Abstract
While concentration of population in urban areas continues, limited contact with ecological dynamics undermines awareness on human dependence on ecosystems. However, demands on ecosystems have never been higher than in today's urbanized planet, and cities make major contributions to global environmental problems. Enhancing green and blue infrastructure (GBI) in cities can reduce the ecological footprints of cities, while enhancing urban resilience and quality of life for their inhabitants. Urban GBIs provide multiple benefits to people in the form of ecosystem services (ES) and hold potential for providing nature-based solutions (NBS) to address urban challenges.
To adequately evaluate the ES provided by GBI, researchers have recently advocated integrated valuations. Integrated valuations aim at overcoming the limitations of the traditional single discipline and narrow approaches, by considering the multiple ways in which humans benefit from nature across the economic social and cultural domains.
In this chapter, we present examples of integrated valuations of ES in two Spanish cities, Barcelona and Bilbao. Both examples combine different valuation techniques and metrics, both monetary and nonmonetary, to account for the ES provided by urban GBIs and to assess their potential as NBS.
Our case examples show that urban GBIs provide many valuable benefits to urban dwellers. One of the clearest outcomes from these infrastructures is cultural ES, especially the multiple recreation and leisure opportunities they provide, which in turn has a remarkable positive effect on human health and well-being.

Abstract
Purpose
There are many herbal supplements on the market claiming to aid weight loss but few are evidence‐based. This study aims to test one such formulation.
Design/methodology/approach
An over‐the‐counter herbal supplement containing yerba maté, guarana and damiana (YGD) was tested in 73 overweight health professionals for six weeks. Subjects were not asked to make any lifestyle changes.
Findings
Self‐reported weight, waist circumference and hip circumference reduced significantly, while 22 per cent of subjects experienced a clinically significant weight loss. The anthropometric changes were in line with other commercial diet and exercise programmes. Reported between‐meal hunger, and consumption of snacks reduced across the six weeks. Reported satiety after meals increased and subjects claimed to be more in control of snacking, emotional eating and portion sizes. A follow‐up at week ten, when 82 per cent of subjects had stopped taking YGD, revealed no additional reductions in weight or hip circumference. Fullness ratings had stabilised, while hunger ratings had increased. There were no consistent adverse effects that could reasonably be related to YGD.
Research limitations/implications
Taken alongside a 2001 randomised, placebo‐controlled trial, this study provides evidence that a YGD supplement can aid weight loss and reduce waist and hip circumference, probably by increasing satiety.
Originality/value
The growing market in weight management products brings with it a responsibility for manufacturers to provide evidence that their products work. This paper adds to the evidence base.

Abstract
Purpose
Aims to carry out a consumer intervention study to evaluate the impact of an over‐the‐counter herbal weight management product (Zotrim®) on weight and waist circumference.
Design/methodology/approach
Overweight women were recruited using local media and 61 passed initial screening to begin a four‐week intervention using a free sample of Zotrim at a dosage corresponding to manufacturers’ recommendations. A total of 56 subjects completed the study, but data on all 61 were included in the “intention to treat” analysis.
Findings
There was a self‐reported mean weight loss of 1.79kg (0.45kg per week) at week 4. Data on perceived hunger and fullness from three sets of questionnaires suggested that subjects felt less hungry between meals and fuller after meals at weeks 1 and 4 compared with base‐line. This is likely to have impacted on energy intake and may account for the weight loss. Average weight loss as a percentage of baseline was 2.3 per cent, but this masked a broad range, suggesting that some subjects benefited more than others. Taking into account adjusted guidelines for clinically significant weight loss, 23 per cent of subjects achieved this cut‐off, suggesting that their risk of chronic disease had reduced. Similarly, waist circumference (an independent measure of disease risk) decreased by an average of 4.3cm during the four‐week period. This reduced the number of subjects exceeding SIGN guidelines for central obesity from 93 per cent to 83 per cent.
Originality/value
Adds to the body of knowledge by proring that Zotrim can aid weight loss and help reduce waist circumference.

Abstract
Purpose
This study aims to examine Victorian primary school parents’ perspectives about a potential school-provided lunch program (LP).
Design/methodology/approach
An online cross-sectional survey was conducted in Victoria, Australia, in 2022 to explore parents’ perceptions regarding the lunch menu, funding source, amount willing to pay, frequency of meals and special dietary needs of a school-provided LP.
Findings
Over half of parents (57% out of 359) said they would allow their child to participate in a school LP, 34% were unsure and only 9% said they would not. The opportunity for hot cooked lunches at school and the perceived convenience for parents were the top two reasons for favouring such a program. Fifty-eight percent were in favour of hybrid-type funding from both the government and parents. The most preferred amount to pay per meal was AUD5-6 (43%), followed by AUD3-4 (25%). Parents expected meals to be healthy and made from whole food and cater to the special dietary and cultural needs of their children. They also expected enough time to be allocated so children could eat and enjoy the meals.
Originality/value
To the best of the authors’ knowledge, this is the first study to explore Victorian parents’ perceptions regarding the above aspects of a school-provided LP. The findings suggest that parents are receptive to a school-provided LP; they, however, did have several expectations regarding the menu and time for eating. These findings provide important directions for designing future school-provided LPs at primary schools in Australia.

Abstract
Purpose
Social, physical and temporal characteristics are known to influence the eating experience and the effectiveness of nutritional policies. As the school meal service features prominently in UK nutritional and health promotion policy, the paper's aim is to investigate the characteristics of the primary school dining context and their implications for eating behaviours.
Design/methodology/approach
A case study of one local authority in Wales was conducted involving 11 primary schools stratified into socio‐economic quartiles. Focussed observations were carried out over two to three lunchtimes per school to explore their social, physical and temporal characteristics. These were supplemented by semi‐structured interviews with catering staff and midday supervisors.
Findings
The dining halls had numerous generic attributes (e.g. accommodation, equipment, length of lunchtime, social actors). These interacted to have a direct, but not necessarily positive, bearing on food choice and consumption. Overcrowded, multi‐purpose dining halls coupled with time pressures and dynamic social situations detracted from the eating experience and the ability of staff to encourage children to eat.
Practical implications
Without addressing these underlying issues, school nutritional policy may only play a limited role in influencing what children eat. It is recommended that policy places a greater emphasis on factors such as the eating environment; the time available for eating; and the role of the midday supervisor.
Originality/value
Previous studies of dining halls have generally been part of process evaluations of nutritional interventions. This study adds value by conducting a focussed investigation into the relationship between the dining hall environment and eating behaviours.

Purpose
This study was aimed to develop and evaluate nutritional efficacy and bio-efficacy of food products from plantain, soycake, rice-bran and oat-bran flour.
Design/methodology/approach
The flour samples were blended as follows: plantain 70% and soycake 30% (PS); plantain 65%, soycake 30% and rice bran 5% (PSR); plantain 65%, soycake 30% and oat bran 5% (PSO); and plantain 60%, soycake 30%, rice bran 5% and oat bran 5% (PSRO). Antioxidant and nutritional properties of the blended foods and controls (100% plantain and Cerolina) were determined.
Findings
Protein (16.2–19.4 g/100g) and biological values (98.5–99.3%) of the food samples were significantly (p = 0.03) higher than 100% plantain (5 g/100g, 31.6%) and Cerolina (17.9 g/100g, 98.3%). Pack cell volume (36.2–42%), serum protein (7.3–9.3 mg/dL), urea/creatinine (1.1–2.8) and aspartate-aminotransferase/alanine-aminotransferase ratio (0.9–1) of the foods were significantly (p = 0.03, 0.01, 0.02 and <0.01, respectively) higher than 100% plantain (28%, 1.6 mg/dL, 4.6 and 0.8) and Cerolina (46%, 4.9 mg/dL, 3 and 0.73). In vivo antioxidant activity of the food samples decreased from PSRO to PSO, PSR and PS, respectively and were higher than control samples. Nutritional performance of formulated foods in rats was similar to that of Cerolina, but higher than in 100% plantain. Cerolina and 100% plantain were rated higher in overall acceptability than formulated foods; however, PSO was most preferred followed by PSRO for the formulated foods.
Originality/value
The study established that PSRO was rated best in terms of nutrition, growth performance and antioxidant activities. Hence, this food may be suitable as functional food to prevent malnutrition and oxidative stress.

Purpose
This paper aims to examine the effect of a food-inspired multimedia intervention on children’s fruits and vegetables (F&V) consumption in a real-life setting during lunch.
Design
Children in an elementary school in Bologna (Italy) in third, fourth and fifth grade, aged between 9 and 12 years old, were examined (N = 171). Two different types of messages (generic and specific) were used to test message-tailoring in two separate intervention groups and one control group. The two intervention groups (classes) were presented with multimedia messages during an English lesson before lunchtime, and their eating behavior during lunch at school was observed. All children were served the first and second course, vegetables and fruit during lunchtime. Data was analyzed with R 3.4.2. Mann–Whitney U, Kruskal–Wallis and ANOVA tests were used to test for group differences, ordered logistic regression for modelling fruit and vegetable consumption.
Findings
The results show that children receiving a specific message targeting F&V consumed more fruit than the other two study groups. No effect on vegetable consumption was observed. Results from an ordered logit model support the notion that the multimedia message impacted fruit intake in the specific message group when taking other variables into account, such as F&V consumption and availability at home and children’s attitude toward F&V.
Originality
While many studies have considered a group of intervention for understanding the effect of multimedia, this study is focused only on the effect of a message (generic or specific). Moreover, participants, children, were not informed that they were participating in a study on fruit and vegetables consumption, and thus were following their daily routine.

Abstract
Purpose
Adhering to the guidelines regarding the consumption of fruit and vegetables is associated with positive health outcomes. Subjective well-being has been demonstrated to have a causal influence on positive health outcomes. The aim of this paper is to examine whether subjective well-being could add to the Theory of Planned Behaviour (TPB) in predicting fruit and vegetable consumption.
Design/methodology/approach
A total of 72 undergraduates completed online measures of the TPB variables, subjective well-being components (happiness and life satisfaction) and fruit and vegetable consumption at a single time point.
Findings
Subjective well-being made a significant contribution to the variance explained for both intention to consume fruit and vegetables and actual fruit and vegetable consumption (1.7% and 4.3%, respectively). Perceived behavioural control and happiness were found to be significant unique predictors of fruit and vegetable consumption.
Originality/value
The TPB appears a useful model for predicting fruit and vegetable consumption, which is enhanced by the addition of subjective well-being variables. The current study provides direction to future interventions, suggesting that targeting perceived behavioural control and the subjective well-being component of happiness may be useful for improving fruit and vegetable consumption in young adults.

Purpose
The purpose is to understand the factors affecting Chinese diet selections and propose strategies for revolutionizing Chinese diets toward healthy ones.
Design/methodology/approach
This study implemented an online discrete choice experiment to identify the factors affecting diet selections among urban Chinese consumers. Four different diet patterns were used to label each of the product alternatives in the experiment, which varied in taste and cost. Specifically, implying the healthiness and sustainability of a diet, the diet alternatives included the average diet, the Chinese Food Guide Pagoda diet, the EAT-Lancet diet and the Flexitarian diet. Using consumer data from six provincial capital cities, we used random parameter logit models to estimate their preferences.
Findings
Diet type and diet cost were found to be more important in urban Chinese consumers' diet selections than the ability to customize taste. The average diet, although not healthy and sustainable, was preferred most by respondents, signaling the challenges of shifting the consumer diet in China. Increasing the cost of the average diet can significantly promote sustainable healthy diet choices among urban Chinese residents. In other words, improving the affordability of sustainable healthy diets would have the potential to fuel the diet revolution in China.
Originality/value
Instead of choices of a single food item, this paper focused on the individual selection of a diet, where different food products can act as substitutes or as complements for one another. We also proposed a way to assess individual preferences and valuations for several different diets.

Abstract
Purpose
The purpose of this paper is to analyze the differences in pupils’ satisfaction on various aspects of mid-day meal (MDM) program in India across food catered by centralized and decentralized kitchens.
Design/methodology/approach
The study is based on structured questionnaire survey through personal interviews of 1,200 school children of primary and upper primary schools of four districts of the state of Uttar Pradesh, India. Simple statistical tools such as descriptive statistics, factor analysis, t-test and analysis of variance (ANOVA) have been used for meaningful data analysis.
Findings
Pupils’ responses on 17 attributes of their satisfaction on school meal program were reduced to four components − quality of food, social bonding, health and hygiene and availability of support infrastructure, using factor analysis technique. Findings show the perceived differences in satisfaction on various aspects of MDM program. Further, ANOVA indicate that there is significant difference in the satisfaction level on MDM supplied through centralized and decentralized kitchens.
Practical implications
This study provides an understanding of pupils’ perceptions of school meal program in order to enable policy makers, school administration and caterers of MDM to design better food service delivery models.
Social implications
Findings of the study clearly indicate that benefit of social bonding is an added advantage to continue the school meal program irrespective of the fact whether food is served through centralized or decentralized kitchens.
Originality/value
There are several evaluation studies undertaken by various agencies to assess the impact of MDM program in India. However, there are only limited numbers of studies available, which have analyzed the children’s satisfaction on school MDM program across kitchen types.
