Abstract
Purpose
The objective of this article is to investigate the binding of several lactones to soya protein isolate and soya protein under different conditions and, particularly, the extent of binding of the lactones γ‐9, γ‐10, δ‐10 and δ‐11, in different concentrations as well as the effect of various parameters on their binding ability.
Design/methodology/approach
Capillary column gas chromatography was used for the determination of lactones and the manual system was used for taking samples and for headspace analysis. Infrared spectroscopy was used for confirmation and investigation.
Findings
The percentage of binding of lactones γ‐9, γ‐10, δ‐10, δ‐11 on the soya protein is almost the same (about 33‐34 per cent). According to the Klotz equation, the bound ligand concentration was calculating as the number of moles of ligand bound per mole of protein. The results varied, but were similar. Specific experiments in water system with soya protein isolate (1 per cent) showed that the time taken for lactones γ‐10 and δ‐11 to reach equilibrium, the factors of temperature and pH affected the percentage of lactone bound.
Research limitations/implications
The amount of added lactone in products containing soya protein isolate should be investigated by using panel tests to confirm the improvement of flavour.
Practical implications
Flavour binding of lactones can be used to provide some foods with the required flavour impression by adding lactones to a bland soy protein base.
Originality/value
The flavour binding of lactones, which was investigated in the present paper, has not been adequately investigated in previous scientific research and the effects of the factors that influence their binding are very important.

In the design of an articulated connecting‐rod system for a radial engine, certain conflicting desiderata have to be fulfilled, which of necessity dictate recourse to compromise. Considerations of strength, weight, a small overall diameter, component interchangeability and satisfactory combustion in all cylinders, often mean irregular disposition of the wrist‐pin centres on the master rod and variations in the stroke of different cylinders; consequent on which small differences occur in compression ratio, leading to dissimilar combustion conditions between the cylinders.

Abstract
Purpose
Increased evidence for the health benefits of probiotics for health restoration coupled with the consumer's inclination towards a safe, natural and cost-effective substitute for drugs have led application of probiotics as a pharmaceutical agent and are rapidly moving in clinical usage. In this context, this article attempts to highlight the potential of probiotics as a pharmaceutical agent.
Design/methodology/approach
Endeavor has been made to explore the significance of probiotics for the modulation of gut ecology and their action. Potentiality of probiotics for their exploitation as a pharmaceutical agent has also been justified. Limitations of probiotic therapy and the various considerations for probiotic therapy have also been delineated.
Findings
Probiotic organisms influence the physiological and pathological process of the host by modifying the intestinal microbiota, thereby affecting human health. Beneficial effects of probiotics as a pharmaceutical agent seem to be strain and dose dependent and more efficacious with their early introduction. Combination of various probiotics proved to be more efficacious than single strain for exhibiting prophylactic activities.
Research limitations/implications
Reviewed literature indicated that it is difficult to generalize for the beneficial effect of all probiotics for all types of diseases as efficacy of probiotics is strain-dependent and dose-dependent and its clinical application needs long-term investigations.
Practical implications
Clinical trials have displayed that probiotics may alleviate certain disorders or diseases in humans especially those related to gastro-intestinal tract.
Originality/value
Ingestion of fermented dairy products containing probiotic cultures may provide health benefits in certain clinical conditions such as antibiotic-associated diarrhoea, rotavirus-associated diarrhoea, inflammatory bowel disease, inflammatory bowel syndrome, allergenic diseases, cancer, Helicobacter pylori infection and lactose-intolerance. Application of probiotics as a pharmaceutical agent is recommended.

Abstract
In relation to the analysis of inequality and skill‐bias innovation, this article develops a theoretical model for determining the influence of work organisation on incentives and earnings. In a linear agency model, which explains innovative work organisation practices from an incentive perspective, we show that the static impact of organisational forms on expected earnings can be decomposed into two effects (a risk premium effect and a task complementarity effect originated in learning and information diffusion). Such effects drive productivity and expected pay‐offs upward, as observed in many recent empirical studies. Thus, the development of new work practices based on a greater degree of delegation contributes to the increase of earnings inequality. In a dynamic perspective, the model shows that knowledge dissemination will in general sustain the same trend. However, when initial efforts and productivity are relatively high, output and pay‐offs will decline during the transition to the steady‐state. The overall impact of organisational forms on earnings and inequality may therefore be ambiguous, depending on the importance of learning.

Abstract
This article studies the evolution of the wage differentials between graduate (skilled) and non-graduate (unskilled) workers in several European countries from the beginning of the 1990s to the beginning of this century. The starting point is that all European countries show a common increase in the relative supply of skilled workers but different evolution of wage differentials. Economics theory usually relates the evolution of wage differentials not only to relative supply but also to skill-biased technological progress. I complement this explanation providing a theoretical model of wage bargaining where wage differentials are determined also by labour market institutions. My empirical findings show that both technological progress and labour market institutions are important in the determination of wage differentials. As for the former, I find that differentials depend on the pace and intensity at which technological progress takes place. As for labour market institutions, their effect, though important, is not always straightforward. In fact, some aspects of institutions, like minimum wage and the duration of unemployment benefits, favour unskilled workers while other aspects, like bargaining power and replacement rates from unemployment benefits, may magnify the differences in outside options and actually increase wage differentials.

With the signing of the North American Free Trade Agreement (NAFTA) in 1994, Mexico entered a bilateral free trade agreement which not only lowered its own tariffs on imports but also lowered tariffs on its exports to the United States. We find that women’s relative wage increased, particularly during the period of liberalization. Both between and within-industry shifts also favored female workers. With regards to between-industry shifts, tariff reductions expanded sectors that were initially female intensive. With regards to within-industry shifts, we find a positive association between reductions in export tariffs (U.S. tariffs on Mexican goods) and hiring of women in skilled blue-collar occupations. Finally, we find suggestive evidence that household bargaining power shifted in favor of women. Expenditures shifted from goods associated with male preference, such as men’s clothing and tobacco and alcohol, to those associated with female preference such as women’s clothing and education.

Abstract
Purpose
Data envelopment analysis (DEA) has wide applications in the agricultural sector to evaluate the efficiency with crisp input and output data. However, in agricultural production, impreciseness and uncertainty in data are common. As a result, the data obtained from farmers vary. This impreciseness in crisp data can be represented in fuzzy sets. This paper aims to employ a combination of fuzzy data envelopment analysis (FDEA) approach to yield crisp DEA efficiency values by converting the fuzzy DEA model into a linear programming problem and machine learning algorithms for better evaluation and prediction of the variables affecting the farm efficiency.
Design/methodology/approach
DEA applications are focused on the use of a common two-step approach to find crucial factors that affect efficiency. It is important to identify impactful variables for minimizing production adversities. In this study, first, FDEA was applied for efficiency estimation and ranking of the paddy growers. Second, the support vector machine (SVM) and random forest (RF) were used for identifying the key leading factors in efficiency prediction.
Findings
The proposed research was conducted with 450 paddy growers. In comparison to the general DEA approach, the FDEA model evaluates fuzzy DEA efficiency giving the user the flexibility to measure the performance at different possibility levels.
Originality/value
The use of machine learning applications introduces advanced strategies and important factors influencing agricultural production, which may help future research in farms' performance.

This paper presents a model with flexible wages in which unemployment of low‐skilled labor is possible in equilibrium, whereas high‐skilled workers are fully employed. Thus, the model can explain why even in countries with flexible labor markets and full employment of skilled labor an employment problem exists at the bottom of the skill spectrum. The model is used to evaluate the impact of technological change and increased skill supply on the employment of low‐skilled workers. It is shown that a switch to technologies with higher skill requirements unambiguously leads to a rise in unemployment of low‐skilled workers. An increase in the supply of high‐skilled labor has a positive effect on the employment level of low‐skilled labor.

Abstract
Social democratic unionism has arguably been one of the most successful worker organisations in modern history. Through collective bargaining and political influence, this type of unionism has been effective in redistributing the gains from capitalist markets. This paper reviews the challenges, pathways and dilemmas social democratic unions face in the knowledge economy. Similar to industrialisation, the knowledge economy has the potential to fundamentally change the social fabric that trade unions derive their power resources from. There are three major and interrelated challenges: (1) technological change and the knowledge economy, (2) new socio-political coalitions and (3) keeping employers in. Focussing on Denmark and Sweden, it is argued that these three challenges strike the core of social democratic unionism, as they can undermine the ability to encompass the whole labour market because of polarisation or upgrading of jobs. The paper goes on to outline three possible pathways: ‘going radical’, ‘going academic’ and ‘going old-school’. ‘Going radical’ entails a sharper focus on fighting precarious work with other regulatory means other than collective bargaining. ‘Going academic’ entails a focus on education and lifting all occupational groups. ‘Going old-school’ entails adapting the principle of collective bargaining to new types of companies and occupations while sticking to the regulatory means as before. It is argued that none of the strategies is a silver bullet to the challenges, but that a key to the success of any of the strategies is that minimum wage levels are defended, as this will fuel investment in education for lower-paid work.
