Abstract

Purpose

The purpose of this paper is to examine pure culture isolates from traditionally fermented product of African oil bean seeds (ugba) with a view to identifying the appropriate starters.

Design/methodology/approach

The isolates were purified and characterized, and used singly and in combination to ferment freshly prepared oil bean seed slices for 72 h at 37 ○C. The pH and microbial load of fermenting beans were monitored daily, and organoleptic tests using semi‐trained panelists were employed to assess the fermented products based on quality attributes of flavour, appearance, texture and overall acceptability.

Findings

The isolates included Bacillus subtilis, Bacillus licheniformis and Pseudomonas fluorescens. Total viable counts ranged from 1.3 × 107‐9.3 × 109 cfu/g, 7.0 × 106‐4.0 × 109 cfu/g, and 3.0 × 106‐1.5 × 109 cfu/g, respectively for the three isolates; while counts for the mixed culture fermentation ranged from 7.0 × 106‐1.72 × 1010 cfu/g. The mixed culture fermentation gave the best rated product, indicating a synergy among the isolates. The pH values increased steadily in the samples fermented by Bacillus sp. and the mixed culture organisms, showing that the production of ugba follows alkaline fermentation pattern.

Research limitations/implications

The African oil bean seed fermentation is a bacterial mixed culture and alkaline fermentation. The major organisms involved are B. subtilis and B. licheniformis, while the P. fluorescens was insignificant.

Originality/value

Most of the local fermentations in Africa, including oil bean fermentation, are still at the wild, natural inoculation level. The present study has helped in understanding of the fermentative organisms involved in Pentaclethra seed fermentation, and gave insight into an optimized ugba production.

Abstract

Purpose

The purpose of this study is to evaluate the effect of the probiotic addition (Lactobacillus paracasei ssp.) on the physicochemical characteristics and antioxidant capacity of white grape juice during refrigerated storage (4°C/28 days). This paper also aims to evaluate the survival of the probiotic culture in the product and under simulated gastrointestinal conditions.

Design/methodology/approach

Two formulations of white grape juices were evaluated, one with 2 per cent of probiotic culture addition and the other of pure juice.

Findings

The addition of probiotic culture resulted in products with a darker-reddish coloration (L* = 30.6-30.8 and a* = 0.6-0.9) and a lower content of total phenolic compounds (599-697 µg EAG mL−1) (p = 0.05). However, it improved the color stability and maintained the antioxidant activity 1,1-diphenyl-2-picrylhydrazyl (p > 0.05). The viability of the probiotic culture (>109 colony forming unit · 200 mL−1) in the juice was maintained during 21 days of storage, but in simulated gastrointestinal conditions, the functional properties could be guaranteed during the 28 days of refrigerated storage.

Practical implications

The white grape juice is a suitable medium for incorporation of Lactobacillus paracasei.

Originality/value

The survival of the probiotic cultures to the simulated gastrointestinal tract may be significant, even if the product does not have the recommended minimum counts.

Abstract

Purpose

To investigate the potential food, feed and industrial values of some tropical underutilized medicinal plant materials.

Design/methodology/approach

Dry‐milled plants, namely: Gongronema latifolium and Vernonia amygdalina were subjected to chemical analysis to determine their proximate, mineral, elemental, fatty acid and amino acid compositions using standard procedures.

Findings

Results show that the lipid extract, ash, crude fibre and nitrogen free extractives, oxalate, phytate and tannin of the plants are within expected ranges. They however had unexpectedly high crude protein content: 27.20 and 21.69 per cent, respectively. Potassium, phosphorus, calcium and cobalt were the most abundant mineral elements. G. latifolium and V. amygdalina leaf oils are 50.22 and 24.54 per cent saturated; 39.38 and 65.45 per cent polyunsaturated, respectively. Palmitic and oleic acids were the major monounsaturated fatty acids. Degrees of unsaturation are 0.46 and 0.41, respectively. Major essential amino acids are leucine, valine and phenylalanine. Proportions of essential to non‐essential amino acid are 43.37 and 49.84 per cent, respectively.

Originality/value

The nutritional composition of the plant materials suggests that they may find use in food/feed formulation operations and as industrial raw materials.

Abstract

This study delves into the factors that influence the practice of female genital mutilation in West Africa, as well as the health implications. An online cross-sectional study was conducted with the use of electronic questionnaire. The study was targeted at adult females who were between the age of 18 and 50 years old. The Uniform Resource Locator (URL) of the electronic questionnaire was administered on social media platforms (Facebook and WhatsApp) only through convenience and snowball sampling techniques. A sample size of 3,119 adult females participated in the study. Spearman rank correlation (r) was employed to test the hypotheses. Responses were gathered from adult females whom originates from nine West African countries which are Nigeria, Ghana, Mali, Liberia, Benin, Cameroon, Chad, Gambia and Guinea. The study found a strong and positive relationship between culture and the practice of female genital mutilation in West Africa, and there was a weak and positive relationship between religion and education, and the practice of female genital mutilation in West Africa. Despite the health risks, it was revealed that female genital mutilation remained uninterrupted in West Africa. The findings of this study imply that the culture of the people, religious belief system and education are critical factors in efforts to be considered when discouraging the practice of female genital mutilation. Therefore, for healthy living, the practice of female genital mutilation should be discouraged in the study area. Based on the study outcome, recommendations were suggested.

Abstract

A study was conducted to find out the types of CD products in Nigerian libraries and information centres, and the uses to which they are being put. The study also tried to find out the sources of funding of such products, information about users, hardware configuration, and training facilities available in the country. Of the 157 questionnaires sent out, 85 usable returns (a 54% response rate) were received. The analysis revealed that 44 libraries had at least one PC with only nine of such centres having at least one CDROM workstation. There are 62 copies of 43 CD titles in Nigeria. Information on the discs is classified as bibliographic, full text, statistical, or general information. The subjects they cover in descending numeric order are agriculture, general reference, medicine, science and technology, social sciences, and education. Areas of applications include information retrieval, bibliographic compilations, current awareness services, library acquisition work, and downloading and uploading to local online databases. In general, CD use was minimal in most libraries as opposed to information centres where CD applications were well used by patrons, especially where the mass media was employed to advertise them. Most libraries funded their CD projects with their local budgets. The most frequently used computers are IBM or compatibles. Recommendations are also outlined.

Abstract

Northwest Nigeria is mostly populated by the Hausa and Fulani ethnic groups. Social inclusions and gender equality are listed among the fundamental rights. They are essential for human being to put up their best efforts in resolving all difficulties without restraint. Nonetheless, these rights are frequently withheld in many nations within the African continent, owing to ignorance, religion and custom fanaticism. In spite of these constraints, the northern Nigeria is faced with security issues such as persistent cattle rustling which ultimately evolved into armed banditry, which have exacerbated some lingering issues that revolves around children and women. This study attempts to examine the nature of the crisis that may relates to gender-based issues in Zamfara state. The article relied mostly on secondary literature. Evidences proved that security difficulties have worsened the living circumstances of women and girls in the understudied state, thereby espousing women and girls to dangerous attacks and hard living.

Abstract

This study examined the factors militating against walking as a form of active mobility in Akure, Nigeria. For questionnaire administration, from the 548,315 population of Akure, two hundred and seventy-four (274) household heads representing 0.05% of the entire population of Akure were sampled with the aid of a structured and self-administered questionnaire using a systematic sampling technique. The elicited data were analysed using descriptive and inferential statistics. From the analysis, the major impediments to walking were the socio-cultural belief that anybody walking was poor, followed by accessibility to motorised transport, and inadequate pedestrian facilities. These situations have significantly deterred people from seeing walking as an active form of mobility in the study area. Thus, the study recommends a strong sensitisation and awareness programme to robustly enlighten people on the need to embrace walking as a form of urban mobility. Also, the government should adequately and sustainably invest more in pedestrian facilities that will promote the culture of walking among people and/or road users in Akure, Nigeria. More importantly, for inclusiveness in urban planning, road infrastructure should be designed alongside other road elements to ensure seamless negotiations between pedestrians and vehicles without any form of conflict.

Abstract

Purpose

This paper aims to examine the role of bullying victimization in predicting psychopathology, encompassing post-traumatic stress disorder (PTSD), risk of developing prodromal psychosis and emotional and behavioural problems, among in-school Nigerian adolescents.

Design/methodology/approach

A total of 351 junior secondary students (n = 173 males, 178 females; age range: 9–17 years) were recruited from five randomly selected public secondary schools in Nigeria. Students completed a variety of self-report measures, including a socio-demographic questionnaire, the prodromal questionnaire – brief version, the strengths and difficulties questionnaire (SDQ) and the multidimensional peer victimization scale. They were also interviewed using the PTSD module of the Mini International Neuropsychiatric Interview-Kid Version.

Findings

Although bullying victimization was not found to predict the presence of PTSD, it predicted the risk of developing prodromal psychosis. All SDQ subscales also held significant positive associations with bullying victimization. This indicates that higher levels of victimization are associated with increased behavioural and emotional difficulties among adolescents.

Practical implications

The study findings add support to whole system approaches involving relevant stakeholders in health, education, social and criminal justice sectors via protective policies to address the problems of bullying in schools.

Originality/value

The study contributes to evidence demonstrating a need for improved understanding regarding the role of exposure to bullying victimization in predicting various forms of psychopathology. Furthermore, there is specifically a need for research with this focus in developing countries in sub-Saharan Africa and the Nigerian education system.

Abstract

Purpose

The introduction of mobile telecommunication services in Nigeria led to the development of base transceiver stations (BTS) across the country. Inadequate power supply from the national grid has led to massive use of diesel-fueled back-up generators (BUGs). The purpose of this paper is to attempt to quantify and inform relevant stakeholders about air quality implications of BTS BUGs.

Design/methodology/approach

Seven major telecommunication network operators were identified. Emission factor approach was used to estimate the quantity of important air pollutants such as NOx, CO, SO2, PM10, PM2.5, PAH and TVOC that are emitted from the use of the BUGs based on fuel consumption rate and generators’ capacity. Fuel-based emission inventory and emission factor from the United States Environmental Protection Agency AP-42 and National Pollution Inventory were used to estimate pollutants emission from diesel-powered generators used in the BTS sites and amount of diesel consumed. Land distribution and per capita dose of the estimated pollutants load were calculated.

Findings

The study showed that the deployment of BUGs will lead to increase emissions of these air pollutants. The states that are most affected are Lagos, Kano and Oyo, Katsina and Akwa Ibom states with respective total air pollutants contribution of 9,539.61, 9,445.34, 8,276.46, 7,805.14 and 7,220.70 tonnes/yr.

Originality/value

This study has estimated pollutant emissions from the use of diesel-fueled BUGs in mobile telecommunications BTS sites in Nigeria. The data obtained could assist in policy making.

Abstract

Purpose

The need for production of more health‐promoting and affordable drinks prompted the idea of incorporating probiotic bacterial isolates into ginger‐based beverages. The purpose of this paper is to evaluate the viability of two probiotic bacterial isolates (Lactobacillus plantarum and Lactobacillus bulgaricus) in ginger and ginger with garlic beverages and to determine in vitro inhibition of Escherichia coli NCIB 85 and Staphylococcus aureus NCIB 8586 (common food‐borne pathogens) by the probiotic beverages.

Design/methodology/approach

Inoculation of sterilized ginger‐based beverages with isolated Lactobacillus strains was carried out and subsequently stored at ambient temperature (27 ± 1°C) and refrigeration temperature (4 ± 1°C) for four weeks. Lactic acid bacteria count of each probioticated sample was determined at intervals using standard method. In vitro inhibition of the food‐borne pathogens by the probiotic beverages was determined with broth culture method.

Findings

Results revealed the log count of Lactobacillus plantarum in the ginger beverage to be from 9.11 to 8.09 and 7.82 cfu/ml at ambient and refrigeration temperatures, respectively, at the fourth week of storage. Log count of Lactobacillus bulgaricus also ranged from 7.68 to 2.25 cfu/ml after four weeks of storage at ambient temperature while it remained at 5.57 cfu/ml after three weeks of storage at refrigeration temperature. L. bulgaricus however, failed to survive beyond three weeks in refrigerated storage. Similar trend of viability was exhibited in ginger with garlic beverage. Probiotic ginger, and ginger with garlic beverages inhibited the growth of E. coli and S. aureus to varying degrees during the period of storage.

Originality/value

Ginger‐based beverages could therefore be used as carriers of probiotic bacteria and thus serve as health drinks for consumers of different socio‐economic strata.
