Abstract

Purpose

It is very crucial to evaluate the suitability of food services from an environmental and economic point of view to design sustainable food menus. This study aims to analyse the food menus in a Turkish university refectory concerning sustainable nutrition and waste management and compare them with a proposed sustainable food menu.

Design/methodology/approach

The study examined lunch menus served in December and February 2021–2022 at Istanbul Medipol University refectory for a total of 20 days, considering the nutrient-rich food index (NRF 9.3), waste amount, food cost, water and carbon footprint parameters of the meals.

Findings

Comparing the December menu with the suggested sustainable December menu showed a significant reduction in carbon and water footprint (p = 0.001), food cost (p = 0.001) and NRF 9.3 score (p = 0.001). When February and the suggested sustainable February menu were compared, there was a significant decrease in carbon and water footprint (p = 0.001), food cost (p = 0.005) and NRF 9.3 score (p = 0.001). December and February menus had higher NRF 9.3 score compared to the sample sustainable menus, and the amounts of saturated fat, added sugar and sodium were also high in these menus.

Originality/value

The study revealed that university cafeteria menus are incompatible with sustainable nutrition. The findings can significantly contribute to improving the sustainability of meals and food services by minimizing the water and carbon footprint of menus.

Abstract

Purpose

The purpose of this paper is to identify the principal factors affecting walkability from the viewpoint of the inhabitants of Bursa. It is intended to discover whether inhabitants’ conception of factors affecting walkability complies with the factors identified by the authors in regard to literature review.

Design/methodology/approach

Based on several studies about influencing parameters of walkability, three main factors – spatial, social, economic – can be specified affecting the desire to walk by the user. In the content of this study, a conceptual model is developed for the assessment of factors influencing walkability. In this study, two different analysis methods are applied: qualitative approach: observation survey; and quantitative approach: questionnaire survey. By utilizing the conceptual model, a questionnaire is prepared and applied to 200 pedestrians in three streets. Moreover, the questionnaire items were factor analyzed to explore the principal factors affecting walkability from the viewpoint of the inhabitants of Bursa.

Findings

In the literature review part, the factors affecting walkability are defined as accessibility, comfort and use, environmental aesthetics, safety and security and connectivity. However, as a result of the survey applied to pedestrians in Bursa, it has been revealed that the most important factors are “Accessibility,” “Comfort and Use,” “Traffic Safety,” “Crime Security” and “Connectivity,” excluding the factor “Environmental Aesthetics.”

Originality/value

There is a need for studies which assess the factors influencing the walkability in tourism cities in depth. Tourism potential in Bursa, Turkey, has raised since it has been inscribed as a World Heritage Site by UNESCO in 2014. Therefore, walkability became one of the important issues in urban planning decisions for the streets in the historic city center in policies of the local government. The studies that assess the factors influencing walkability and the satisfaction of the pedestrians will open up new visions for urban decision makers. Within the scope of this study, existing historic city center in Bursa has been analyzed in terms of walkability.

Abstract

Purpose

The purpose of this study was to determine the relationship between the leadership orientations of nurses and their clinical decision-making skills.

Design/methodology/approach

This descriptive study was conducted between June and December 2018 on nurses working at three hospitals in Turkey. This study was completed with 1,100 nurses. The Personal Information Form, Leadership Orientation Scale and Clinical Decision-Making Scale in Nursing were used for data collection.

Findings

A significant correlation was found between the leadership orientations of nurses and age, sex, institution where they were employed, time spent in the profession, being in a management position and satisfaction with the current unit of employment (p < 0.05), and a significant correlation was found between clinical decision-making skills of nurses and age, sex and occupational status (p < 0.05). Furthermore, a significant correlation was found between the mean scores of the Leadership Orientation Scale and Clinical Decision-Making in Nursing Scale (p < 0.05).

Originality/value

The development of leadership orientations of nurses positively affects their clinical decision-making skills. In this respect, it is important to instill effective leadership orientations in nurses and to incorporate novel training methods in nursing education to develop accurate and timely clinical decision-making skills.

Abstract

Purpose

The utilization of oilseeds in food formulations is prevalent due to their health benefits and nutritional value. These protein-rich oilseeds serve as an affordable and essential source of nutrients and bioactive compounds, fulfilling human protein requirements. As such, this study sought to investigate the impact of partially replacing wheat flour with oilseeds in different proportions on the nutritional and quality characteristics of biscuits.

Design/methodology/approach

Oilseeds, including terebinth, sesame and flaxseed, were partially substituted with wheat flour in amounts of 0, 5, 10, 15, 20 and 25%. The effects of this substitution on the storage stability, nutritional content and physical properties of the resulting biscuits were examined.

Findings

The L* (from 69.75 to 54.06) and b* (from 28.59 to 21.60) color values of biscuits decreased with the supplement of oilseeds. The oilseeds addition increased the protein, fat, energy, and ash values of biscuits. At the highest level of added terebinth, sesame and flaxseed, respectively, the amounts measured were 5984.62 mgGAE/kg, 1553.85 mgGAE/kg and 2169.23 mgGAE/kg, which were higher than the control biscuits (715.39 mgGAE/kg). The incorporation of oilseeds resulted in a substantial decrease in pH and peroxide values, while the moisture content was increased throughout the 6-month storage period. The use of terebinth in biscuits led to better oxidative stability than sesame and flaxseed-containing samples. The biscuit samples with terebinth had a longer induction time. The lowest induction time of biscuits with 25% flaxseed was chosen, approximately 3.5 h.

Research limitations/implications

Oilseed flours, which are rich in lipids, have been shown to enhance the quality of biscuits. However, further studies could aim to reduce the amount of shortening used to improve their quality even further. Reducing the shortening could keep the lipid content at an acceptable amount, especially considering consumers' current expectations for low-fat foods.

Practical implications

Plant-based bioactive are generally known as secondary metabolites and have promising therapeutic attributes, especially antioxidative properties.

Social implications

Thanks to this composition, some of these seeds have proven effective in controlling and preventing metabolic diseases (hypertension, hypercholesterolemia, diabetes, coronary heart disease and several types of cancer) as well as providing interesting properties to foods.

Originality/value

As result, oilseeds can be successfully used as functional and sustainable food ingredients to improve the functional, nutritional and storage stability of biscuits.

Abstract

Purpose

This study aims to present the perspectives of heterodox economics and Islamic economics on environmental economics, as an alternative to mainstream economics, which takes economic growth as its main objective and argues that environmental problems will largely disappear when economic growth is achieved.

Design/methodology/approach

In this study, there was no intention to conduct a detailed analysis of heterodox economic models and Islamic economics. Instead, the approaches to the “environment,” which can be considered as an urgent need of the planet, were evaluated, and the inadequate proposals of the mainstream economics’ environmental approach were theoretically criticized and heterodox economics and Islamic economics were proposed as an alternative model.

Findings

Heterodox and Islamic economics offer alternative models of development prioritizing social and ecological justice to address environmental problems, which is in contrast to mainstream economics’ narrow focus on market mechanisms and individual rationality. Thus, engaging in more dialogue in the context of the environment is inevitable for both schools, considering the vast geography inhabited by Muslims and the proposed heterodox economic policies, and moreover, these approaches are modeled for the first time.

Originality/value

This article presents a synthesis of Islamic economics and heterodox thinking in contrast to mainstream economic policy, highlighting their similarities and differences and providing a more comprehensive understanding of the complexities and potential solutions of environmental problems. To the best of the authors’ knowledge, this approach has not been previously explored, making it an original contribution to the literature.

Abstract

Purpose

This study aims to propose a novel approach based on utility mining to find the associations among wind energy technologies.

Design/methodology/approach

The proposed approach uses patent documents and utility mining. Associations among wind energy technologies have been evaluated to show how the proposed approach works in practice.

Findings

Determining the relationships between wind energy technologies provide essential information to investors and decision-makers. Therefore, a real-life case study of wind energy technology is performed to show how the proposed approach works in practice. The proposed approach founds technology classes associated with wind energy technology. Furthermore, the strongest associations among technologies are also obtained by the proposed approach. The results of the case study show that the proposed approach can be easily used in practice. The maximum size of itemsets is 18-level itemsets. Y02E and F03D cooperative patent classification (CPC) codes appear on all itemsets. As the technologies of Y02E and F03D are directly correlated, they will be mutually developed in the future. Additionally, the number of patent corresponding to Y02E and F03D CPC codes are 7,494 and 6,577, respectively.

Originality/value

This is the first study that applies the utility mining-based approach to patent documents. Different levels of importance among technologies based on patent citations and the number of repetitions of each technology class are considered in the proposed approach.

Abstract

Purpose

The purpose of this study is to review and summarise the current body of literature on brand extension feedback effects and to identify which research issues are inhibiting advancement in this stream of literature. Based on this analysis, suggestions for future research are provided.

Design/methodology/approach

In a systematic literature review, criteria were used to identify relevant journal publications that have specifically investigated brand extension feedback effects (n = 53). Research articles were subsequently evaluated for further analysis.

Findings

Several issues may inhibit advancement in the literature on brand extension feedback effects. These include issues related the conceptual, methodological and context of research, as well as related to the consumer, product, brand and marketing. Specific research questions are provided which address issues found in this literature stream.

Research limitations/implications

This paper aims to resolve issues in research on brand extension feedback effects to facilitate more rapid advancement in this stream of literature.

Originality/value

This research fills a need to summarise the current state of the literature and identifies research issues that need to be addressed in the future.

Abstract

Purpose

Adopting the brand resonance approach, this research aimed to reveal the effect of emotional (perceived quality) and rational (brand trust) factors between brand experience and brand loyalty.

Design/methodology/approach

This article uses the brand resonance model to examine the above-mentioned relationship. The sample of the study consisted of 385 sports consumers between the ages of 18 and 65 years. An online survey was used to collect data and surveys were delivered to sports consumers via social media. Using SmartPLS 3.0 software, a partial least squares structural equation modeling analysis was conducted in this study.

Findings

The results support the hypotheses and demonstrate the importance of quality and trust in building customer loyalty for companies in the sports industry. Brand experience has a positive direct effect on perceived quality, brand trust and brand loyalty. It has been revealed that there is an important intermediary role of perceived quality and brand trust that manages the relationship between customers' brand experience and brand loyalty.

Practical implications

The findings of this study are essential for brands that want to develop and are included in the sports industry in the online shopping environment, which increases with the development of technology to create long-term loyalty in customers.

Originality/value

It reveals two mediating roles in the relationship between brand experience and brand loyalty, namely perceived quality and brand trust. These research results help to understand the processes of shaping the loyalty of sports consumers towards sports brands. Unlike previous studies, it examines this relationship in the sports industry by adding new mediator variables and contributes to the development of the model.

Abstract

Purpose

The New York Times has suggested replacing sustainable fashion with responsible fashion, emphasizing the need for joint efforts by both individual consumers and retailers to take responsibility for their own decisions and actions. This study seeks to investigate the mechanism that activates individuals' personal social responsibility (PSR) and its association with their perceived corporate social responsibility (CSR) from a responsible luxury fashion retailer.

Design/methodology/approach

An online experiment was conducted with a nationwide US sample of luxury consumers who were randomly assigned to either individuation or deindividuation groups. Covariance-based structural equation modeling (CB-SEM) and multi-group SEM were employed to test the hypotheses.

Findings

Individuals' universalism positively affected PSR, which then enhanced their recognition of a responsible luxury retailer’s CSR and led to a greater willingness to pay a premium. More importantly, the positive effect of universalism on PSR was strengthened when consumers’ unique individuality, rather than their deindividuated state, was emphasized. Moreover, the moderating effect of individuation was indirectly transmitted through PSR to perceived CSR, hence reinforcing the relationship between PSR and CSR.

Originality/value

This study significantly advances existing scholarship on sustainable luxury retailing and adds rigor to deindividuation theory by demonstrating the central role of PSR and the moderating effect of individuation in enhancing recognition of a luxury fashion retailer’s CSR commitments. The findings provide luxury fashion retailers with communication and marketing strategies that highlight consumers' unique individuality to more effectively activate their sense of personal responsibility and thereby increase their recognition of the retailer’s CSR.
