Abstract
Purpose
Protein-energy wasting is a common complication among patients with kidney failure undergoing dialysis. This study aims to develop a homemade oral nutrition supplement (ONS) to fulfill the energy and protein requirements of these patients.
Design/methodology/approach
Three formulations of homemade ONS were developed using soybean milk, whey protein isolates and canola oil. Two of these formulations were flavored with pineapple and honeydew juices, respectively. The energy and macronutrient contents were determined using proximate analyses, and mineral contents were determined using inductively coupled plasma optical emission spectroscopy. The acceptance of homemade ONS for five attributes, namely color, taste, odor, consistency and overall acceptability, was assessed using the nine-point hedonic scale.
Findings
The homemade ONS provided 198–212 kcal and 8.4–9.6 g protein per 100 mL, which were comparable to commercial products. Similarly, the sodium (45–65 mg/100 mL) and phosphorus (56–66 mg/100 mL) contents were on par with commercial products. However, the potassium content of homemade ONS was higher, ranging from 141 to 155 mg per 100 mL. The sensory evaluation indicated that the formulation added with honeydew juice had a similar degree of acceptance as the commercial ONS, while formulations containing pineapple juice and without added fruit juice were less favored.
Originality/value
A few studies have investigated the development of food products for individuals with kidney failure on dialysis. However, to the best of the authors’ knowledge, this is the first study to focus on developing a homemade ONS specifically tailored to meet the unique nutritional needs of hemodialysis patients. In addition, this research included a comprehensive assessment of the beverage’s nutritional content and sensory attributes.

Purpose
The purpose of this paper is to investigate empirically how information and communication technologies (ICT) can contribute to reduction of CO2 emissions in road freight transport and to identify opportunities for further improvements.
Design/methodology/approach
This research adopts a multiple case study approach with three leading UK grocery retailers as exemplars of fast-moving consumer goods retailers, conducted using multiple data collection techniques including interviews, system demonstrations, onsite observations and the use of archive information.
Findings
ICT solutions have a direct positive impact on CO2 emissions reduction but opportunities to further reduce CO2 emissions are perceived as lying beyond retailers’ own distribution networks. These opportunities are not fully utilised due to the complexities of collaborative ICT provisions and retailers’ reluctance to share information with competitors.
Research limitations/implications
A limitation of the study is that it is exploratory and only three cases were examined. Even though these three retailers represent over 60 per cent of the UK grocery retail sector, other retailers may deploy significantly different ICT applications.
Practical implications
The research provides an overarching insight for businesses on how to leverage the existing and emerging information technologies for environmental and economic benefits.
Originality/value
While sustainability issues have received increasing attention recently, the role of ICT in freight transport for CO2 emissions reduction has not been investigated in depth and its impact is largely unknown. This research advances understanding about how ICT contributes CO2 emissions reductions and provides a framework for further investigation.

Abstract
This chapter discusses the coupling of High Impact Educational Practices with an Active Learning pedagogical approach applied within an introductory undergraduate Visual Communication course (VC1). The course involves several high impact educational practices, such as collaborative assignments, community-based learning, and ePortfolios as reflective tools. VC1 is also open across the School of Art, Design, and Media and accordingly attracts a diverse, multicultural cohort. This heterogeneity provided an ideal circumstance to encourage the exploration of differing cultural perspectives, life experiences, and worldviews and, subsequently, an opportunity for students to better connect with the subject matter on an intercultural level. While the entire course successfully implemented several high impact practices (HIP), this chapter aims to provide a concise overview of these methods before differing to a more microanalysis; focusing on an integrated, preventing visual plagiarism workshop, which leveraged global knowledge, active learning, and collaborative discourse to facilitate improved academic integrity among the student body. The workshop engaged students by posing ethically driven questions through active learning exercises, such as case study discussions and reflective making activities, to open dialogues and encourage debate on various, and often opposing, ethical perspectives. The overarching objective of this workshop was for students to develop best practice ethical frameworks to subsequently inform and underpin their creative practice, both within higher education and in a professional industry context.

Massive multiplayer online role-playing games (MMORPGs) are representative metaverse games that are thriving in academia and the industry. This study aims to develop an integrated model based on Yee's motivations and the Proteus effect to explore individuals' intentions of playing MMORPGs.
Design/methodology/approach
The data were gathered by conducting an online survey (n = 441) for the players of World of Warcraft, an MMORPG. The collected data were analyzed with a structural equation model.
Findings
The outcomes of this research reveal that the Proteus effect positively influenced the intentions of the players to play the game via mediations of social, immersion, achievement motivations and enjoyment. Furthermore, the players influenced by the Proteus effect, which enables avatar embodiment and identification, exhibited a stronger intention to play MMORPGs.
Originality/value
This research is one of the first attempts to establish a theoretical framework involving the Proteus effect and Yee's motivations. In addition, the findings of this study imply that the Proteus effect should be considered when investigating the individual experience of metaverse games.

Scholars have discouraged using silence in crises as it magnifies the information vacuum (see Pang, 2013). The purpose of this paper is to argue for its viability and explore the type of silence that can be used.
Design/methodology/approach
Eight international cases were analyzed to examine how silence was adopted, sustained and broken.
Findings
The findings uncovered three intention-based typologies of strategic silence: delaying, avoiding and hiding silences. Among such, avoiding/hiding silence intensified crises and adversely affected post-silence organizational image when forcefully broken, while delaying silence helped preserve/restore image with primary stakeholders if successfully sustained and broken as planned.
Research limitations/implications
First, these findings may lack generalizability due to the limited number of cases studied. Second, local sentiments may not be fully represented in the English-language news examined as they may be written for a different audience. Finally, a number of cases studied were still ongoing at the time of writing, so the overall effectiveness of the strategy employed might be compromised as future events unfold.
Practical implications
A stage-based practical guide to adopting delaying silence is proposed as a supporting strategy before the execution of crisis response strategies.
Originality/value
This is one of the few studies to examine the role of silence in crisis communication as silence is not recognized as a type of response in dominant crisis theories – be it the situational crisis communication theory or the image repair theory (An and Cheng, 2010; Benoit, 2015; Benoit and Pang, 2008; Xu and Li, 2013).

This paper examines cases of multiculturalism in Singapore and Malaysia. Through causal sociocultural mechanisms, the authors observe how two countries in proximity, with shared histories and demographic profiles, achieve differing outcomes in regard to social cohesion and competitiveness.
Design/methodology/approach
The paper employs case-centric process tracing (CPT) to build a “plausible” explanation of causal mechanisms that can contribute to social cohesion and competitiveness. The authors adopt a common analytical framework to distil the nuances of generalizability and a cross-case analysis in order to ascertain factors that enable multiculturalism.
Findings
Different causal mechanisms result in diverging outcomes in the two countries. In managing multiculturalism, Singapore has pursued policy actions emphasizing “integration and pragmatism,” while Malaysia has followed a model of “separation and preferentialism.” Judging by a selected number of established indicators, Singapore's multiculturalism outcomes seem more successful than that of Malaysia in respect to areas of national competitiveness and interethnic tolerance.
Practical implications
This paper sheds insights on the policy actions that promoted multicultural integration. The process tracing approach is found to be a useful tool in helping policymakers understand how intrinsic mechanisms can contribute to more/less desirable socioeconomic outcomes.
Originality/value
Together with the evidence using the CPT approach, the paper draws attention to multiculturalism evolving through distinctive sets of public policy. The authors ultimately suggest that such policies can be paralleled to the function played by institutions in leading to “varieties of capitalism” and have an impact on achieving cohesive and competitive societies.

Purpose
Improving construction supply chain collaboration and performance is central for achieving short‐term business objectives as well as long‐term competitive advantage. Lean thinking is an approach that has been adopted in many different industrial settings as a means for improving supply chain performance. In the project‐based construction industry, lean thinking has, however, not yet been widely adopted. The purpose of this paper is to increase the understanding of how various aspects of lean thinking can be implemented in a construction project and how they affect supply chain actors and their performance.
Design/methodology/approach
Action research was performed in a case study of a lean construction pilot project. Empirical data were collected through three surveys and follow‐up workshops, document studies, and interviews of 12 project participants.
Findings
The findings show that many of the lean‐related aspects identified in the literature review were utilized in the pilot project. These aspects have mostly focused on increasing the cooperation among supply chain actors, for which reason the pilot project is very similar to a partnering project. Hence, much work remains in order to obtain full‐fledged lean construction, but the pilot project may serve as a starting point for continuous improvements and development of lean construction in future projects.
Research limitations/implications
The research results are based on one empirical case study for which reasonable generalisations could be made, albeit cautiously.
Practical implications
The frame of reference can serve as an illustration of important aspects and core elements of lean construction and the case study findings show how various lean related aspects can be implemented and how they affect supply chain actors and their performance in a construction project context.
Originality/value
The action research approach based on both qualitative and quantitative data collection in a lean construction pilot project provides a valuable opportunity to study both the process of implementing lean construction and its outcomes.

Information vacuums (IVs) arise from organizational failure to satisfy the stakeholders’ informational demands during crises. The purpose of this paper is to expand Pang’s (2013) study of the phenomenon of IV by investigating its nature, stages, intensifying factors and resolution.
Design/methodology/approach
Print and social media data of five recent international crises with apparent IVs were analyzed.
Findings
Poor crisis communications are intensifying factors that induce media hijacks and hypes, distancing, and public confusion. A four-stage model maps the phenomenon into a flow chart describing its development. IV termination begins when organizations either respond with information or provide solutions, results, and/or compensation. Natural and strategic silence were observed and defined.
Research limitations/implications
The study lays the foundation for future examination of how media literacy, governments, and culture, both societal and organizational, induce or exacerbate the phenomenon.
Practical implications
Immediate, adequate, transparent, credible, and consistent crisis responses manage the IV and crisis, diminish the intensification of subsequent crises, and potentially reduce image and reputational damages.
Originality/value
The knowledge of the phenomenon is further developed and new theoretical models are conceptualized to provide researchers and practitioners a clearer understanding of how an IV can develop, persist, deepen, and resolve.

Purpose
The purpose of this paper is to introduce and test a model for numerical evaluation of the effectiveness of green practices implemented in two industrial supply chains (SCs). Two real case applications were made: footwear and metal-mechanics industry.
Design/methodology/approach
The research method is quali-quantitative modeling. By literature review, a model based on three constructs was proposed (green strategy, green innovation, and green operations), organized in 16 categorical indicators, prioritized with analytic hierarchy process. Three practitioners of each focal companies assessed the indicators fulfilling scales (very good to very bad).
Findings
The overall performance reached 51 and 57 percent, respectively of the maximum possible. The indicators that most jeopardized the performance were complexity management and communication, barriers to green supply chain management, green products, and green market (first case) and innovation in processes, and green market (second case).
Research limitations/implications
The model cannot be generalized or extended to other SCs. Further refinement and testing are required.
Practical implications
Managers and practitioners can improve the eco-efficiency of SC, focusing on the green practices that should be prioritized in greening strategies for the entire chain.
Social implications
Improvement of eco-efficiency is positively correlated with corporate social responsibility.
Originality/value
The model can produce a numerical overall value that represents the level or degree of implementation of green practices in the context of a SC management.

Design/methodology/approach
Drawing on the event system theory and upper echelon theory, this study chose a Chinese manufacturing enterprise as the case firm and conducted an exploratory single-case study to unpack how breakthrough innovation generates over time.
Findings
By conducting the in-depth case analysis, the study revealed that firms do not produce breakthrough innovation in the catch-up stage and parallel-running stage but achieve it in the leading stage. It also indicated that when facing proactive events in the catch-up stage, TMTs often adopt a contracted lens, being manifested as consistency orientation, less elastic organizational identity and narrower competitive boundaries. In addition, they tend to adopt a contracted lens when facing reactive and proactive events in the parallel-running stage. In the face of reactive and proactive events in the leading stage, they are more inclined to adopt an expanded lens, being manifested as a coexistence orientation, more elastic organizational identity and wider competitive boundaries.
Originality/value
First, by untangling how TMT's cognitive frame functions in breakthrough innovations, this paper provides a micro-foundation for producing breakthrough innovations and deepens the understanding of upper echelon theory by considering the cognitive dimension of TMTs. Second, by teasing out several typical events experienced by the firm, this paper is the first attempt to reveal how events affect the generation of breakthrough innovation. Third, the work extends the application of the event system theory in technological innovation. It also provides insightful implications for promoting breakthrough innovations by considering the role of proactive and reactive events a firm experiences and TMT's perceptions.

Purpose
This research aims to test the simultaneous effects of the perceived threat of COVID-19, e-health literacy, e-health access barrier, loyalty toward healthy foods in general, loyalty toward functional foods, the affordability of healthy foods in general and the affordability of functional foods on health-related quality of life (HrQoL) during the COVID-19 pandemic.
Design/methodology/approach
A survey with 400 respondents in Banten, Indonesia, was performed. The data were analyzed using multiple regression analysis.
Findings
The results of the research showed that HrQoL during the COVID-19 pandemic was positively affected by e-health literacy and the affordability of healthy foods in general while negatively affected by the e-health access barrier, the perceived threat of COVID-19 and loyalty toward healthy foods in general. Furthermore, HrQoL was not influenced by loyalty toward and affordability of functional foods.
Research limitations/implications
This research was conducted in Banten. Due to the operational limitations during the COVID-19 pandemic, this research used a purposive sampling technique. Therefore, the next research should retest the model in different contexts and locations.
Practical implications
To improve HrQoL during the COVID-19 pandemic, citizens need to be educated on finding and utilizing credible online health information during the COVID-19 pandemic. Governments and health service providers should also strive to offer ease of access to credible online health information. Furthermore, the affordability of healthy foods, in general, should be managed well.
Originality/value
A few studies on HrQoL during COVID-19 pandemic were performed. However, there is a lack of paper that examines the role of food customer loyalty and affordability in a model of HrQoL during the COVID-19 pandemic. To the best of the authors’ knowledge, this paper is the first that involved and tested the role of food customer loyalty and affordability in a model of HrQoL during the COVID-19 pandemic.

The purpose of the study is to develop an in-depth understanding of how supplier–buyer relationships, particularly in operational coordination, are affected when a company introduces an environmental sustainability target (CO2 emissions reduction) into its supply chain operations. The investigation focuses on the joint activities of the logistics function of the company (buyer) and the third-party logistics providers (3PLs) (suppliers).
Design/methodology/approach
This single-case study takes the perspective of a sustainability-conscious Danish company that outsources logistics services to 3PLs but maintains internal logistics as a boundary function. The value offering point/order penetration point (VOP/OPP) methodology is used.
Findings
The results showed that the introduction of sustainability led to the emergence of multiple decoupling points in both the demand and the supply chains. The logistics function therefore began to play the role of “integrator” across both the functions in the company and the organizations in the supply chain. The findings indicate the need to develop clear cross-functional and inter-organizational coordination mechanisms.
Research limitations/implications
This is a single-case study in a Danish context.
Practical implications
The study provides rich insights into managing the implementation of sustainability in supply chain operations, and it exemplifies how the VOP/OPP tool can be applied by 3PLs to develop sustainable offerings.
Originality/value
The current research on sustainable supply chain management takes into account the entire supply chain. In contrast, this study focuses on the logistics function. The VOP/OPP concept is used to capture the processes used in actual practice, and both the buyer and the supplier are considered potential co-producers of value.

This paper aims to examine how Chinese apparel retailers manage their production outsourcing risks and why they elect to manage those risks in a particular manner.
Design/methodology/approach
The investigation used the case study approach to explore factors driving two Chinese apparel retailers operating in different market environments to manage their production outsourcing risks.
Findings
The selection of production outsourcing risk management strategies hinges on what apparel retailers view as the most important value their products provide to customers. Product values were linked to specific product characteristics as well as the market environment in which the apparel retailers operated. The retailer that regarded product quality as a key value driver was found to place emphasis on manufacturer selection and use of a formal contract for process control. The retailer that viewed newness and variety as a value driver opted to cultivate a strong, committed business relationship based on Guanxi to achieve speed‐to‐market.
Research limitations/implications
As a case study research, the findings of this study have their limitations in generalisability. Given that one of the retailers did not invoke Guanxi to cultivate a long‐term business relationship with its outsourced manufacturers, the role of Guanxi in outsourcing risk management in China deserves further exploration, as businesses in China become more globalised.
Practical implications/value
This study grounds mainstream outsourcing strategy literature on operational practice through case studies. It highlights the influence of both product characteristics and market environment in dictating the choice of outsourcing risk management strategies in apparel manufacturing.
Originality/value
The study views outsourcing risk management from the perspective of minimizing outsourcing failures, rather than achieving outsourcing success. It reveals that risk management behavior of apparel retailers was linked to the notion of value protection, which varied according to what they considered as their principal product value drivers.

The purpose of this paper is to explore issues and situations affecting the entrepreneurial university via frame analysis to determine how institutional members frame the National University of Singapore (NUS) as an entrepreneurial university and provide key insights on how it has been manifested in reality.
Design/methodology/approach
Interviews of 18 institutional members from the NUS will be the focus of this paper. Categories of frames were adopted from environmental conflict research. Official documents were also analysed to support the frames found in this study.
Findings
Based on the NUS case, the entrepreneurial university was perceived in an apparently ambiguous setup. Interviewees’ framing features the reality affecting the entrepreneurial university in relation to disciplinary identities, institutional configuration, power of important actors and risk perceptions attached to entrepreneurial activities. Issues presented by the case are considered intractable because institutional members have interpretative differences in motivations and interests in pursuing entrepreneurial activities.
Research limitations/implications
Future research can draw upon the factors that contribute to the institutionalisation of the entrepreneurial university model.
Practical Implications
The results may assist universities in refining certain approaches in carrying out entrepreneurial activities. Using methods such as frame analysis can enable identification of problems and ways to resolve the issues concerning reforms or policy frameworks introduced to universities.
Originality/value
At the time of this writing, analysing the entrepreneurial university model through the application of frame analysis is novel and yet to be explored in the field of higher education.

This paper draws on case study data (archival data, interviews, and site visits) collected at three JVs in the automotive industry. Contingency theory is used to define Cartesian relationships.
Findings
A description of the timing and reasons for MCS implementation in JVs is provided. Initially, environment, strategy, and partner culture are considered to implement governance mechanisms and transfer prices/cost allocations for long‐term transfers of technology and corporate services. Later, structural and technological factors are considered to implement operative MCS such as budgeting, transfer prices/cost allocations of manufactured parts and performance measurement.
Research limitations/implications
All three JVs studied: belong to the automotive industry (SIC 3174); have balanced ownership (50/50); and have one partner in common (a European family‐owned business with professional management). Data are obtained mainly through site visits, five interviews, five mailed questionnaires, and public and private archival data.
Originality/value
The paper is the first to offer a descriptive model of the timing of MCS implementation in 50/50 JVs explained by the effect of contingent factors in each stage of the JV life and in JV survival.

Findings
This research shows that by integrating tools, systems, tools and techniques with RL processes by means of the RCF will increase performance and productivity of a RL operations. This is demonstrated by applying the RCF to a consumer electronics business that proves that the time taken for the end to end RL operations is reduced by 20%.
Research limitations/implications
The RCF has been demonstrated with the data from a consumer electronics organisation. Literature points out that there are many different mathematical models for RL across a number of industries. Thus, at this stage, it is not clear if the RCF developed in this research will work in other industries, such as the newspaper, plastic bottles and online retailers industry where product returns are high. This research work can be extended in developing an IT solution by future researchers that can be linked to the main ERP system of an organisation.
Practical implications
SC managers can use the RCF in the extended form of an IT solution to manage the RL operations of their organisations.
Originality/value
There is a lack of research in the space of reverse collaboration in the broader field of SC management. This paper has fulfilled that gap.

Abstract
Purpose
This paper identifies sources of disruptions that impede resilience in the dairy supply chain in an emerging economy context.
Design/methodology/approach
A case study approach is used. The unit of analysis is the Indian dairy supply chain (IDSC). Data were collected from nine major dairy cooperatives and five major private firms operating across the Indian states. A total of 28 face-to-face semi-structured interviews were conducted with two individuals from each case dairy organisation during January 2016 to December 2017.
Findings
Disruption sources in the IDSC are both external and internal and impact the quality of products and the distribution network. Compared to developed economies, in an emerging economy context such as India, the number of disruptions is very high. These disruptions negatively impact resilience and affect efficiency, flexibility, responsiveness and product quality.
Research limitations/implications
The findings stress the importance of integration across upstream and downstream processes in the IDSC. However, contextual factors should also be considered when designing the supply chain configuration. Small supply sources may be conceptualised as distributed sources that can be consolidated on the move using logistics and IT-enabled solutions. Moreover, the underlying processes of the dairy supply chain need to adapt to the external environment, and internal causes of disruptions should be eliminated through process redesign.
Practical implications
The findings highlight that the efficient operation of the IDSC is challenged by disruptions, the fragmentation of various stages and poor support infrastructure. The findings may be useful in managing supply networks which have linkages in emerging economies.
Social implications
The upstream stage of the IDSC involves many small- and medium-sized unorganised producers. The overall inefficiency and poor value generation across the entire IDSC constrain the livelihood and interests of these unorganised producers. Therefore, supply chain design needs to be aligned with social context.
Originality/value
The central contribution of this article is to present sources of disruptions that impact dairy supply chain performance in an emerging economy context. Areas requiring process improvement are also highlighted.

Purpose
In recent years, researchers and practitioners have paid a great deal of attention to the circular economy (CE) due to its potential social and environmental benefits. However, limited attention has been devoted in the literature to studying the barriers to CE implementation in the apparel retail industry in emerging and developing nations besides China. Consequently, the purpose of this paper is to analyse the barriers to implementing CE in the Indian garment retail market.
Design/methodology/approach
This exploratory study uses a comprehensive literature analysis to identify the micro-level impediments to CE adoption in India's garment retail industry. The study aims to identify these barriers using a Delphi process, consisting of three stages. The first stage involves literature reviews and expert opinions, while the second and third stages involve survey methods with 14 industry professionals and academics. The use of the two primary data sources allows for triangulation of the data, which improves the validity of the findings and enables broader conclusions to be drawn from the results.
Findings
This study indicates that the top three challenges to implementing CE principles in the Indian apparel retail industry are “standards and regulation barriers” (84%), “strategic barriers” (82%) and “supply chain management and technology barriers” (79%). Strategies for overcoming these obstacles include gaining top management support, coordinating supply chain components, training and employee motivation.
Research limitations/implications
This study considers only Indian apparel retail industry, and the practical implications could potentially limit the study to emerging Asian economies.
Originality/value
To the best of the authors’ knowledge, this is the first research of its type to explore CE obstacles at the organizational level in the Indian garment retail business. Thus, it contributes to a greater understanding of the topic and enables practitioners to develop effective policies and business strategies for CE and sustainability.
