Abstract

Purpose

The purpose of this paper is to explain the ethical issues faced by licensees and how they are addressed to ensure suitable behaviour by customers.

Design/methodology/approach

The daily round of “problem drinkers” is identified, and the attitudes to their service examined.

Findings

In order to run a profitable business, only those who cause offence to others are likely to be refused service.

Practical implications

This paper should provide academics and others not directly involved in the industry with an idea of some of the issues faced by licensees.

Originality value

Little work has been done on the opinions and attitudes of licensees to the issues of problem drinkers. This paper may help to rectify that.

Purpose

The article aims to provide a practitioner perspective and case study of the challenges involved in sustaining a successful food operation in a UK public house.

Design/methodology/approach

The article uses a case study and the personal and professional reflections of an experienced publican to provide a practitioner viewpoint.

Findings

The paper uses a case study to illustrate the ways in which external and often uncontrollable factors affect the stability of pub food operations.

Practical implications

The article provides an array of practical insights on the challenges faced by publicans in creating and sustaining successful food operations.

Originality/value

The article draws on the personal and professional reflections of an experienced publican.

Abstract

Reports the results of a survey of the service encounters in sauna and massage parlours in the UK offering sex for sale. Draws evidence from a customer generated World Wide Web site and a case study of a small massage parlour in a small town in the north west of England. Concludes that the initial contact with the reception and the working girl is crucial to success together with the physical environment. Suggests that the woner’s ability to manage these in ways that recognize the client’s sensitivities and emotional needs will be vital for future sustainability.
