Abstract

Purpose

This paper focuses on the wine tourist market in the central region of Portugal, and it aims to analyze the wine tourist’s demographic and travel behavior and preferences profile, based on their level of wine involvement.

Design/methodology/approach

This paper presents results from an exploratory study with a quantitative design, including a total of 1,029 survey responses from visitors of three wine routes. A K-mean cluster analysis was carried out, and the emerging groups of wine tourists were statistically compared (ANOVA or Chi-squared test).

Findings

Participants present a demographic profile of the wine route visitor similar to that found in other studies, with an average involvement with wine. There were three clusters of wine tourists, with different levels of involvement with wine: less wine-involved; medium wine-involved; and highly wine-involved. Significant differences between the three mentioned categories are visible for gender, age and attractions visited and expenses, suggesting the possibility of a differentiated market approach. Additionally, most respondents report high interest in a variety of attractions that are not exclusively wine-related. This finding supports the conceptualization of (particularly rural) wine tourism as “terroir tourism.”

Research limitations/implications

The pandemic context in which data collection was undertaken led to a smaller sample than expected, which was also more domestic than would have been in “non-COVID” times.

Practical implications

This study provides relevant insights about visitors of wine routes in Central Portugal, which may resonate in other wine tourism destinations. Implications for both theory and practice are also discussed.

Originality/value

This paper fulfills an identified need to study the wine tourism market in the Central Region of Portugal and expands our understanding about wine tourists’ profiles, behavior and interests, adding with empirical findings to the debate on heterogeneity in the wine tourist market, the role of wine involvement and of terroir.

Abstract

Purpose

When graduates cannot get a job in their field of study, they have to consider alternative scenarios: extending studies while waiting for labor market conditions to improve; continuing looking for a qualified job; accepting a less qualified job; creating their own business; change their country of residence, which in the case of foreign citizens living in Portugal may involve new emigration or return to the country of origin.

Design/methodology/approach

An online survey was conducted with 108 foreign graduates, unemployed, 47 of whom already hold Portuguese nationality. They were asked about their country of origin, nationality, graduation, field of education, previous jobs, unemployment and alternatives to face it.

Findings

The results suggest that the main options considered are extending studies, continuing to seek skilled employment or a second migration. The desire to return to the country varies according to gender and, in some cases, the country of origin.

Originality/value

There are no studies available on the possibilities for foreign recent graduate students in terms of their choices between entering the labor market or pursuing further education.

Abstract

Purpose

This paper aims to analyse how dynamic capabilities (DC) affect organizational learning (OL) in a Brazilian higher education institution (HEI) and how this relationship affects organisational ambidexterity (OA).

Design/methodology/approach

The research strategy involves a qualitative, single case study. Data were collected through in-depth interviews, documentary research over a 15-year period and nonparticipant observation. Data were analysed using narrative analysis.

Findings

The results show that founders and managers influence the activities related to sensing, seizing and reconfiguring DC. They interpreted the new opportunities and shared them with other individuals. Gradually, a collective sense about the new ideas was constructed. New academic and administrative routines were created and an OL process took place at the HEI, which resulted in a valuable balance between exploration and exploitation (OA) for the organisation.

Originality/value

The study offers insight into how DC, OL and OA can be related. Although each construct has its own independent definition, there are similarities between them. The case study demonstrates how these theories were affected, and the research, therefore, makes a new methodological contribution regarding how to study DC, OL and OA as an integrative phenomenon.

Abstract

The paper addresses diversity, multi‐culturalism and mental health. It reports qualitative data from a larger project on multi‐cultural counselling competencies in Portugal which sought to meet the needs identified by specific minority groups by developing integrative, responsive and culturally sensitive treatments. A qualitative study is presented, with the aim of exploring the representations of mental health and illness held by ethnic minority groups in Portugal, as well as their specific needs and obstacles encountered in their interactions with health professionals. Semi‐structured interviews were conducted, and the results indicate that the meanings of health and mental health varied. Meanings of psychological health were related to general well‐being. Help‐seeking behaviours were associated with providing and receiving family and social support, mainly among participants of African descent. Although the great majority of participants had had no experience of counselling or psychotherapy, they expected psychologists to be multiculturally sensitive, as well as knowledgeable about diversity and multi‐culturalism. Implications for development of mental health services for minority clients are discussed.

Abstract

Purpose

This study aims to understand how the development of teaching and research competencies affects graduate (MS and PhD level – called stricto sensu courses in Brazil) management professors' work-family relations.

Design/methodology/approach

This research is a case study about work-family conflicts in academic careers. The data collection and analysis occurred during the period between June 2009 and January 2012. The population is composed of 45 professors: 33 men and 12 women, corresponding, respectively, to 73 and 27 per cent of the professors in the programs. Eleven female professors and 26 male professors were interviewed in this research. Analysis of work-family conflicts was performed by means of open questions based on three conflict dimensions: time, strain and behavior.

Findings

Investment in the development of teaching competencies brings conflicts into work-family relations. Among the three conflict dimensions considered, time stood out. When the conflict dimension was analyzed, more specifically in terms of behavior, it was evident that men perceive the effects of work-family conflicts to a lesser extent, as women suffer more from the triple impact (work, family and studies).

Research limitations/implications

Context of a sector within a determined place.

Practical implications

This text highlights the importance and current theme of gender and career for researchers and academy. Thus, this paper contributes so society can reflect on the roles men and women hold in the distribution of the responsibilities, highlighting the importance of balancing their division between couples, in family routines and in childcare. Such balance can improve a family's life, providing better conditions so women can manage their careers.

Social implications

Likewise, this paper supports public policies that improve the life quality of women or those who will adopt children, such as policies that incentive public and private organizations to extend maternity leave for mothers and adoptive couples, and public policies that contribute so women can proceed in their careers and therefore can contribute to the advancement of society and their own bio-psycho-social development. This text also brings implications in order that organizations design policies that allow all employees to better balance work-time and other life activities in general.

Originality/value

By selecting the graduate MS/PhD (stricto sensu) educational sector in particular, it was possible to learn the challenges, difficulties, achievements and limits inherent to the profession (professors), just as it was possible to verify existing conflicts, many times experienced and debated in organizational routines but not identified and shown by academic research in this sector.

Abstract

This article deals with the determination of the benefits of environmental assets, involving an application for noise. In determining these benefits the so‐called Cost of Illness Method is applied. An important part of the research is the estimation of the relationship between environmental pollution (noise) and the number of lost workdays. This relationship is estimated by using the Lisrel technique with latent variables. The empirical results show that, for the sample concerned, a relationship between noise and lost workdays does not exist. The research also shows that noise causes annoyance and that annoyance influences people′s wellbeing negatively.

Abstract

Purpose

The main purpose of this paper was to evaluate the influence of the zein coating containing essential oils on the sensory characteristics of sodium-reduced mozzarellas.

Design/methodology/approach

Mozzarellas were prepared by dipping in brine containing 5, 10, 15 or 20% of NaCl (w/v) that correspond, respectively, to 25, 50, 75 and 100% of NaCl content used in industry. These salted mozzarellas and another one, unsalted, were coated by an edible zein film added with 3% of a mixture of thyme and garlic essential oils (1:1). They were subjected to sensory analysis in relation to salty taste and overall impression. The mozzarella without salt reduction (20% NaCl w/v), coated or uncoated with the edible film, was also subjected to the analysis of water loss and microbiological quality, in order to evaluate the impact of this film on product quality.

Findings

The zein coating added with oils did not compromise the sensory acceptance of the mozzarella prepared with up to 50% of salt reduction. Water loss and microbial growth were lower in zein-coated mozzarella than in uncoated mozzarella. These results showed that this film could be applied as natural additive, contributing to the microbiological and sensory characteristics of the mozzarella.

Originality/value

This paper contributes to reducing the lack of studies in relation to new technologies for food preservation and sodium reduction. In addition, the zein coating containing essential oils can be tested on other food categories.

Abstract

Purpose

This paper aims to evaluate the effect of consumption of a high-fat diet (HFD) rich with total saturated fats on adiposity and serum levels of vascular cell adhesion molecule (sVCAM-1), a biomarker of endothelial inflammation/dysfunction. Another aim is to evaluate whether supplementation of a phytosomal formulation of curcumin would reduce adiposity measures and sVCAM-1 levels in HFD rats.

Design/methodology/approach

The study was conducted on 17 male rats which were allocated to one of three feeding regimen groups: normal diet (ND); HFD, or HFD with dietary phytosomal curcumin (HFD-C). Anthropometric measures were recorded weekly up to 20 weeks of feeding intervention, at the end of which, sVCAM-1 levels were also compared with one-way ANOVA and Tukey post-hoc analysis.

Findings

The HFD group had the greatest values for raw anthropometric data, and there was a group difference in anthropometric measures, however there was no significant difference between HFD and HFD-C for any measure. The gain at 20 weeks from initial values did reveal significant differences in weight and abdominal circumference between HFD and HFD-C groups. There were significant group differences in sVCAM-1 levels, with only HFD-C displaying significant lower levels than HFD group.

Originality/value

This is the first study that shows the capacity of a phytosomal formulation of curcumin in reducing adiposity and sVCAM-1 levels during daily intake of saturated fats above the recommended level. The results are promising in that this formulation can protect against endothelial inflammation/dysfunction, and can be used as complimentary therapy to suppress dyslipidemia/obesity-related cardiovascular complications.

Purpose

The purpose of this paper is to identify how the relationship between inbound logistics (IL) activities and elements of resilience (EoR) can contribute to organisational resilience.

Design/methodology/approach

Two in-depth case-based studies were conducted in the dairy industry. After identifying EoR and IL activities through a systematic literature review, relationships among them have been empirically discussed in six groups (emerged content analysis results): supplier and response capability; transportation; security; quick response to disruption; logistics management; trust and knowledge.

Findings

A framework was developed describing the contribution of these six groups to organisational resilience by highlighting and discussing three aspects: rigidity of the hierarchy, type of relationship and geographical dispersion. These aspects emerged from the process of content analysis and are related to the companies’ characteristics.

Practical implications

The proposed framework can assist managers to decide which group of EoR and IL activities they should prioritise, depending on the company’s characteristics and needs.

Originality/value

Although some studies have discussed the IL contribution to generating resilience in companies, none of them have explored in detail the relationship between EoR and IL activities, and their contribution to organisational resilience. The proposed framework shows the contribution of the EoR to three different organisational aspects.

Abstract

Purpose

Although the number of studies that investigate supply chain sustainability learning has increased, little is known about the way sub-suppliers build knowledge and learn sustainability practices. Thus, moving beyond merely investigating the accumulation of knowledge, this research explores sub-suppliers’ knowing that supports the learning of sustainability practices in a multi-tiered food supply chain.

Design/methodology/approach

In the conduct of this interpretive research in South Brazil, two ethnographies were completed during 74 days of observations to understand similarities and differences between certified and non-certified sub-suppliers with respect to sustainability practices. As part of our research conducted in the context of poultry production, secondary data and data gathered through semi-structured interviews with representatives of the buyer and first-tier supplier firms were used to provide a better comprehension of the multi-tiered supply chain context. Then, we executed an interpretive textual analysis.

Findings

Our investigation explored six vignettes to reveal ways of learning sustainability practices in terms of waste management, biosecurity and animal welfare. Although the buyer firm requested these practices, we noted that the first-tier supplier was responsible for translating the practices to sub-suppliers. Moreover, we found that sustainability learning was shaped by the sub-supplier context embodied in knowledge through knowing. The ways of learning were related to sharing knowledge between experts and novices with the support of material practices; however, knowledge was also gained by unlearning some knowledge shared by the supplier. Sustainability practice learning, thus, was performed in a space of learning via knowledge creation among practitioners.

Practical implications

Recognising how sustainability learning happens in a multi-tiered supply chain context can help managers to develop plans to implement sustainability practices that will broaden their sustainability knowledge.

Originality/value

Unlike previous studies on supply chain sustainability learning, we reveal ways that sustainability practices emerge from knowledge that results from sub-suppliers’ knowing. We also explain how unlearning can consciously occur in several situations of sustainability learning.
