This study aims to develop fiber-enriched cutlets from minced meat of rohu and study the effects of fiber inclusion on composition, cooking properties and acceptability of cutlets.
Abstract
Purpose
This study aims to develop fiber-enriched cutlets from minced meat of rohu and study the effects of fiber inclusion on composition, cooking properties and acceptability of cutlets.
Design/methodology/approach
Cutlet mix prepared using rohu mince was divided into four lots, out of which three lots were enriched with fibers from ragi (RFC), jowar (JFC) and oat (OFC) at 10 per cent over and above its quantity. Prepared cutlets were analyzed for nutritional composition, texture, cooking properties and sensorial quality.
Findings
Moisture, protein, fat, fiber and ash contents (per cent) of the fiber-enriched cutlets ranged between 40.4-42.0, 24.5-25.5, 13.2-14.7, 1.8-2.0 and 2.4-2.5 per cent, respectively. The addition of fibers increased the cooking yield of cutlets from 84.6 to 87.5 per cent. RFC lot cutlets had the lowest whiteness values and the highest hardness and shear force values. Cutlets from all the lots had an overall acceptability scores more than 7.0, indicating the sensorial acceptability. Although the differences were insignificant, cutlets from the RFC lot were less acceptable, which might be because of the dark color and tough texture. Hence, jowar and oat flour at 10 per cent can be used to enrich rohu cutlets without affecting their sensorial acceptability.
Research limitations/implications
Sources of fiber will be the major limitation in the work, as the fiber inclusion may negatively affect the quality and acceptability of cutlets. Time of cooking will also influence the final product characteristics, which need to be standardized.
Practical implications
Fish is a rich source of protein but lacks fiber, which is essential for body metabolism. Grains are rich source of fibers but lack some essential nutrients required by the body. In India, many people are dependent on fish for protein due to its high nutritious value. So enriching fish meat with fiber sources will address the health-related problems associated with low-fiber diets. The methodology developed in this work can be used to fulfill the demand for balanced and nutritious diet. Because of increasing health awareness, fish products with added fiber will also increase its market potential.
Social implications
The methodology developed can be used by small-scale entrepreneurs to earn more income by developing functional fish products with low-cost ingredients. The developed products will not only address the issues related to the consumption of low-fiber diets but also create a market for fish products because of their health-benefiting effects.
Originality/value
The work is completely original in nature. The results reported are unique and the outcome of the research has social applicability.

Abstract
Purpose
This paper aims to study the concept, characteristics and factors of the resilient supply chain (RSC) and develop a hierarchical structural model and classify the factors based on their interrelationships.
Design/methodology/approach
This paper has used a mixed-approach of literature review and expert opinion to identify the factors of RSC. For the development of the structural model and clustering of the factors, this paper has used the total interpretive structural modeling approach with Matrice d’Impacts Croises-Multiplication Applique and Classment and decision-making trial and evaluation laboratory analysis.
Findings
In total, this study has identified 17 factors that enable the 3R capability of the RSC. The result shows that the factors have a close dependence relationship with supply chain (SC) risk management culture as the most influencing factor. Further, this study classifies the factors into enablers and strategies.
Research limitations/implications
This research work is the theoretical contribution to the RSC concept and helps the experts to develop and improve the resilient ability in the SC. This research is based entirely on subjective expert feedback; thus, the results are sensitive to the expert’s judgment.
Practical implications
This research will help the decision-makers in allocating the resources and policies to develop or improve the SC capabilities.
Originality/value
This research work is the first kind of research in the field of the RSC that considers the 3R concept to identify and model the resilient factors of the SC. Along with the theoretical concept, this research provides empirical evidence for the importance ranking of the factors.

Abstract
Purpose
Obesity in children and adolescents is a significant public health concern. The World Health Organization Health Promoting Schools (HPS) framework promotes good nutrition and physical activity in school settings. While HPS is embraced globally, effective implementation and sustainable programmes are a continued challenge. This paper aims to report on the characteristics of current school interventions based on HPS and implementation barriers and enablers.
Design/methodology/approach
A literature search identified peer-reviewed studies of school health interventions reflective of the HPS framework focusing on obesity prevention. Studies from all countries were included, if conducted in primary and/or secondary schools; included a sufficient amount of qualitative implementation or process evaluation data to draw conclusions regarding key barriers and enablers to implementation; and were published in English.
Findings
Nine interventions (n = 9) from seven countries were included. Most were implemented in primary schools and focused on specific grade levels. Engaging parents, the home environment, teacher time constraints, fun interventions, student participation, teacher training, integration with the curriculum and stakeholder engagement all emerged as strong implementation themes. Teachers as role models, establishing community partnerships and policy support also emerged as common themes.
Originality/value
Future interventions may benefit from enhancing teacher and parent health promotion. Partnerships with initiatives focusing on environmental sustainability may simultaneously benefit human and planetary health while strengthening stakeholder engagement opportunities and consistent messaging throughout the community. More comprehensive evaluation data are needed, in particular, for long-term HPS initiatives.

Abstract
Purpose
The purpose of this paper is to design an innovative autonomous carrier landing system (ACLS) using novel robust adaptive preview control (RAPC) method, which can assure safe and successful autonomous carrier landing under the influence of airwake disturbance and irregular deck motion. To design a deck motion predictor based on an unscented Kalman filter (UKF), which predicts the touchdown point, very precisely.
Design/methodology/approach
An ACLS is comprising a UKF based deck motion predictor, a previewable glide path module and a control system. The previewable information is augmented with the system and then latitude and longitudinal controllers are designed based on the preview control scheme, in which the robust adaptive feedback and feedforward gain’s laws are obtained through Lyapunov stability theorem and linear matrix inequality approach, guarantying the closed-loop system’s asymptotic stability.
Findings
The autonomous carrier landing problem is solved by proposing robust ACLS, which is validated through numerical simulation in presence of sea disturbance and time-varying external disturbances.
Practical implications
The ACLS is designed considering the practical aspects of the application, presenting superior performance with extended robustness.
Originality/value
The novel RAPC, relative motion-based guidance system and deck motion compensation mechanism are developed and presented, never been implemented for autonomous carrier landing operations.

Abstract
Purpose
The purpose of the paper is to examine the current status of prison libraries, their role, services and collection in Pakistani context. It also attempts to highlight the main problems faced by selected libraries.
Design/methodology/approach
The qualitative research approach was adopted to achieve the study objectives. Data were collected using face-to-face interviews to find out respondents’ views about libraries in prison.
Findings
Findings of the study confirmed that inmates’ library queries are mostly related to the legal matters, and it is quite natural. One of the significant services of the Pakistani prison libraries is to help prisoners in their education. The main role of the library caretaker was to educate and offer rehabilitation programs. Unavailability of library space, lack of professional staff, limited collections, poor budgetary situation and censorship issues are the major challenges that Pakistani prison libraries are facing.
Social implications
The study findings further implicate that open libraries and access to books would promote positivity within society and reduce criminal and immoral acts.
Originality/value
It is the first of its kind and unique study that presents the current situation of prison libraries in the Pakistani context. The study has practical implications for policymakers to give importance to prison libraries in terms of finance, professional staff and the availability of information sources.
