Abstract

Purpose

The main purpose of this paper is to determine the content of amino acids, fatty acids and minerals in seven indigenous leafy vegetables (ILVs) in Ghana.

Design/methodology/approach

Leaves from plants growing near Kumasi were milled to a fine powder, dried to constant weight in a vacuum desiccator, and analyzed for their content of the afore‐mentioned nutrients. The plants were: Hibiscus sabdarifa, Hibiscus cannabinus, Amaranthus cruentus, Corchorus oliforius, Solanum macrocarpon, Xanthomosa sagittifolium and Vigna unguiculatus.

Findings

All seven ILVs contained a large amount of protein (15.5‐22.8 percent), which compared favorably to the essential amino acid pattern of a WHO standard. They all contained nutritionally useful amounts of α‐linolenic acid and had an omega‐6/omega‐3 ratio of 0.1‐0.9. The seven ILVs contained quantities of calcium, copper, iron, magnesium, manganese, molybdenum and zinc that could contribute significantly to satisfying an individual's need for these elements.

Research limitations/implications

The presence of relatively large amounts of various nutritionally essential macro‐ and micronutrients in these seven ILVs does not necessarily mean these nutrients are bioavailable. Future research is required to determine the amounts of anti‐nutrients (e.g. protease inhibitors, chelators) in these vegetables, and the extent to which their protein, lipid and mineral constituents are digested and/or absorbed.

Originality/value

Since malnutrition (e.g. iron‐deficiency anemia, rickets, zinc deficiency, protein‐calorie malnutrition) is common in sub‐Saharan Africa, the information which is provided should increase awareness among agricultural and public health officials of the nutritional value of seven underappreciated and underutilized ILVs that are indigenous to Ghana and many other parts of Africa.

Abstract

Purpose

This study looked at the potential applications of geographic information systems (GIS) and remote sensing (RS) for inclusive community development and participation, sustainable tourism, and rural community-based natural resource management (CBNRM) in sub-Saharan Africa and other rural areas worldwide.

Design/methodology/approach

To evaluate resource management systems for rural tourism and the environment in Africa and abroad. The study makes use of reviews of relevant literature and documents, and while linking applications for sustainable tourism and local community empowerment with CBNRM and GIS, vital content was manually analyzed.

Findings

The study shows a potential affinity between agricultural and tourism businesses that GIS in line with the CBNRM conception can strengthen. In many rural and underdeveloped regions of the continent, this highlights the need for a credible and varied tourism strategy to develop and empower the relevant communities.

Originality/value

Most agricultural communities in Africa are located in low-income regions. Such areas are rich in natural wildlife and have popular tourist destinations. A mix of regional community development initiatives can be built using GIS, sustainable tourism, CBNRM, and community-based tourism (CBT).

Abstract

Purpose

The COVID-19 pandemic has long-lasting effects that necessitate business revision, innovation, and transformation in the hospital industry. The research in this field is, however, still incredibly underdeveloped. Hotels have faced unprecedented pressure due to the outbreak of novel COVID-19, forcing many to close temporarily or permanently. The aim of this study is to assess COVID-19 effect on hotels within the Bono region of Ghana, as the protocols are currently relaxed.

Design/methodology/approach

Using a quantitative approach, a stratified and purposive sampling method was used and 174 hotel managers in the Bono region responded to the research questions in relation to how their businesses were affected by the COVID-19 pandemic.

Findings

The findings showed that the most prominent and recurring measures among hotels are the application of hygiene standards, employee training and awareness, reduction of employees’ guest contact and ensuring a safer environment for both guests and employees.

Research limitations/implications

The study’s sample frame covers hotels in the Bono region of Ghana with lower star classifications, ranging from affordable to three stars in quality and service. Hotels should emphasize the importance of providing their personnel with ongoing training and education to prepare them to deal with the outbreak of the pandemic.

Practical implications

As a result, the study suggests that hotel operators give innovative, fascinating and delightful accommodation experiences that may boost customers’ authentic happiness, as well as offer possibilities for customers to gain positive, memorable experiences from their experience.

Social implications

Academia and hotel managers need to contribute to theory development in hotel marketing by analyzing changes in customer expectations and industry recovery measures to affect good changes in industry best practices in the aftermath of the epidemic.

Originality/value

This study makes a significant contribution to the body of knowledge of the service delivery system model research because it is one of the initial studies to examine hotel business operations and activities during the COVID-19 utilizing the Bono region as a case. Theoretical, managerial and policy implications are discussed to cope with this crisis.
