ever to have occurred in the United States occurred not in California or Alaska, but in Missouri, and that a large earthquake could occur there again. Americans are discovering that few places are immune to the possibility of an earthquake.

Abstract

Past research exploring the influence of affect on group outcomes has primarily considered how the experience of single emotions and mood vary and converge across group members, but does not address the fact that a single group member may express multiple, conflicting emotions simultaneously (e.g., emotional ambivalence). Such complex expressions may drastically alter the way other group members perceive and respond to one another, and in turn, drastically alter the group-level dynamics. We address this gap in the literature by modeling the social consequences of expressing emotional ambivalence, thereby expanding our understanding of emotional ambivalence in group contexts. Implications for research on emotional ambivalence and research on emotions in groups are discussed.

One of the most marginalized communities in India is the Lesbian, Gay, Bisexual and Transgender (LGBT) community which commonly experiences discrimination. Many studies have countered that the LGBT community faces high discrimination in the banking and financing industry. As a result, this study concentrates on this marginalized community and its acceptance and continuation habit regarding mobile wallets. Consequently, this study has considered continuance intentions as a response to confirm the progress of the mobile-wallet industry. Also, this study tried to study the relationship between behavioral intention (BI) and continuous intention (CI) which is seriously lacks in the library of literature. The research operationalized the stimulus–organism–response (SOR) framework for the conceptual model and surveyed 100 self-proclaimed members of the LGBT community in India. The analysis has been done using the partial least structure (PLS). The findings demonstrate that variables like perceived trust (PT) directly influence the BI. On the other hand, variables like perceived ease of use (PEoU), social influence (SI), and satisfaction (S) doesn’t influence BI of the LGBT Community. The main outcome was a favorable association between BI and CI. It will help the stakeholders to understand how important this new market avenue is and how it can be explored. To ensure safe and secure transactions, a group think tank composed of important parties (financial institutions, mobile-wallet providers, the government, security specialists, etc.) should make recommendations. Mobile-wallet providers will attain benefit from this study’s understanding of user categories and ability to tailor their service offers as per the community.

Abstract

Purpose

The purpose of this paper is to explore the use of ambivalence in benefit‐based segmentation of convenience food in Norway.

Design/methodology/approach

Building on the attitude‐ambivalence literature and research about food convenience, a hierarchic cluster analysis is performed based on a nation‐wide representative survey of 1,154 Norwegian consumers.

Findings

The study's effort to use attitudinal ambivalence as a basis for benefit or attitude segmentation proved to be useful in finding segments with different profiles in the area of convenience food. The results reveal three consumer segments based on evaluation of quality, value, ambivalence and perceived morals towards convenience food: the “Convenient”, the “Ambivalent”, and the “Dissatisfied” consumer. While the Convenient have positive feelings and the Dissatisfied negative feelings toward convenience food, the Ambivalent have mixed feelings and feel guilt when eating ready meals. The ambivalent consumers share beliefs, attitudes, values and behaviour at a position somewhere between the “Convenient” and the “Dissatisfied” on most variables. However, in some areas they are close to the “Dissatisfied”, e.g. on variables such as perceived nutritional value, serving/buying ready meals, time used for making dinner or planning their meals. In a few areas they are closer to the “Convenient”, e.g. appeal to children, consuming, soups and pasta, and age above 60.

Research limitations/implications

Future research on benefit or attitudinal segmentation should consider including a measure of perceived ambivalence associated with the investigated products or services.

Practical implications

The practical implications are addressing a potential for the convenience food industry and subsequently suggesting a positioning strategy to adopt ambivalent consumers.

Originality/value

The paper presents new insights into consumer benefit segmentation and in empirical research on convenience food with a particular focus on ambivalence and moral attitudes.

Abstract

Purpose

The primary purpose of this study is to investigate whether welfare issues are important to consumers also relating to fish. Second, it aims to identify segments based on animal and fish welfare issues, environmental concerns and ambivalence about farmed fish.

Design/methodology/approach

A questionnaire was designed to investigate consumers' concern for environmental and animal and fish welfare issues together with variables used in profiling segments in the study. The measurement scales used here are adapted from validated scales in previous studies. The survey was conducted in Valencia, Spain, among 450 randomly‐chosen respondents.

Findings

Animal welfare issues related to farmed fish do not seem to be important for the consumers in Valencia. There are, however, differences among the consumers relating to general environmental and animal welfare concern, and ambivalence. Three segments were identified: the unconcerned (27 per cent), the wild fish concerned (34.5 per cent) and the ambivalent (38.5 per cent). Attitudes toward farmed fish, the importance of natural food and social class were most important in profiling differences between clusters.

Practical implications

The findings indicate that the animal welfare issue has not yet become a barrier for farmed fish in Valencia. The results may help fish‐farming companies to find their target group among the consumers, based on environmental and animal welfare issues. The results also indicate that there are consumers who are somewhat ambivalent about farmed fish. For this group, more information and knowledge can change their attitudes so they become more positive toward farmed fish in the future.

Originality/value

The paper provides useful information for fish‐farming companies or the authorities planning healthy‐eating campaigns targeting fish.

Abstract

Purpose

This study aims to establish the findings by confirming the extent to which an extended version of the TPB estimation relates to repetitive fish consumption. This study is important for the sustainable consumption of fish in society. The purpose of this paper is to examine the relationship that explains perceived value, consisting of monetary and non-monetary values, in shaping attitudes on repetition of fish consumption.

Design/methodology/approach

The sampling of this study was conducted for eight months of 365 people who consumed fish for at least one year. This research was conducted in Malang City, Indonesia. Data analysis applied structural equation modelling by measuring perceived values, attitudes, social norms, behaviour control, intentions and frequency of fish consumption.

Findings

It mostly follows the extended theory of planned behaviour (TPB) sections, with exception on the relationship of subjective norms to intentions and attitudes, subjective norms and perceived value towards repetition of fish consumption. The results of the study indicate that attitudes are preceded by the formation of perceived values. The perceived value significantly affects attitude formation. The perceived value of fish consumption is explained by health and monetary values. A positive attitude does not always precede consumption. Subjective norms provide a weak role in the repetition of fish consumption, while behaviour control plays an important role in realising action on repetitive fish consumption.

Originality/value

This study helps explain the extended TPB, and intentions towards the behaviour of repetitive fish consumption. Attitudes are preceded by the formation of perceived values in the TPB in intention repetitive fish consumption.
