Abstract

Purpose

The purpose of this paper is to investigate the differences in value outcomes within the Greek food chain by examining its key members and to illustrate which members are contributing, excelling and underperforming towards value creation.

Design/methodology/approach

A survey was conducted with 1,121 companies representing four Greek food sectors and each tier of the chain. These companies evaluated the value outcomes of their supply chain based on four competitive priorities and the subsequent data were analysed by employing appropriate statistical techniques.

Findings

The primary producers were found to have the worst value outcomes, whilst the best outcomes were noted for catering firms. The findings show that the Greek food chain has still many characteristics of a traditional chain and many improvements are required to reach the “best value chain” status.

Practical implications

The results could be used as benchmark points to guide managers towards achieving highest scores in specific business operations. The paper demonstrates a logical methodological process for obtaining these results which can be used by managers.

Originality/value

To the authors’ knowledge, this is the first paper providing an overall view of value outcomes of various chain members altogether and of the chain they are part of. The paper has filled a relevant gap in the literature by providing an empirical comparison of the perceived value outcomes for several tiers in a food chain.

Abstract

Purpose

The purpose of this introductory paper is to outline the theme of – and introduces the papers comprising – this special issue on post-Covid place marketing.

Design/methodology/approach

A brief literature review outlines some of the impacts of the COVID-19 pandemic on places and also for place-bound and spatially oriented industry sectors (particularly retailing and tourism and hospitality, which are often the focus of place marketing initiatives) before describing the papers constituting the special issue.

Findings

The impacts of the COVID-19 pandemic on places are identified, relating to both economic and more phenomenologically oriented impacts, and the implications for place resilience are considered. The papers comprising the special issue are grouped into two main themes relating to the impact of the COVID-19 pandemic on retailing and the impact of the pandemic on place marketing processes.

Originality/value

Notwithstanding the burgeoning literature on the COVID-19 pandemic and its impacts, the papers comprising this special issue focus on specific place-oriented marketing (and retailing) implications, providing potential avenues for future research.

Abstract

Purpose

This study aims to provide a systematic literature review of the research study in the area of limit order book (LOB) mechanism of trading and its implications for market efficiency. The study attempts to document the recent theoretical developments and empirical findings from the literature exhaustively and identifies the research gaps for future research.

Design/methodology/approach

The study uses seven reputable databases to select 2,514 research studies spanning over 1981-2018 (finally compressed to a pool of 103 articles, based on relevance and impact). The study uses bibliometric network visualization and text analytics to categorize and examine the literature. The chosen articles are compiled and analyzed to provide a comprehensive account of the current research on LOBs.

Findings

The recent LOB literature is summarized on various criteria as follows: sub-areas, the types of economies and markets, methodologies and the LOB measures. The review identifies a dearth of studies on the LOBs in emerging markets. It suggests the potential research areas as intraday studies in emerging LOB markets; application of market indicators based on deeper levels of LOB, beyond the best prices; market fragmentation, order routing decision and its impact on order execution quality; optimal display of LOB levels; liquidity dynamics in quote-driven markets vis-à-vis LOB markets; effect of high-frequency trading on market microstructure; application of advanced techniques (e.g. machine learning models, zero-intelligent models); relationship between the trading speed, order aggressiveness, shape and resilience of the order book and informed trading; and information content of the auxiliary order submission strategies, including cancellation, amendments and hidden orders.

Originality/value

For the past 15 years, to the best of the knowledge, a comprehensive review of the literature on LOBs has not been published. The financial markets have transformed significantly over this period, driven by the adoption of LOBs, low latency trading and technological advancements in information dissemination. This article provides an extensive collection and classification of the literature on LOBs. This would be useful for the practitioners, future researchers and academics in the area of financial markets.

Abstract

Purpose

The purpose of this paper is to explore the implications of natural resource scarcity (NRS) for companies’ supply chain strategies.

Design/methodology/approach

Drawing on the resource dependence theory (RDT), a conceptual model is developed and validated through the means of exploratory research. The empirical work includes the assessment of qualitative data collected via 22 interviews representing six large multinational companies from the manufacturing sector.

Findings

When the resources are scarce and vitally important, companies use buffering strategies. Buffering and bridging strategies are preferred when there are a few alternative suppliers for the specific resource and when there is limited access to scarce natural resources.

Research limitations/implications

The research focuses on large multinational manufacturing companies so results may not be generalised to other sectors and to small- and medium-sized firms. Future research needs to examine the implications of NRS for organisational performance.

Practical implications

This research provides direction to manufacturing companies for adopting the best supply chain strategy to cope with NRS.

Originality/value

This paper adds to the body of knowledge by providing new data and empirical insights into the issue of NRS in supply chains. The RDT has not been previously employed in this context. Past studies are mainly conceptual and, thus, the value of this paper comes from using a qualitative approach on gaining in-depth insights into supply chain-related NRS strategies and its antecedents.

Abstract

Purpose

This study aims to highlight the impact of altruistic-self and hunger awareness on socially responsible food consumption through the lens of self-awareness and self-congruity theories due to the great challenge of Sustainable Development Goal 2: Zero Hunger.

Design/methodology/approach

A survey was conducted with a sample of 812 respondents. Exploratory Factor Analysis (EFA) and Confirmatory Factor Analysis (CFA) confirm each variable's structure through the measurement model and test the hypothesis to support a structural model.

Findings

The results highlight that the combination of altruistic-self and hunger awareness (AS-HA congruence) drives consumers to execute socially responsible food consumption. Meanwhile, consumers' food-saving attitude mediation translates to the attitude towards responsible and ethical use increasing socially responsible food consumption, a contextual development in the theory of congruence. Conversely, hunger awareness is not confirmed as significantly influencing socially responsible food consumption.

Practical implications

This research provides valuable insights for academicians and practitioners in developing food waste management strategies that can be implemented to reduce food wastage.

Originality/value

Food waste is a global concern and is challenging for many manufacturing, distribution and individual wastage levels. However, food wastage by consumers is one of the most critical problems which can be minimised with awareness and attitudinal changes in behaviour as a form of socially responsible consumption.

Abstract

Purpose

This paper aims to investigate the current state of research on sustainability-related manufacturing trade-offs (i.e. giving preference and priority to one dimension over others) that affect suppliers in developed and less developed countries (LDCs). There is growing pressure on suppliers to adopt sustainable practices into their global supply chains. Successfully implementing all three dimensions of the triple bottom line (TBL) imperative can provide organizations with an added capability and potentially result in competitive advantage and a focus on sustainable development goals (SDGs) in the long run. However, designing supply chains for achieving the TBL requires suppliers to recognize and overcome numerous trade-offs.

Design/methodology/approach

A systematic literature review comprising 71 papers published between 2004 and 2020 was undertaken using a content analysis approach to identify trade-offs affecting suppliers.

Findings

This study firstly identified eight sustainability-related trade-offs affecting suppliers from a TBL perspective in both developed and LDCs, consequently, allowing for a detailed discussion on trade-off factors and conditions unique to both developed and LDCs. Together, these findings enable this study to present initiatives and investment-related decisions for supply chains from a TBL perspective.

Originality/value

In spite of the plethora of studies on sustainable supply chains, there is little research on trade-offs, specifically those affecting sustainability of suppliers operating in LDCs. This paper addresses this critical gap and advances the literature on sustainability-related supply chain trade-offs.

Abstract

Purpose

The purpose of this paper is to review existing research on retail supply chain responsiveness, develop categories to be included in a retail-specific responsiveness framework, and identify future research areas within the scope of retail supply chain responsiveness.

Design/methodology/approach

This paper presents an inductive systematic literature review of 46 academic, peer-reviewed articles. Based around the two major review questions on retailers’ role in the creation of supply chain responsiveness and future research areas, an inductive, qualitative, content analysis was conducted. Further analysis was conducted by using the software NVivo 11.

Findings

Existing research are grouped into a framework of four categories that together span the existing research. The categories are labelled supply chain orchestration, market orientation, supply chain operations and supply management. Two to three subthemes in each category are presented. Thereafter, promising future research areas are outlined, covering methodological issues, theoretical underpinnings, inclusion of context variables and outcomes of retail supply chain responsiveness.

Research limitations/implications

The conducted systematic literature review has been limited to academic, peer-reviewed articles.

Practical implications

The findings of the paper constitute a promising initial step towards a retail-specific framework on retail supply chain responsiveness.

Originality/value

The paper questions the comprehensiveness of established models in responsiveness, and argues that existing “general” literature on supply chain responsiveness gives little guidance and structure to retailers’ specific role and involvement in supply chain responsiveness. In particular, the paper focusses on the retailers’ role for creation of supply chain responsiveness, which has not previously been addressed in research.

Abstract

Purpose

The main aims are underlining the role of functional foods (FFs) for population wellbeing, investigating the reasons in the self-consciousness of the different countries' populations and exploring what influences in purchasing decisions to address the management of food-producing businesses. This information will make consumer management easier.

Design/methodology/approach

A two-step methodology was adopted: (1) literature review and (2) online interview. The principal component analysis (PCA) was used to facilitate and reduce the data complexity. Software Stata/SE was used for data analysis in both Italy and Georgia.

Findings

Customers' attitudes, awareness level and decision-making process are clarified through the comparative analysis between Italian and Georgian populations. They have a number of reasons that incentivize their behavior. These reasons may be used by food-producing businesses to evaluate their performance and develop ad hoc strategies for consumer management.

Originality/value

The key elements that determine the FF and motivate the consumer to buy can constitute a foundation for actions related to the development and management of food-producing businesses. Knowing the factors that consumers consider in the process of choosing FFs will help define the strategies that businesses should use for product improvement, better managing the consumer. This study can support the development of education, prevention and promotion of managerial improvements. The innovative mixed methodology applied to the topic is one of the original factors of the study.

Abstract

Purpose

Drawing on a representative survey, this paper aims to identify the determinants of functional food consumption in Croatia. The objective is to introduce and test a conceptual model that four sets of factors (food choice motivations, demographic and socio-economic characteristics, knowledge of functional food and health status) underpin variations in functional food consumption.

Design/methodology/approach

Data were collected via face-to-face interviews conducted in respondents' homes. Consumption of functional foods is modelled as a bootstrapped ordered probit model.

Findings

Results confirm the significant influence of all four sets of factors for explaining variations in functional food consumption. Heavier users of functional food are those that place a greater weighting on health and convenience in food choice. In contrast, the salience of familiarity in food choice is negatively related with functional food consumption. Females and those with higher levels of educational attainment are heavier consumers of functional food. While perceived health status appears not to have any significant relationship with functional food consumption, there is a link with body mass index. Functional foods appeal most to those concerned about their health and desire convenient, “quick fixes”. Such “quick fixes” may however be employed at the expense of more fundamental adjustments to diet and fitness, which may provide the basis for superior overall disease prevention/health promotion.

Originality/value

The study represents one of the first assessments of functional food consumption in Central and Eastern Europe, introducing and testing a comprehensive conceptual model.
