Abstract
The biochemical basis for differences in wheat protein functionality A great deal of research has been carried out to try to determine, in chemical terms, why wheat proteins are so unique from a functional viewpoint. Although some progress has been made, a complete understanding of the molecular properties that are important to the functionality of these proteins is still distant. The reasons for this are that wheat proteins are extremely complex and they are difficult to study, using the more usual techniques of protein chemistry, because of their insolubility except under rather extreme conditions.

Abstract
The prominence of wheat as the world's largest crop (in 1981 world production was almost 1.7 thousand million tonnes, of which about 40% went directly to human food use) owes much to its almost unique ability to be baked into bread. This ability is largely attributable to the physico‐chemical properties of wheat proteins, which enable a leavened dough to rise by trapping the carbon dioxide, produced during yeast fermentation, as discrete, small gas cells — a structure that is ‘set’ during baking. Another important type of food made from wheat is pasta and the suitability of wheat for this end use is also governed by the properties of wheat proteins. The suitability of wheats for other uses, such as cracker, biscuit and cake manufacture and domestic flour is also affected by these proteins.

In the last four years, since Volume I of this Bibliography first appeared, there has been an explosion of literature in all the main functional areas of business. This wealth of material poses problems for the researcher in management studies — and, of course, for the librarian: uncovering what has been written in any one area is not an easy task. This volume aims to help the librarian and the researcher overcome some of the immediate problems of identification of material. It is an annotated bibliography of management, drawing on the wide variety of literature produced by MCB University Press. Over the last four years, MCB University Press has produced an extensive range of books and serial publications covering most of the established and many of the developing areas of management. This volume, in conjunction with Volume I, provides a guide to all the material published so far.

Abstract
This chapter considers the school-to-prison pipeline (STPP) within the United States as a network of flows and feedback loops that connects the education and delinquency systems. This system is heavily biased to funnel students with disabilities, disproportionately from low-income minority families, away from productive educational outcomes through punitive, exclusionary, and restrictive measures that too often result in incarceration. Congress intended special education and disability rights laws to ameliorate injustice and ensure long-term positive outcomes for all students. Through a systems theory perspective, this chapter outlines key leverage points inherent in disability rights laws, which can and should be activated to interrupt and reverse the STPP. Many provisions within the law are overlooked or inadequately enacted within current educational practices. The authors present problem-solving strategies, rooted in the Individuals with Disabilities Education Act (IDEA) and other disability rights laws, for educators, juvenile justice advocates, and policymakers to use in order to reduce school exclusion and incarceration of vulnerable youth and to provide education opportunity for all students.

There is currently a great deal of attention in psychometric and statistical methods on ensuring measurement invariance when examining measures across time or populations. When measurement invariance is established, changes in scores over time or across groups can be attributed to changes in the construct rather than changes in reaction to or interpretation of the measurement instrument. When measurement in not invariant, it is possible that measured differences are due to the measurement instrument itself and not to the underlying phenomenon of interest. This chapter discusses the importance of establishing measurement invariance specifically in postsecondary settings, where it is anticipated that individuals' perspectives will change over time as a function of their higher education experiences. Using examples from several measures commonly used in higher education research, the concepts and processes underlying tests of measurement invariance are explained and analyses are interpreted using data from a US-based longitudinal study on bioscience PhD students. These measures include sense of belonging over time and across groups, mental well-being over time, and perceived mentorship quality over time. The chapter ends with a discussion about the implications of longitudinal and group measurement invariance as an important conceptual property for moving forward equitable, reproducible, and generalizable quantitative research in higher education. Invariance methods may further be relevant for addressing criticisms about quantitative analyses being biased toward majority populations that have been discussed by critical theorists engaging quantitative research strategies.

Abstract
Purpose
The purpose of this paper is to investigate the growing, and multifaceted, role for events within destination shopping centres. With particular focus upon The Gruffalo experience (GE)—a three week pop-up experiential children’s activation—the study offers insights and provides a conceptual framework, relating to the emerging and future role of events.
Design/methodology/approach
The study emerged from a privileged opportunity to research The GE, enabling a visitor questionnaire survey (n=1,305), using a non-probability sample, and four in-depth interviews, which were extended by an additional seven respondents.
Findings
There is a noteworthy role for events as “enlivenment”; attractors to increase visitation, repeat visitation and equally to impact dwell time and boost footfall and sales for tenants. The study revealed a need for a developed event portfolio, with various fundamental tensions relating to objectives, tenants, integration with wider strategy and customer experience.
Research limitations/implications
By interlinking events with shopping, re-visitation intention is improved and therefore not only does it deliver short-term return but longer-term payback. The vast assortment of events, and stakeholders, means a strategic and reflective approach is required. A limitation of the study is that there is limited existing research on this topic upon which to compare the overall findings, or specifically the survey data and analysis.
Originality/value
This early research study into events within destination shopping centres has revealed a prolific and advantageous, but also emerging and intricate, relationship. There is an absence of extant literature and therefore this paper makes a notable contribution to this unfolding area.

Abstract
This research aims at explaining the phenomenon of the “black children” (heihaizi), a very little-known generation who lived with concealment under the one-child policy in China. The one-child policy was officially introduced to nationwide at the end of 1979 by permitting per couple to have one child only, later modified to a second child allowed if the first was a girl in rural China in 1984. It was officially replaced by a nation-wide two-child policy and most existing research focused on the parents’ sufferings and policy changes. The term “black children” has been mainly used to describe their absence from their family hukou registration and education. However, this research aims at expanding the meaning of being “black” to explain the children who were concealed more than at the level of family formal registration, but also physical freedom and emotional bond. What we do not yet know are the details of their lived experiences from a day-to-day base: where did they live? How were they raised up? Who were involved? Who benefited from it and who did not? In this way, this research challenges the existing scholarship on the one-child policy and repositions the “black children” as primary victims, and reveals the family as a key figure in co-producing their diminished status with the support of state power. It is very important to understand these children’s loss of citizenship and human freedom from the inside of the family because they were concealed in so many ways away from public view and interventions. This research focuses on illustrating how their lack of access to continued, stabilized, and reciprocally recognized family interactions framed their very idea of self-worth and identity.
