Abstract
A two-stage Rotterdam model is estimated to determine the effects of advertising on the demand for non-alcoholic beverages in the United States. Results suggest that advertising has no effect on the demand for non-alcoholic beverages taken as a group. However, the hypothesis that advertising has no effect on the distribution of demand within the non-alcoholic beverage group is firmly rejected. Coffee and tea are most affected by other beverage advertising, and milk the least. Similarly, juice advertising exerts the largest influence within the beverage group, and milk advertising the least. Overall, however, the major determinants of the consumption pattern are relative prices and structural change.

Abstract
Purpose
The purpose of this paper is to compare knowledge about dietary fats in some dairy products and other foods across consumers from France, (French‐speaking) Canada and the USA. A relation is explored between the types of information, knowledge levels and obesity predominance.
Design/methodology/approach
A nine‐question nutritional test was developed and administered to three samples of consumers, respectively in Grenoble (France), Quebec, Canada and Ithaca, New York. In France, Canada and the USA the number of participants was respectively 100, 107 and 120. Participants were recruited randomly outside groceries stores and the test was administered directly through one‐on‐one interviews.
Findings
Results indicate a significant gap in knowledge between consumers from the three countries studied. The level and quality of knowledge seems to be correlated with the nature of the informational background: a wider availability of information such as nutrition facts and public health recommendations on fat consumption seems to have a positive effect on the general level of knowledge. However, “technical” knowledge seems to be inversely correlated to the level of obesity.
Research limitations/implications
This work is of an exploratory nature and the sample might not be representative of the countries' population. Further works that link food knowledge and food consumption patterns would be needed.
Practical implications
This study gives weight to the hypothesis that a “science” or nutrient approach to food might not result in appropriate food choices; consumers losing sight of the big picture. To confirm this hypothesis, further work would be needed.
Originality/value
This is, to the authors' knowledge, the first cross‐country study that attempts to link the type of knowledge on fat in food and predominance of obesity. This should encourage nutritionist to further investigate this link. It should also concern the dairy industry, given most often consumers' perception of dairy products' fat content is overestimated, especially for fluid milk in France.

Investigates the importance of English language sources of Friedrich Theodor Althoff (1839‐1908), a German of great influence both in his own country and, indirectly, in the United States. Explores some measures of his influence in education and international understanding. Examines a wide variety of sources. Explains how it could happen that an influential person would end up in intellectual history with almost no recognition. Challenges several conventional assessments. Althoff′s most important contributions are in print and more almost certainly exist in university archives, but the material is scattered and unorganized. Because we do not yet have the full story of this remarkable and complex man, firm conclusions about his influence are not yet possible.

Abstract
Purpose
This chapter explores public perceptions of health disparities by taking political ideology and political party identification into account and applies theories of cognitive dissonance, cognitive prejudice, and moral prejudice to understand the impact of political ideology on perceptions of health disparities.
Methodology/approach
A statewide telephone survey asked 1,036 people about health disparities. Eight independent variables – political ideology, political party identification, gender, race, age, community type, income, and education achieved – were entered in an additive stepwise regression containing one of four dependent variables – unfair treatment based on health insurance, unfair treatment based on ability to speak English, minorities unable to get care when needed, and quality of care for minorities.
Findings
Political ideology entered all four equations while political party identity entered only two. Liberals were most likely to believe that minorities were unable to get routine care when needed and democrats that ability to speak English meant differential treatment. Respondents with low education were most likely to believe people were treated unfairly based on insurance, while those with lower incomes were more likely to believe that minorities received higher quality of care than whites.
Research limitations/implications
A public opinion survey in one state cannot be generalized for the whole country. The survey was conducted in the spring of 2009 just as the debate over the proposed health care reform legislation was reaching a crescendo, which may explain the importance of political ideology on perceptions of health disparities.
Originality/value of chapter
This chapter explicitly examines the effect of political ideology and party identification on perceptions of health disparities by utilizing theories of cognitive and moral prejudice. Political ideology reflecting cognitive and moral prejudice may combine with support for a social movement or political faction that supports or opposes reducing health disparities.

Abstract
Purpose
The purpose of this paper is to examine how Harry Messel, Harold Wyndham, L.C. Robson and Robert Menzies were instrumental in bringing about substantial change in science curriculum and infrastructure reform in NSW schools.
Design/methodology/approach
The paper relies on substantial archival research including materials never before examined or used by historians of education history. The paper is divided into sections, the first uses teacher surveys and identifies problems with science teaching in 1958, a key year in education history and each section after that looks at the contribution of Wyndham, Messel, Robson and Menzies in driving a new direction for science education.
Findings
The research found that Wyndham, Messel, Robson and Menzies each contributed a new dimension to the reform of science education in Australia. Their individual contributions were substantial, inter-related and interlocking but quite different. The paper argues that it is not adequate to look at science education reform purely as a means to introduce State Aid, rather science education reform was advocated as a means to ensure students had a scientific literacy going forward into a technologically driven future.
Research limitations/implications
The research strikes a path through a vast primary source record to outline how individuals and science teachers more generally believed in science education reform as a mechanism to ensure students were better placed to enter a post-Sputnik world. As a result, known arguments around State Aid are only part of the story and not the main focus of the research. The aim is to supplement that knowledge by looking more at a broader picture for science reform for its own sake.
Originality/value
This paper takes an original approach to the history of curriculum change by providing a broader context for the State Aid debate, that is, by focussing on individual contributions to science education reform for its own sake and because science education was deemed necessary for student literacy in the future. At the same time it uses archival material never before accessed or used to tease out this history. The teachers’ surveys provide a unique insight into conditions for science teachers in the late 1950s. This material has not been accessed before and it provides a context upon which to superimpose the impact of the contributions of Wyndham, Messel, Robson and Menzies.

Abstract
Purpose
In this era of Fourth Industrial Revolution, also known as Industry 4.0, additive manufacturing (AM) has been recognized as one of the nine technologies of Industry 4.0 that will revolutionize different sectors (such as manufacturing and industrial production). Therefore, this study aims to focus on “Additive Manufacturing Education” and the primary aim of this study is to investigate the impacts of AM technology at selected South African universities and develop a proposed framework for effective AM education using South African universities as the case study.
Design/methodology/approach
Quantitative research approach was used in this study, that is, a survey (questionnaire) was designed specifically to investigate the impacts of the existing AM technology/education and the facilities at the selected South African universities. The survey was distributed to several students (undergraduate and postgraduate) and the academic staffs within the selected universities. The questionnaire contained structured questions based on five factors/variables and followed by two open-ended questions. The data were collected and analyzed using statistical tools and were interpreted accordingly (i.e. both the closed and open-ended questions). The hypotheses were stated, tested and accepted. In conclusion, the framework for AM education at the universities was developed.
Findings
Based on different literature reviewed on “framework for AM technology and education”, there is no specific framework that centers on AM education and this makes it difficult to find an existing framework for AM education to serve as a landscape to determine the new framework for AM education at the universities. Therefore, the results from this study made a significant contribution to the body of knowledge in AM, most especially in the area of education. The significant positive responses from the respondents have shown that the existing AM in-house facilities at the selected South African universities is promoting AM education and research activities. This study also shows that a number of students at the South African universities have access to AM/3D printing lab for design and research purposes. Furthermore, the findings show that the inclusion of AM education in the curriculum of both the science and engineering education is South Africa will bring very positive results. The introduction of a postgraduate degree in AM such as MSc or MEng in AM will greatly benefit the South African universities and different industries because it will increase the number of AM experts and professionals. Through literature review, this study was able to identify five factors (which includes sub-factors) that are suitable for the development of a framework for AM education, and this framework is expected to serve as base-line or building block for other universities globally to build/develop their AM journey.
Research limitations/implications
The survey was distributed to 200 participants and 130 completed questionnaires were returned. The target audience for the survey was mainly university students (both undergraduate and postgraduate) and the academics who have access to AM machines or have used the AM/3D printing lab/facilities on their campuses for both academic and research purposes. Therefore, one of the limitations of the survey is the limited sample size; however, the sample size for this survey is considered suitable for this type of research and would allow generalization of the findings. Nevertheless, future research on this study should use larger sample size for purpose of results generalization. In addition, this study is limited to quantitative research methodology; future study should include qualitative research method. Irrespective of any existing or developed framework, there is always a need to further improve the existing framework, and therefore, the proposed framework for AM education in this study contained only five factors/variables and future should include some other factors (AM commercialization, AM continuous Improvement, etc.) to further enhance the framework.
Practical implications
This study provides the readers and researchers within the STEM education, industry or engineering education/educators to see the importance of the inclusion of AM in the university curriculum for both undergraduate and postgraduate degrees. More so, this study serves as a roadmap for AM initiative at the universities and provides necessary factors to be considered when the universities are considering or embarking on AM education/research journey at their universities. It also serves as a guideline or platform for various investors or individual organization to see the need to invest in AM education.
Originality/value
The contribution of this study towards the existing body of knowledge in AM technology, specifically “AM education research” is in the form of proposed framework for AM education at the universities which would allow the government sectors/industry/department/bodies and key players in AM in South Africa and globally to see the need to invest significantly towards the advancement of AM technology, education and research activities at various universities.

We review the literature to determine how discretion, defined as the freedom to make decisions, moderates the relationship between leader personality and organizational performance. Discretion increases with level in organizations so that top executives have the most discretion and the greatest opportunity to impact organizational performance. We describe how personality drives executive actions and decision making, which then impacts organizational performance; the more discretion a leader has, the more leeway there is for his or her personality to operate. Abstract
Purpose
This study aims to facilitate consistency of information in building information modelling (BIM) and address the current BIM gaps through the perspectives of the productization concept and product structure (PS).
Design/methodology/approach
The study follows a conceptual research approach in conjunction with a single case study. First, the previous studies on BIM implementation, productization and PS are reviewed. Further, a case study is used to analyse the current state of productization in the construction sector and develop a functional PS for construction.
Findings
A Part-Phase-Elements Matrix is proposed as a construction-specific PS to facilitate consistency in information and to enhance BIM. The proposed matrix provides new avenues to facilitate consistent information exchange through the interconnection between conceptual PS and standard building objects library, and encourage collaborative communication between stakeholders.
Originality/value
This study explores the core of the productization concept and PS as means to facilitate consistency of information and thus address the current gaps in BIM. This as building projects progressively move towards systematic modular and prefabricated construction where the flow of reliable information about product and construction offerings becomes increasingly important.
